PINEAPPLE-GINGER SYRUP



Pineapple-Ginger Syrup image

Mix syrup with seltzer water for a refreshing drink, or drizzle over yogurt, pancakes, or ice cream.

Yield Makes 1 cup

Number Of Ingredients 3

1 large pineapple, washed and dried
1 3-inch piece fresh ginger, thinly sliced
1 cup sugar

Steps:

  • With a sharp knife, slice off top and bottom of pineapple. Holding fruit upright on cutting board, slice off peel in strips; reserve peel. Cut flesh into 8 wedges. Remove core; reserve. Refrigerate wedges for another use.
  • Cut reserved peel and core into 1-inch pieces; place in a medium saucepan with ginger, sugar, and 4 cups water. Boil until reduced to 1 cup, 25 to 30 minutes. Strain, discarding solids; chill.

1 teaspoon ground cumin
1 minced hot green chile peppers
2 cups water
1 cup crushed pineapple
1 tomato, diced
1 ½ teaspoons salt
1 tablespoon fresh cilantro leaves
2 limes, juiced
1 tablespoon vegetable oil
1 ½ teaspoons cumin seeds

Steps:

  • Use a blender to grind the ginger, 1 teaspoon cumin, and green chile peppers.
  • In a medium saucepan, add 1 cup water, pineapple, tomato, and salt. Place over a low heat. When the pineapple and water have come to boil, add the ground mixture. Raise and lower the heat to bring to a boil several times. Add the remaining water, and bring to a boil again. Add cilantro, and remove from heat. Mix in lime juice.
  • In a small pan, heat oil over medium heat, and add the remaining cumin seeds. Fry till golden, and add to the soup as a garnish.

6 cups reduced-sodium chicken broth
2 jalapenos (seeded and sliced)
3 limes (zest of ~ save juice, see below)
1 1/2 cups fresh pineapple (chopped)
1 cup mushroom (sliced)
1 medium tomatoes (chopped)
2 tablespoons fish sauce
1 teaspoon sugar
16 ounces raw shrimp (peeled and deveined, 26-30 per pound)
1/4 cup fresh lime juice
2 scallions (sliced)
1/3 cup fresh cilantro (chopped)

Steps:

  • Place lemongrass and minced ginger in a large saucepan with broth, jalapeños and lime zest. Bring to a boil, reduce to a simmer; cover and cook for 15 minutes. Strain into a bowl. Discard solids.
  • Return the broth to the pan. Add pineapple, mushrooms, tomato, fish sauce and sugar. Bring to a simmer and cook, uncovered, for 5 minutes.
  • Add shrimp and cook until they are pink and just cooked through, 2 to 3 minutes.
  • Remove from the heat and stir in lime juice, scallions, and cilantro.
