1 pound (lb) ground beef, shredded chicken or meat of choice.
1 (16 ounce) can pinto beans
1 (16 ounce) can of white beans or kidney beans
1 (11 ounce) can niblet corn
1 (11 ounce) can tomatoes and chiles
1 (28 ounce) can diced tomatoes
1 (4 ounce) can diced green chiles
1 1/4 envelope envelope taco seasoning mix
1 envelope envelope Hidden Valley Ranch Salad Dressing and Seasoning Mix

Steps:

  • Brown your meat until it's cooked and then drain out the liquid.
  • Add all the ingredients into your slow cooker. Beef, beans, corn, chilies, tomatoes, seasoning, all of it. Note: Do not drain the cans! We want all those flavors to meld and marry in the crock-pot.
  • Mix the ingredients well and cook for 2 hours on high or 4 to 6 hours on low.
  • Add your favorite toppings.
  • Enjoy!

2 (15-ounce) cans of kindey beans, drained and rinsed
2 (15-ounce) cans of pinto beans, drained and rinsed
2 (15-ounce) cans of corn (WITH juice!!)
1 large can (26-ounces) of diced tomatoes (I have no idea why the can wasn't in this picture. I know I put it in. This is a mystery.)
1 (10-ounce) can tomatoes and chiles (Rotel)
1 packet taco seasoning
1 packet ranch dressing mix (make sure there isn't hidden gluten, I went with Hidden Valley)
1 pound browned ground turkey or hamburger (optional.)
shredded cheese and sour cream for embelishment (optional, unless you're in my house. then it's mandatory.)

Steps:

  • Use the largest slow cooker you have in the house --- this is a BIG recipe, you need a 6-quart or above. brown meat if you are going to use it drain fat and add to crockpot stoneware insert (the meat. not the fat.) sprinkle seasoning packets on top of meat drain and rinse the beans and add add the ENTIRE contents of the corn and tomato cans stir. cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low. Stir well, and serve with a handful of shredded cheese and a dollop of sour cream.

1 onion, chopped
1 (28 ounce) can diced tomatoes with juice
1 (14 ounce) can kidney beans, with juice
1 (15 ounce) can corn, with juice
1 (8 ounce) can tomato sauce
1 (1 1/4 ounce) package taco seasoning
1 cup water
1 cup grated cheddar cheese
tortilla chips

Steps:

  • Brown beef and onion in a skillet. Drain.
  • Dissolve taco seasoning in the water. Combine all ingredients except cheese and chips in the slow cooker.
  • Cover and cook on low for 4-6 hours.
  • Ladle into bowls and top with cheese. Serve with chips.

1 (8 ounce) can tomato sauce
1 lime, juice of
1 tablespoon garlic, minced
2 tablespoons taco seasoning
1 (16 ounce) can diced tomatoes, undrained
1 (15 ounce) can kidney beans, drained
1 (15 ounce) can black beans, drained
1 (16 ounce) can corn
1/2 cup instant rice, uncooked
2 tablespoons fresh cilantro, chopped
2 avocados, diced small
sour cream (optional)
16 tortilla chips

Steps:

  • Dump all ingredients from the tomato juice down to the rice into the crockpot and stir. Cook on high for 2 hours.
  • Prior to serving, stir in fresh cilantro.
  • On top of each bowl of soup, crunch up chips, place a dollop of sour cream and sprinkle some avocado.

1 large onion, chopped
1 (1 ounce) package taco seasoning
1 (1 ounce) package ranch dressing

2 (8 ounce) cans Rotel Tomatoes
1 (16 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies
grated cheese

Frito corn chip

Steps:

  • Saute hamburger and onion together until cooked. Drain. Combine hamburger, taco seasoning, ranch dressing mix, beans, hominy, green chilis, rotel and diced tomatoes in large crock pot. ( Do NOT drain any of the canned items). Cover and cook on low all day in crock pot.
  • Top each individual serving with grated cheese, dollop of sour cream, sliced avacado and frito corn chips.

A tasty taco soup I made with with a beefy base. Couldn't find a recipe that used salsa, so I made up my own! Add the beef broth slowly to the consistency you like!

1 lb 85% lean ground beef, drained
1/2 onion, diced
1/2 teaspoon garlic, minced
1/4 cup taco seasoning (1 packet)
16 ounces pico de gallo, medium spiciness
28 ounces low sodium beef broth
11 ounces sweet corn, with juice
15 ounces dark red kidney beans, drained
1 cup shredded cheddar cheese, for garnish

Steps:

  • Brown the ground beef with the onion adding the garlic the last few minutes;drain. Stir in pico de gallo and taco seasoning until warm and combined. Add to crock pot. Add corn and kidney beans and stir. Continue to stir in the beef broth. Set crockpot to low or medium (depending on yours, mine has a low and keep warm setting.) for 4 hours. Garnish with shredded cheddar or other favorite taco garnishes!

1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can tomatoes and green chilies

1/2 cup green olives, sliced (optional)
1 (1 1/4 ounce) package taco seasoning mix

Steps:

  • Brown the ground beef and onions in a large skillet; drain off excess fat and transfer browned beef and onions to a large slow cooker or stockpot.
  • Add the beans, corn, tomatoes (I like to mash all of the tomato products before I put them in the stockpot--sometimes there are very large chunks of tomatoes, especially in the stewed tomatoes), green chilies, black olives, green olives, taco seasoning and ranch dressing mix.
  • Simmer over low heat for about 1 hour (or 6-8 hours on low setting in crock pot).
  • To serve, place a few corn chips in each bowl and ladle soup over them.
  • Top with sour cream, cheese, green onions and jalapeños.
