Steps:
- Place the crushed pineapple in a strainer and drain out the pineapple juice. Pineapple retains a lot of liquid, which needs to be eliminated as much as possible so that leftover fruit salad doesn't become watery. Use a spoon and press down on the crushed pineapple to squeeze out more juice, toss and repeat several times. Transfer the crushed pineapple to paper towels to allow a little more moisture to be absorbed.
- Use the same strainer to drain the mandarin oranges, don't use a spoon to press down on them, these strain more easily. Place the oranges on a paper towel as well.
- Mix the orange jello, cottage cheese, and coconut flakes until well combined. Use a silicone spatula and gently mix in the drained pineapple and oranges. Finally, gently mix in the Cool Whip.
- Transfer the fruit salad to a large serving bowl, or several portion-sized bowls or glasses. Garnish with maraschino cherries and chill until ready to serve.

Steps:
- Prepare the fruit with a small serrated knife. Cut the top and bottom off the kiwi, stand it up on one of its flat surfaces and cut away the skin, keeping the knife as close to the skin as possible. Slice in half, following the core through the centre, then cut each half into slices. Put in a bowl and repeat with the other kiwi.
- Carefully cut the skin off the mango and slice off each cheek, running your knife as close to the stone as you can. Cut each piece into slices. Remove any remaining fruit from the stone in long thin slices. Add the mango to the kiwi.
- Top and tail the pineapple, then in a similar way to the kiwi, cut away the skin. Use your knife to go around the pineapple, taking out the divets or eyes, two to three at a time, you'll be left with a spiral pattern weaving around the outside of the fruit. Take of a circular slice, roughly 150g, quarter, remove the core then cut into chunks. Add to the bowl.
- Halve the grapes and add to the rest of the fruit along with the berries, you may want to slice or halve strawberries if they're large. Remove the peel from the orange using the same method as the kiwi and pineapple. Holding the orange over the bowl of fruit, remove the orange segments by carefully cutting between the membrane and the fruit. The pieces should fall out into the bowl along with any juice. Squeeze the membrane over the fruit to extract the juice, add a drizzle of honey, if you like. Mix everything together and leave in the fridge to macerate for 30 mins, if you have time.

- Place cubes of watermelon, cantaloupe, honeydew, and pineapple into a large bowl (about 4 quarts). Toss together. Set aside.
- Grab one orange and slice off the skin so that the segments are exposed. Using a paring knife, carefully slice out the segments from the membrane and place on top of the melon mixture. When all segments are removed, squeeze the membrane over the salad to remove the extra juice. Repeat with second orange and with the grapefruit.
- Chop or chiffonade the mint and sprinkle over the salad. Drizzle the honey over the salad. Gently toss together to combine but be careful not to break apart the citrus segments since they're so delicate.
- Cover and let it chill for a couple hours to let the flavors come together. Depending on how ripe the melon is, it can last in the fridge for up to 3 days.

- In a small bowl, whisk together all of the Dressing ingredients. Pour over fruit 30 minutes- 2 hours before serving, toss and chill in the refrigerator. Toss again before serving to distribute the juices that release and accumulate at the bottom. Gently stir in bananas.
- You can assemble and refrigerate the salad longer than two hours in advance but the longer it sits, the more the dressing will macerate/soften the berries and the pineapple and oranges will release their juices - still delicious, just not peak freshness. You can also make it partially ahead of time days up to days in advance by chopping the fruit and preparing the dressing (tips below) for super quick assembly.

- Gently mix in the canned fruit and chill in the fridge for 2-3 hours until ready to serve. Feel free to add more fruit. I often add more oranges or bananas, and sometimes I add strawberries and mini marshmallows too. If you are adding apples and/or bananas, wait until just before serving to add them. Enjoy!!
- *We’ve made this recipe dozens of times with successful results, yet we’ve gotten several comments that the salad is too soupy. So, our advice is to reduce the milk to 3/4 cups initially, and if the consistency is too thick for your liking, feel free to add more.
