When a friend brought this to a church supper, EVERYONE insisted on getting the recipe. Very moist and delicious.

Ingredients

2 cups sugar
2 cups flour
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
16 ounces crushed pineapple, undrained
1/2 cup butter
1 cup sugar
3/4 cup evaporated milk
1 cup coconut
1 cup nuts
1 teaspoon vanilla

Steps:

Place first 6 ingredients in a bowl & mix until blended with spoon.
Pour into 13x9 inch cake pan.
Bake at 350°F 35-40 minutes.
For Icing: Mix butter, sugar and evaporated milk together and cook over medium heat until a little thickened. (This usually takes about 5 minutes at a boil).
Remove from heat and add remaining ingredients.
Pour over hot cake.

This is an easy cake that always gets rave reviews! I don't remember where I originally got this recipe, but it is one I have been making for years. It is so hard not to have seconds with this one.

PINEAPPLE CAKE
2 c self- rising flour
2 c sugar
2 large eggs, slightly beaten
1 can(s) crushed pineapple (20 oz)
1 Tbsp vanilla extract
WARM COCONUT PECAN ICING
1 stick butter
1 c sugar
1 can(s) evaporated milk
1 1/2 c shredded coconut
1 c chopped pecans

Steps:

1. For the Pineapple Cake, preheat the oven to 350 degrees. Generously spray a 9 x 13 pan with cooking oil.
2. Mix the flour and the sugar in a mixing bowl. Add the eggs, vanilla and the can of undrained crushed pineapple and mix until well blended with electric mixer on medium speed.
3. Pour the pineapple mixture into the prepared 9 x 13 pan and bake in the preheated 350 degree oven for 35-45 minutes until the cake is lightly browned and a toothpick comes out clean. Be very careful not to overbake.
4. For the icing, add butter, sugar and evaporated milk together in a heavy saucepan.
5. Bring to a slow boil over medium heat, stirring CONSTANTLY. Once mixture begins to boil, cook until mixture thickens ( about 7 to 10 minutes). When thickened, remove from heat.
6. Stir in 1 ½ cups coconut and 1 cup chopped pecans. Pour out onto warm cake and spread over the top.
7. Enjoy! This is wonderful either served while still warm or cooled.
