Pineapple Buganda image

This is a popular drink from Uganda using pineapples, their major crop. It is made using cream or coconut milk and reminds me of the Caribbean. Recipe was adapted from The African Cookbook by Bea Sandler.

2 cups fresh pineapple, very ripe and cut in small pieces
4 tablespoons brown sugar
1/2 cup cream or 1/2 cup coconut milk
6 ounces white rum
1 teaspoon vanilla extract
1 cup crushed ice
mint sprig, garnish
maraschino cherry, garnish

Steps:

  • Blend until smooth and thick.
  • Serve with mint and a maraschino cherry in whiskey-sour glasses.

Number Of Ingredients 8

2 cups whole meal flour
1 cup natural bran
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon salt
1 cup roasted peanuts
2 eggs (beaten)
1 cup crushed pineapple, drained

Steps:

  • Put flour, bran, baking powder, soda, salt and nuts into a bowl.
  • Add the eggs and pineapple and mix well.
  • Put mixture into a greased loaf pan.
  • Bake at 350"F/180'C (gas mark 3) for 1 hour.
  • Bread should be left for one day and served thinly sliced with cream cheese.
