DELICIOUS PINEAPPLE MUFFINS

- Preheat the oven to 375 degrees F (190 degrees C). Grease and flour muffin pans, or line with paper liners.
- In a large bowl, stir together 2 cups flour, white sugar, baking powder and salt. Drain pineapple, reserving 1/4 cup juice. Make a well in the center of the dry ingredients, and pour in the reserved juice, egg, milk, and 1/4 cup melted butter. Mix just until blended.
- In a separate bowl, stir together the cinnamon, brown sugar, 1/2 cup flour, and 1/4 cup melted butter to make the topping.
- Spoon batter into muffin cups, then spoon crushed pineapple over the batter and sprinkle with the cinnamon topping.
- Bake for 30 minutes in the preheated oven, until a toothpick inserted in the crown of the muffin comes out clean.

- In small bowl, combine tuna, celery, onion, salad dressing and lemon pepper; mix well.
- Spread about 1/4 cup tuna mixture on each slice of toast.
- Place on broiler pan or ungreased cookie sheet.
- Broil 4-6-inches from heat 2 to 3 minutes or until tuna mixture is hot.
- Top each with cheese slice.
- Broil an additional 1 to 2 minutes or until cheese is melted.

- Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees F for 15 minutes (although you may not use all of this time for melting the butter).
- Place the butter in an 8-inch baking pan or cast-iron skillet and melt in the oven for approximately 5 minutes.
- While the butter is melting, combine the Jiffy box mix, crushed pineapple, pineapple juice, sugar, and cream cheese in a medium-size mixing bowl.
- Pour the melted butter from the baking pan into the mixing bowl and mix all the ingredients.
- Pour the cornbread mixture into the pan.
- Bake at 350 degrees F. In the conventional oven for 20-25 minutes. Instant Pot Omni Plus oven for 15-18 minutes.
