2 cups sliced fresh or frozen rhubarb, thawed and drained
1 can (20 ounces) unsweetened pineapple tidbits, drained
1/2 cup sugar, divided
2 tablespoons plus 1/3 cup all-purpose flour, divided
1/3 cup quick-cooking oats
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup cold butter
Whipped cream, optional

Steps:

  • In a large bowl, combine the rhubarb, pineapple, 1/4 cup sugar and 2 tablespoons flour. Transfer to a 9-in. deep-dish pie plate coated with cooking spray., In a small bowl, combine the oats, cinnamon, salt and remaining sugar and flour. Cut in butter until crumbly. Sprinkle over fruit. Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Cool for 5 minutes; serve with whipped cream if desired.

1 can (20 ounces) crushed pineapple
1 package (3 ounces) lemon gelatin
1 cup heavy whipping cream
1/4 cup sugar
1 cup 4% cottage cheese

Steps:

  • Drain pineapple, reserving the juice in a small saucepan. Set pineapple aside. Add enough water to juice to make 1-1/3 cups; bring to a boil. Place gelatin in a bowl; add boiling liquid and stir to dissolve. Cool until slightly thickened. In a bowl, whip cream; gradually beat in sugar. Fold into the gelatin mixture. Stir in pineapple and cottage cheese; blend well. Pour into a 1-1/2-qt. serving bowl; chill at least 3 hours or overnight.

Pineapple-Rhubarb 'Salad' With Basil Cream image

This dish is more like a compote than a soup, but unlike most compotes, the fruit is cooked as little as possible so the flavors and textures remain distinct. The rhubarb must be cut very small to retain some of the crunch, but cook all the way through. Don't be tempted to cook the pineapple at all as the dessert would lose its fresh flavor if you did.

5 tablespoons packed brown sugar
2 cups finely diced (1/4 inch) peeled rhubarb (about 3 stalks, 10 inches long)
1 rounded cup finely diced (1/4 inch) ripe fresh pineapple
20 large basil leaves
About 3/4 cup good quality vanilla ice cream, slightly softened

Steps:

  • Place a medium sauté pan over high heat. Melt sugar, and add rhubarb. Sauté rhubarb for about 30 seconds, then reduce heat to low. Cover, and cook until rhubarb is softened but still firm, 2 to 3 more minutes. Transfer rhubarb to a mixing bowl, and add pineapple. Set aside, or cover and refrigerate for up to 24 hours; bring to room temperature before serving.
  • Set aside a bowl of ice water. Bring a small pan of water to a boil, and add basil leaves. Blanch leaves for 30 seconds, then transfer leaves to ice water to stop the cooking. In a blender, combine ice cream and basil leaves. Purée until mixture is smoothly blended. If necessary, freeze until mixture is thick but can still be poured from a spoon.
  • To serve, divide fruit mixture equally among four 1/2-cup serving dishes. Top each with a spoonful of basil-ice cream mixture, and serve immediately.

¼ cup pineapple juice
3 tablespoons red wine vinegar
¼ cup olive oil
freshly ground black pepper to taste
salt to taste
1 (10 ounce) package chopped romaine lettuce
1 cup diced fresh pineapple
½ cup chopped and toasted macadamia nuts
3 green onions, chopped
¼ cup flaked coconut, toasted

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned, about 10 minutes. Drain, crumble, and set aside.
  • Combine pineapple juice, red wine vinegar, oil, pepper and salt in a lidded jar or cruet. Cover and shake well.
  • Toss lettuce, pineapple, macadamia nuts, green onions and bacon together in a large bowl. Pour dressing over salad and toss to coat. Garnish with toasted coconut.

3 cups chopped fresh or frozen rhubarb (about 3/4 pound)
1 cup coarsely chopped fresh pineapple
1/2 cup packed brown sugar
4 tablespoons water, divided
1 teaspoon lemon juice
2 tablespoons cornstarch
1/2 teaspoon coconut extract, optional
CRUST AND TOPPING:
2 cups old-fashioned oats
1-1/2 cups all-purpose flour
1 cup sweetened shredded coconut
1/2 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large saucepan, combine rhubarb, pineapple, brown sugar, 1 tablespoon water and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until rhubarb is tender, 4-5 minutes., In a small bowl, mix cornstarch and remaining water until smooth; stir into rhubarb mixture. Return to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat; if desired, stir in extract., In a large bowl, mix oats, flour, coconut, brown sugar and salt; stir in melted butter until crumbly. Press 3 cups crumb mixture onto bottom of a greased 13x9-in. baking dish. Spread with rhubarb mixture. Sprinkle with remaining crumb mixture., Bake until golden brown, 40-45 minutes. Cool in pan on a wire rack. Cut into bars.

1 1/4 cups sugar
1/4 cup all-purpose flour
3 1/4 cups thinly sliced rhubarb
14 ounces crushed drained pineapple
pastry for double-crust pie
1/2 teaspoon granulated sugar

Steps:

  • In large bowl measure 1st amount of sugar and flour, stir.
  • Add rhubarb and pineapple, stir.
  • Pour fruit mixture into unbaked pie shell.
  • Moisten pastry rim and cover with top crust.
  • Cut slits in top crust to let steam escape.
  • Sprinkle with remaining sugar.
  • Bake in 350° oven on bottom rack for 50- 60 minutes until browned and rhubarb is cooked.

1 can (20 ounces) unsweetened pineapple chunks
1/4 cup reduced-fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
Artificial sweetener equivalent to 2 tablespoons sugar
3 cups chopped apples
2 cups green grapes
2 teaspoon poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. 2 cups fresh pineapple, diced into 1/2 inch pieces
1/4 cup sugar (or less)

Steps:

  • If your fruit is sweet you may need no sugar, or less sugar. Try to use as little as possible, depending on how sweet your fruit is.
  • Mix together the rhubarb and pineapple chunks and sprinkle with sugar (if using). Let sit at least one hour to overnight, to allow juices from the fruit to collect. (Sugar helps to make more juices, so if the fruit isn't very sweet, you will need sugar to get the juices to come out of the fruit.).
  • Cook over medium heat until sugar disappears and rhubarb has softened (about 15 minutes or so).
  • Allow to cool.
  • Eat with yogurt, ice cream, whipped topping, toast, oatmeal, or by itself. Yum!

1 (15 ounce) package refrigerated pie crusts
1 ⅓ cups white sugar
⅓ cup all-purpose flour
½ teaspoon grated orange zest
⅛ teaspoon salt
3 cups chopped rhubarb
1 cup drained crushed pineapple
2 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Press one of the pie crusts into the bottom and up the sides of a 9 inch pie plate. Refrigerate the other crust until needed.
  • In a medium bowl, stir together the sugar, flour, orange zest and salt. Combine the rhubarb and pineapple; stir into the dry ingredients until evenly blended. Pour into the prepared pie crust.
