2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
½ teaspoon salt
1 (8 ounce) can crushed pineapple
1 egg, beaten
¾ cup milk
¼ cup butter, melted
¼ cup butter, melted
¼ teaspoon ground cinnamon
⅓ cup packed brown sugar
½ cup all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease and flour muffin pans, or line with paper liners.
  • In a large bowl, stir together 2 cups flour, white sugar, baking powder and salt. Drain pineapple, reserving 1/4 cup juice. Make a well in the center of the dry ingredients, and pour in the reserved juice, egg, milk, and 1/4 cup melted butter. Mix just until blended.
  • In a separate bowl, stir together the cinnamon, brown sugar, 1/2 cup flour, and 1/4 cup melted butter to make the topping.
  • Spoon batter into muffin cups, then spoon crushed pineapple over the batter and sprinkle with the cinnamon topping.
  • Bake for 30 minutes in the preheated oven, until a toothpick inserted in the crown of the muffin comes out clean.

1/4 cup celery, chopped
1/4 cup onion, finely chopped
3 tablespoons Miracle Whip light
1/8 teaspoon lemon pepper
4 slices whole wheat bread, toasted
4 slices swiss cheese

Steps:

  • In small bowl, combine tuna, celery, onion, salad dressing and lemon pepper; mix well.
  • Spread about 1/4 cup tuna mixture on each slice of toast.
  • Place on broiler pan or ungreased cookie sheet.
  • Broil 4-6-inches from heat 2 to 3 minutes or until tuna mixture is hot.
  • Top each with cheese slice.

¾ cup pineapple (crushed , fresh or canned)
¼ cup pineapple juice
2 tablespoons sugar (granulated )
8 oz cream cheese (whipped )

Steps:

  • Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees F for 15 minutes (although you may not use all of this time for melting the butter).
  • Place the butter in an 8-inch baking pan or cast-iron skillet and melt in the oven for approximately 5 minutes.
  • While the butter is melting, combine the Jiffy box mix, crushed pineapple, pineapple juice, sugar, and cream cheese in a medium-size mixing bowl.
  • Pour the melted butter from the baking pan into the mixing bowl and mix all the ingredients.
  • Pour the cornbread mixture into the pan.
  • Bake at 350 degrees F. In the conventional oven for 20-25 minutes. Instant Pot Omni Plus oven for 15-18 minutes.
  • Serve sweet cornbread warm, and enjoy!
