24 frozen mini waffles, such as Eggo Minis Homestyle Waffles
2 tablespoons unsalted butter, melted
One 8-ounce container mascarpone
1 tablespoon honey, plus additional for drizzling
Pinch kosher salt
Zest of 1 orange
1/3 cup pomegranate seeds
3 tablespoons thinly sliced fresh mint

Steps:

  • Preheat the oven to 400 degrees F.
  • Separate the mini waffles into individual pieces and place on a sheet tray. Brush both sides with the melted butter. Toast in the oven, flipping halfway through, until crispy on the outside but still slightly soft on the inside, 5 to 7 minutes.
  • Combine the mascarpone, honey, salt and orange zest in a medium bowl and mix until well blended. Spread the mixture on each toasted mini waffle with a butter knife or offset spatula. Garnish each with a sprinkle of pomegranate seeds, fresh mint and a drizzle of honey.

PROSCIUTTO AND BRIE CROSTINI

1 baguette, sliced diagonally into 1/4-inch slices (about 40 slices)
8 ounces Brie cheese
2 tablespoons honey
4 ounces thinly sliced prosciutto, cut crosswise into 1/3-inch-wide ribbons (about 6 slices),
Finely chopped fresh thyme leaves, for serving (optional)

Steps:

  • Preheat the broiler. Line a baking sheet with foil.
  • Arrange the baguette slices on the prepared baking sheet. Cut the Brie into 1/4-inch-thick slices and put 1 slice on each piece of baguette. Broil until the cheese is melted, 1 to 2 minutes.
  • Drizzle the toasts with the honey and then top with some prosciutto and a sprinkle of thyme leaves if using.

SPINACH ALMOND CROSTINI

1/4 cup chopped toasted almonds, plus more for garnish
1 baguette
Olive oil
1 pound fresh spinach, washed, dried, and stemmed
1 clove garlic
3/4 cup sour cream
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh chives
1/8 teaspoon cayenne pepper
Kosher salt
Zest and juice of 1/2 a lemon

Steps:

  • Preheat the oven to 350 degrees F. Spread the chopped almonds out on a baking sheet and bake until fragrant and golden, 5 to 10 minutes. Check frequently, as they can burn quickly. Allow to cool.
  • Preheat the broiler. Slice the baguette diagonally in 1/4-inch-thick slices, brush with olive oil and place on a broiler pan. Broil until toasted, 2 to 3 minutes.
  • In a steamer basket set over 1 inch of simmering water, steam the spinach until wilted, a few minutes. Remove the spinach and drain well.
  • Put the spinach and garlic in a food processor and pulse until smooth. Add in the sour cream, almonds, parsley, thyme, chives, cayenne, and season with 1/8 teaspoon salt. Pulse until combined. Stir in the lemon zest and lemon juice.
  • Spread the spinach mixture on the toasted bread, sprinkle with additional chopped almonds, and serve.

Vegetable oil cooking spray
3 tablespoons vegetable oil
1 (4 to 5-pound) beef tenderloin, trimmed
Kosher salt and freshly ground black pepper
1 (20-ounce) can pineapple chunks in heavy syrup
1 cup orange juice
1/4 cup fresh lemon juice (from 1 large lemon)
1/4 cup low-sodium soy sauce
3 tablespoons sugar
1 tablespoon arrowroot
3 cloves garlic, coarsely chopped
1 (1-inch) piece fresh ginger, peeled and coarsely chopped
1/2 teaspoon kosher salt, plus extra for seasoning

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Set aside.
  • In a large skillet, heat the oil over high heat. Season the beef with salt and pepper and brown on all sides, for about 5 minutes. Transfer the beef to the prepared baking sheet and roast until an instant-read thermometer inserted into the thickest part of the meat registers 125 degrees F for medium-rare, about 40 to 45 minutes. Remove the beef from the oven to a cutting board. Cover the meat loosely with foil and let rest for 20 minutes.
  • Sauce: In a blender, combine the pineapple chunks and syrup, the orange juice, lemon juice, soy sauce, sugar, arrowroot, garlic, ginger, and 1/2 teaspoon salt. Blend until smooth. Heat the same skillet used for the beef over medium-high heat. Add the sauce and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Simmer until the sauce thickens, about 5 minutes Season with salt, to taste.
  • Cutting across the grain, slice the meat into 1/4-inch thick slices and arrange on a platter. Garnish with orange slices, if using. Pour the sauce into a serving bowl and serve alongside the beef.
  • Garnish: orange slices, optional.

DUCK RILLETTE WITH CROSTINI

1 recipe Duck Confit, recipe follows
1/4 cup minced onions
1 tablespoon minced parsley
10 garlic cloves, reserved from the Duck Confit
1 tablespoon cognac
1/2 stick (4 tablespoons) butter
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 tablespoons fat reserved from the Duck Confit
20 Homemade Crostini, recipe follows
4 duck leg portions with thighs attached, (about 2 pounds) excess fat trimmed and reserved
1 tablespoon plus 1/8 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
10 garlic cloves
4 bay leaves
4 sprigs fresh thyme
1 1/2 teaspoon black peppercorns
1/2 teaspoon table salt
4 cups olive oil
20 slices (2 to 3 inches in diameter) French or Italian bread, about 1/4-inch thick each
Olive oil
Coarse salt
Freshly ground black pepper

Steps:

  • Pull duck meat from the bones and shred. Discard skin and bones.
  • Combine the pulled meat, and all of the remaining ingredients, except for the crostini, in the bowl of an electric mixer fitted with the dough hook. Beat at medium speed for about 1 minute, or until everything is well mixed. Or use a food processor, taking care not to puree the mixture or let it turn into a paste. The texture should be like finely chopped meat.
  • Serve rillette with crostini.
  • If not using immediately, spoon rillette into ramekins and cover with reserved fat from the duck confit. Store in an airtight container, in the refrigerator for up to 1 week.
  • Lay the leg portions on a platter, skin side down. Sprinkle with 1 tablespoon of the kosher salt and the black pepper. Place the garlic cloves, bay leaves, and sprigs of thyme on each of 2 leg portions. Lay the remaining 2 leg portions, flesh to flesh, on top. Put the reserved fat from the ducks in the bottom of a glass or plastic container. Top with the sandwiched leg portions. Sprinkle with the remaining 1/8 teaspoon kosher salt. Cover and refrigerate for 12 hours.
  • Preheat the oven to 200 degrees F.
  • Remove the duck from the refrigerator. Remove the garlic, bay leaves, thyme, and duck fat and reserve. Rinse the duck with cool water, rubbing off some of the salt and pepper. Pat dry with paper towels.
  • Put the reserved garlic, bay leaves, thyme, and duck fat in the bottom of an enameled cast iron pot. Sprinkle evenly with the peppercorns and table salt. Lay the duck on top, skin side down. Add the olive oil. Cover and bake for 12 to 14 hours, or until the meat pulls away from the bone.
  • Remove the duck from the fat. Strain the fat and reserve. To store the duck confit, place the duck leg portions in a container, cover with the reserved cooking fat, and store in the refrigerator. Alternately, pick the meat from the bones and place it in a stoneware container. Cover the meat with a thin layer of some of the strained fat. The duck confit can be stored in the refrigerator for up to one month.
  • The excess oil can be stored in an airtight container in the refrigerator and used like butter for cooking. The tinge of duck taste in the oil is wonderful.
  • Preheat oven to 375 degrees F.
  • Arrange bread slices on a baking sheet and brush generously with olive oil on both sides. Sprinkle lightly with salt and freshly ground black pepper.
  • Bake for 2 to 4 minutes, or until golden brown and crisp. (Watch carefully while they are baking to make sure they don't burn.)

SHRIMP SCAMPI CROSTINI

4 garlic cloves, crushed with a press

1 Market Pantry® Demi French Bread, cut into 20½-inch slices

Steps:

  • 1. Melt the butter with the oil in large skillet over medium-high heat. Add the garlic and cook, stirring, for 10 seconds. Add shrimp, season with salt and pepper, and cook, stirring, until just opaque throughout, about 2 minutes. Remove from the heat.
  • 2. Toast the bread slices in a toaster oven or oven. Top each with 3 to 4 shrimp and drizzle with the pan sauces. Grate the lemon zest directly over the shrimp, then squeeze some lemon juice on top. Serve immediately.

4 oz cream cheese (from 8-oz. package), softened

Steps:

  • Heat oven to 350 degrees F. High Altitude (3500-6500 ft): Heat oven to 375 degrees F.
  • Spray 8 (2 3/4x1 1/4-inch) muffin cups with CRISCO® Original No-Stick Cooking Spray. Separate dough into 8 rolls; set icing aside. Cut each roll into quarters; place 4 quarters, points up and separated slightly, in each muffin cup.
  • In small bowl, stir together pineapple, marmalade and cream cheese. Place 2 tablespoons mixture into center of dough in each cup.
  • Bake 17 to 22 minutes or until light golden brown. High Altitude (3500-6500 ft): Bake 20 to 23 minutes.
  • Cool in pan on wire rack 5 minutes. Run knife around edges of muffin cups; remove rolls from cups and place on serving plate. Remove cover from icing; microwave on Medium (50%) 10 to 15 seconds or until thin enough to drizzle. Drizzle icing over warm rolls. Serve warm.
