EASY CROCKPOT TACO SOUP RECIPE
Steps:
- Brown your meat until it's cooked and then drain out the liquid.
- Add all the ingredients into your slow cooker. Beef, beans, corn, chilies, tomatoes, seasoning, all of it. Note: Do not drain the cans! We want all those flavors to meld and marry in the crock-pot.
- Mix the ingredients well and cook for 2 hours on high or 4 to 6 hours on low.
- Add your favorite toppings.
- Enjoy!

- Use the largest slow cooker you have in the house --- this is a BIG recipe, you need a 6-quart or above. brown meat if you are going to use it drain fat and add to crockpot stoneware insert (the meat. not the fat.) sprinkle seasoning packets on top of meat drain and rinse the beans and add add the ENTIRE contents of the corn and tomato cans stir. cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low. Stir well, and serve with a handful of shredded cheese and a dollop of sour cream.

TOMATO TACO SOUP FOR THE CROCK POT
This is truly a "dump it in" recipe using canned veggies, but it tastes fresh due to the lime juice, cilantro and avocado; semi homemade I think they call it these days! Use this as a springboard, so to speak, and feel free to add a can of green chilis, onion, jalapenos, chicken, ground beef. . .you name it! It also freezes well.

- Saute hamburger and onion together until cooked. Drain. Combine hamburger, taco seasoning, ranch dressing mix, beans, hominy, green chilis, rotel and diced tomatoes in large crock pot. ( Do NOT drain any of the canned items). Cover and cook on low all day in crock pot.

A tasty taco soup I made with with a beefy base. Couldn't find a recipe that used salsa, so I made up my own! Add the beef broth slowly to the consistency you like!

- Brown the ground beef with the onion adding the garlic the last few minutes;drain. Stir in pico de gallo and taco seasoning until warm and combined. Add to crock pot. Add corn and kidney beans and stir. Continue to stir in the beef broth. Set crockpot to low or medium (depending on yours, mine has a low and keep warm setting.) for 4 hours. Garnish with shredded cheddar or other favorite taco garnishes!

Steps:
- Brown the ground beef and onions in a large skillet; drain off excess fat and transfer browned beef and onions to a large slow cooker or stockpot.
- Add the beans, corn, tomatoes (I like to mash all of the tomato products before I put them in the stockpot--sometimes there are very large chunks of tomatoes, especially in the stewed tomatoes), green chilies, black olives, green olives, taco seasoning and ranch dressing mix.
- Simmer over low heat for about 1 hour (or 6-8 hours on low setting in crock pot).
- To serve, place a few corn chips in each bowl and ladle soup over them.
- Top with sour cream, cheese, green onions and jalapeños.
