Hot Spiced Tea for the Holidays image

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

6 cups water
1 teaspoon whole cloves
1 (1 inch) piece cinnamon stick
6 tea bags (such as Lipton®)
¾ cup orange juice
½ cup white sugar
¼ cup pineapple juice
2 tablespoons lemon juice

Steps:

  • Pour water into a pot; add cloves and cinnamon stick. Bring water to a boil; remove from heat. Add tea bags to water and set aside to steep until the tea is to your preferred strength, at least 5 minutes. Remove and discard cloves, cinnamon stick, and tea bags.
  • Stir orange juice, sugar, pineapple juice, and lemon juice together in a saucepan; bring to a boil. Cook and stir the juice mixture until the sugar dissolves completely. Pour juice mixture into the spiced tea; serve hot.

Remember the popular "Russian tea" recipes made with powdered orange drink and instant tea? This beverage tastes even better, because you make it with brewed chai tea, real orange, lemon, and pineapple juices, and cinnamon sticks, fresh cloves, or mulling spices. This tea can be made in less than 30 minutes and can be served hot or cold, which means you can make it a day before your party or just minutes before your guests arrive. Pour into a thermos to transport to a party, serve warm in mugs immediately, or chill the tea and serve it later over ice. Sometimes a warm drink is all you need to chase the chill. 6 regular-size cinnamon-spice or chai tea bags
1 cup granulated sugar
2 tablespoons whole cloves or mulling spices
2 (3-inch) cinnamon sticks
1 cup pineapple juice (not from concentrate)
1 cup refrigerated orange juice (such as Simply Orange)
1/2 cup fresh lemon juice (from 3 lemons)

Steps:

  • Bring 4 cups water to a boil over high in a large pot. Remove from heat; add tea bags. Cover pot; let tea steep according to package directions. Remove and discard tea bags.
  • Stir sugar, cloves, cinnamon sticks, and 8 cups additional water into tea in pot. Bring mixture to a boil over high. Reduce heat to medium. Simmer, stirring occasionally, until sugar dissolves and mixture is fragrant, about 5 minutes. Remove spices using a small handheld fine mesh strainer, and discard.
  • Stir pineapple juice, orange juice, and lemon juice into tea mixture in pot. Remove from heat. Serve immediately or chilled. Store, covered, in refrigerator up to 1 week.

GRANDMA'S RUSSIAN TEA



Grandma's Russian Tea image

I grew up drinking this tea at my grandmother's house. I now fix it at my house on really cold days, when I am sick (lots of vitamin C!), and at Christmas. It is perfect to let simmer on the stove to make the house smell good and to serve to guests. I have no idea why its called 'Russian' tea; that is just what my grandmother always called it. Use any tea you like. I've used regular black tea, decaf, and cinnamon spice, and it's all great. If using spiced tea, you may want to adjust the amount of cinnamon, cloves, and allspice. This is also great reheated!

2 family-sized tea bags
1 quart boiling water
1 ½ quarts water
6 whole cloves
1 cinnamon stick
1 (12 ounce) can pineapple juice
1 cup white sugar
1 (6 ounce) can frozen orange juice concentrate
1 (6 ounce) can frozen lemonade concentrate
1 teaspoon ground allspice

Steps:

  • Steep tea bags in boiling water until the tea is of desired strength, 4 to 5 minutes. Remove and discard tea bags.
  • Combine 1 1/2 quarts water, cloves, and cinnamon together in a large pot; bring to a boil. Stir brewed tea, pineapple juice, sugar, orange juice concentrate, lemonade concentrate, and allspice into the boiling water to dissolve the sugar. Serve immediately or reduce heat to low and keep at a simmer until ready to serve.

The absolute BEST remedy for a cold! This is a bit different from most Russian tea recipes, much tastier in my opinion. But I'm partial since it's my mom's recipe! Delicious served hot or cold. It also freezes well. It makes such a big batch--I generally put 1 pitcher in the fridge and 1 in the freezer.

6 cups water
1 cup sugar
4 tea bags
1 (16 ounce) can orange juice concentrate
1 quart unsweetened pineapple juice
6 sticks cinnamon
1 tablespoon whole cloves
1 liter ginger ale

Steps:

  • In a large pot bring 6 cups water and 1 cup sugar to boiling. Add 4 regular size tea bags (or 2 family size; regular or decaf) and boil for 5 minutes.
  • Remove tea bags and reduce heat to low. Add 1 large can orange juice concentrate, stirring lightly to help it melt. Once orange juice is incorporated, add 1 can unsweetened pineapple juice, 6-7 sticks of cinnamon, and 1 tablespoon whole cloves. Slowly pour in 1 liter of ginger ale and heat to serve (I return heat to medium while stirring occasionally, 5-10 minutes). Remove cloves and cinnamon sticks with a small slotted spoon or sieve. Serve.

Skin and core of 1 pineapple, plus pineapple wedges, for serving
5 whole allspice berries
2 pieces star anise
1 cinnamon stick
6 black tea bags, such as Lipton

Steps:

  • Combine the pineapple skin and core, allspice berries, star anise, cinnamon and 6 cups water in a 4-quart saucepan. Bring the mixture to a boil, lower the heat and simmer for 1 hour. Remove from the heat and add the tea bags; let the tea bags steep for at least 20 minutes and up to 6 hours. Strain the pineapple tea and cool completely. Serve over ice with pineapple wedges.
