Ingredients

2 cups fresh grapefruit juice
2 tablespoons maraschino cherry juice, plus maraschino cherries, for garnish, optional
1 pineapple (3 1/2 pounds), peeled, cored and cut into large chunks, plus pineapple wedges, for garnish, optional
1 tablespoon li hing powder, optional
24 ounces seltzer
16 ounces dark rum, optional

Steps:

Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.

1 large ripe pineapple
2 ounces dark brown sugar
2 whole vanilla beans
1 liter reposada tequila

Steps:

Peel and chop the pineapple,including the core.Split vanilla beans lengthwise.Place all ingredients in a sterile wide mouthed glass or ceramic jar and seal.
Set aside for 1 week in a cool dark place,shaking the jar daily to agitate ingredients and release their flavors.
Strain,transfer to a decorative bottle and serve as desired.
