2 tablespoons chopped onion
1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

Simply spiced, mild, and fluffy this vegetarian Spanish rice recipe is the perfect side dish for any Mexican dish. Vegan, gluten-free, kicked up spice options, one pan rice!

2 cups long-grain rice (I use organic Basmati, rinsed and drained)
1/4 cup oil (I like Avocado oil, use grapeseed or olive oil too)
8 oz tomato sauce (I split a 16 oz can, organic)
1 1/2 teaspoons kosher salt
1-2 cloves garlic (minced)
1/2 teaspoon cumin
1/2 teaspoon onion powder
4 cups broth (32 oz carton, use vegetable or chicken broth)
fresh cilantro (chopped (optional))
lime (a little fresh squeeze on top (optional))

Steps:

  • Rinse the rice in a fine strainer, let drain. Heat oil over medium heat in a large frying pan, I love cast iron pans. Carefully add rinsed rice, to the hot oil and stir until browned.
  • When rice is browned, scoot to one side and toss in your garlic sauteing for 1 minute. Add tomato sauce, cumin, salt, onion powder, and salt, stir to combine. Pour in your chicken broth and bring to a simmer.
  • Cover and simmer on low for 30-40 minutes, or until all of the liquid is absorbed. Fluff rice with a fork just before serving.
  • Cool completely and store leftovers in quart sized freezer bags or airtight container. Keeps well up to 5 days in the fridge, 3 months frozen. To reheat poke a couple holes in the baggie and microwave on high heat 2-3 minutes until steamy hot. Or thaw in fridge and add to covered pot with a little water and heat over low heat.

2 tablespoons vegetable oil
1 cup rice
1 1/2 cups crushed tomatoes
2 garlic cloves, minced
1 small onion, chopped
2 1/3 cups vegetable broth
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, choped
1 (4 ounce) can green chilies

Steps:

  • In a food processor or blender, blend the tomatoes, garlic, onion and 1/3 cup vegetable broth until smooth. Set aside. Heat the oil in a large saucepan over medium heat. Add the rice and stir until coated with the oil.
  • Stir the tomato mixture into the rice. Add the remaining broth, cover, and cook over low heat until the liquid has been absorbed and the rice is tender, about 25 minutes.
  • Stir in the peppers and green chilies. Heat through and serve immediately.

2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.

If you like the kind of spanish rice served in Mexican restaurants, you will LOVE this recipe. Browning the rice gives it that fluffy and nutty taste that makes it so good. The flavor is not meant to be overpowering, so it goes very good with spicy entrees. This recipe was given to me by a friend who makes the best authentic Mexican dishes ever. Enjoy!

2 cups long-grain white rice (Riceland)
1 -2 medium green pepper, sliced
1 medium onion, sliced
1 medium tomatoes, sliced
2 tablespoons tomato & chicken bouillon (Knorr brand, "Caldo de Tomato con Sabor de Pollo", in Mexican food aisle)
1/8 teaspoon garlic salt (to taste)
4 cups water
vegetable oil (no olive oil)

Steps:

  • Pour rice into a deep pot and stir in enough oil so that every grain is coated.
  • Cook rice on medium and constantly stir, using a spatula, until it becomes a light toasted color (20-25 min), be careful not to burn.
  • Add onion and green pepper, cook until they become soft, add more oil if needed.
  • Stir in tomato, cook for 2-3 minute.
  • Tilt pot, remove any excess oil w/ spoon.
  • Sprinkle bouillon and garlic salt over rice (DO NOT STIR).
  • Pour water over rice (DO NOT STIR), then cover.
  • Bring to a boil, then lower heat and cook for 25-30 min, or until most liquid evaporated (DO NOT LIFT LID DURING THIS TIME).
  • Pick out large pieces of veggies w/ a fork and discard, (this step may be omitted if you chopped your veggies, I have picky eaters).
  • *This rice actually tastes better when cooled, and then heated in the microwave, as any remaining liquid is evaporated.

My wife says this is the best Spanish Rice ever, thus the name. This is a simple compliment to any Mexican-style meal, or any meal for that matter. The secret? Jasmine rice instead of the typical long-grain rice.

1 cup jasmine rice (uncooked)
2 cups water
1 tablespoon olive oil
2 cups water
1 knorr caldo de tomate bouillon cube (or similar Tomato Bouillon with Chicken Flavor cube)

Steps:

  • In a microwave-safe dish (I use a 2-cup Pyrex measuring cup), add 2 cups water and 1 Knorr Caldo de Tomate bouillon cube. Microwave for 2 minutes to heat water. Use a wooden spoon to carefully crush and mix the cube of bouillon in the water. It does not have to be perfectly mixed in, but you do want to get it dissolved.
  • In a 4-quart or larger saucepan on medium-high heat, add 1 tablespoon olive oil.
  • Add uncooked jasmine rice and to the pan, and stir constantly until rice is browned slightly. This should take about 1 minute.
  • Add the water carefully, and bring to a boil.
  • Cover saucepan, reduce heat to low, and cook for 20 minutes.
  • At the end of cooking, fluff rice with a wooden spoon. If the rice looks too damp, leave uncovered and allow to cook for a few more minutes while stirring to prevent burning.

1/4 cup butter or 1/4 cup bacon fat
1 cup yellow onion
2 cups instant rice
8 ounces tomato sauce
8 ounces water
salt
pepper
1 tablespoon prepared yellow mustard

Steps:

  • Melt Butter in sauce pan.
  • Add onions and saute until translucent.
  • Add rice and stir to coat with butter. Cook until rice turns golden brown and smells slightly nutty,.
  • Add tomato sauce, water, salt, pepper, and mustard. Stir.
  • Bring to a boil, cover, and turn off heat. Let stand for 10 minutes.
