CARAMELIZED PINEAPPLE SAUCE

3 tablespoons unsalted butter
2 tablespoons firmly packed brown sugar
One 20-ounce can crushed pineapple
1/2 teaspoon vanilla extract
Pinch salt
Ice cream, for serving
Chocolate sauce, for serving

Steps:

  • Melt the butter and sugar in a medium skillet over medium heat. Stir until the sugar dissolves, about 3 minutes. Increase the heat to high. Add the pineapple and cook, stirring occasionally, until golden and coated in caramel, about 5 minutes. Remove the skillet from the heat and add the vanilla and salt. Divide the pineapple sauce among 4 sundae dishes. Top each dish with 1 scoop of ice cream and some chocolate sauce.

This homemade Pineapple Sauce is a delicious accompaniment that is made using pantry staples and comes together in under 10 minutes. Drizzle it on a scoop of ice-cream, crushed ice, or smother it on ham for the main course, it is going to make your holiday table shine.

2 cups peeled and chopped fresh pineapple
1 teaspoon chopped garlic
1/2 cup pineapple juice (fresh or canned)
1/4 cup rice vinegar
1/4 cup lemon juice
1 teaspoon lemon zest
1 cup brown sugar
2 teaspoon red chili flakes
1 teaspoon salt
3 tablespoon cornflour
1/4 cup water

Steps:

  • Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
  • Do not blend the pineapple too much. We are looking for a coarse texture here.
  • Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
  • Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
  • Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

1/4 c brown sugar
2 Tbsp butter or margarine

Steps:

  • 1. Combine all the ingredients in a saucepan.
  • 2. Bring to a boil then reduce heat and simmer for about 3 minutes.
  • 3. If sauce ends up too thick, you can thin it out by stirring in a bit of water or even pineapple juice.
  • 4. If the sauce is too thin, try draining the pineapple before adding it to the saucepan. You could always add the pineapple juice as needed throughout the cooking process.

1 1/2 ounces oil
1/2 cup chopped green onions
35 grams salt
1 teaspoon pepper
1 cup pineapple jelly
1 cup plum sauce
1/2 cup Sriracha
1 pineapple, cubed (about 2 pounds)
20 ounces pineapple juice

Steps:

  • In the pan heat the oil over high heat and add the green onions. Cook for 5 minutes, then add the salt and pepper and stir for a few seconds. Add the pineapple jelly and plum sauce cook for a couple of minutes and stir in the Sriracha. Stir and slowly drop all but 1 cup of the pineapple chunks (be careful of the splash-- it burns) into the pan. Cook for 5 minutes then remove the pan from the heat and let cool.
  • Remove the cooked pineapple from the pan and put into a blender with the pineapple juice and 8 cups water, and grind until the pineapple chunks disappear. Pour the pineapple mixture and the sauce from the pan into a bowl and mix well. Thinly slice the reserved pineapple and mix into the bowl.
  • Use this sauce on pork or as a marinade for grilled shrimp.

1/4 cup rum, coconut rum is an other choice (optional)

Steps:

  • Place all but the rum in a small pot and stir to blend cook for 4 minutes at which point will be thick.
  • Add the rum stir and simer for 1 minute and cool.

1/2 cup sugar
1 tablespoon sugar
1 (20 ounce) can crushed pineapple, packed in its own juice

  • In heavy saucepan combine cornstarch, all of the sugar and salt.
  • Add pineapple with juice and mix well.
  • Cook over medium heat until mixture comes to a bubbling boil, stirring constantly.
  • Once mixture comes to a boil continue stirring constantly for approximately 5 minutes, or until thickened and its looses it's "milky" look.
  • Remove from heat and add butter, stirring to melt.

1 lime, zested and juiced
1 red chilli, deseeded and finely chopped
½ tsp smoked paprika
½ tsp cayenne or chilli powder
1 tbsp honey
20g butter

Steps:

  • Blitz the pineapple in a blender until smooth, then tip into a dry frying pan over a medium-high heat. Add the lime zest and juice. Stir in the chilli, paprika, cayenne or chilli powder and a pinch of salt and cook for about 5 mins, stirring continuously.
  • Tip in the honey and let the mixture bubble for a couple more minutes until slightly thickened. Pour into a small heatproof bowl, stir in the butter and leave to cool. Will keep covered in the fridge for up to five days.
