Cook an egg in its own "nest" made of buttery, toasted bread.

Steps:
- Cut holes in bread slices with jar or cookie cutter.
- Place butter in large skillet.
- Heat skillet on medium heat until butter melts and begins to sizzle.
- Place bread slices on skillet (may also place cutouts on skillet if enough room).
- Break an egg inside each bread hole.
- Cook until egg is to desired doneness, turning as needed.
- Sprinkle egg with salt & pepper
- Serve cutouts as toast with dollops of jelly.

- Use a 3-inch cookie cutter to cut a shape out of the bread. Melt the butter in a griddle or frying pan. Place the bread in the pan and break an egg into the hole. Lay the cutout shape in the pan wherever it will fit and toast until golden brown. Sprinkle the egg with salt and pepper.
- When the egg is cooked on the bottom and before the bread becomes too brown, flip the egg nest to toast the other side and finish cooking the egg, about 1 minute. Serve with toasted shape.

- Spray insides of pie irons with cooking spray.
- Mix together hash browns, peppers, onions, and seasonings.
- Place inside pie iron and cook over campfire until potatoes begin to brown.
- Carefully scoop potatoes towards the outside, and crack one egg into the middle of your "nest."
- Close the pie iron and place back over the fire, cooking until egg is done to your liking.
- Place in bowl or on plate and add additional seasonings as you desire.

- Preheat oven to 180dC, 350dF.
- Cook bacon, leek and garlic in a nonstick fry pan over medium high heat for 3- 4 minutes or until bacon is crisp.
- Add red pepper (capsicum) and zucchini and cook for 3-4 minutes longer.
- Stir in basil and black pepper to taste.
- Spoon mixture into a small ovenproof dish and form a depression in the centre.
- Break egg into a small bowl, then slide into the depression in the vegetable mixture.
- Sprinkle with cheese and bake for 5-8 minutes at 180dC 350dF or until the white is set in the egg.

- Using a glass (drinking cup), or circular cookie cutter that is just smaller than the crust line, cut out a circle inside the slice of bread.
- Heat skillet on the stove over medium-low heat.
- Coat bottom of skillet with butter or non-stick spray so the egg and bread will not stick.
- Place bread ("nest"), with center hole removed, into the skillet.
- Crack the egg into the middle of the hole (you may season the egg with your favorite seasonings, if you like, or leave it plain).
- While "Egg in a Nest" is cooking, you can toast the circle cut-out of bread, for a small side of toast. Add butter (and honey, or any other topping) to the circle piece of toast as soon as it comes out of the toaster.
- Keeping a close eye on the skillet, remove "egg in a nest" when egg is cooked to your liking (sunny-side up), OR -- Cover skillet with a lid for 2-4 minutes for "over-easy, over-medium, or over-hard" eggs. Check often to make sure it is cooked to your liking. Every stove-top cooks differently, so use the time frame given as an estimate.
- Remove with spatula.
- Plate, and serve with your little piece of toast!
- **You can also top this with shredded cheese, if you want a more savory meal, or drizzle on some honey for something sweeter. Use forks or fingers! :).

- 1. Make a generous amount of mashed potato for 4 people add a knob of butter, a teaspoons of mustard & s&p to taste. Then whilst still hot add a couple of handfuls of grated cheddar cheese.
- 2. With scissors chop a packet of smoked bacon into small pieces & dice a large onion, fry both until crispy, add to mash.
- 3. Dice a couple of tomatoes reserving a few of slices, add chopped tomato to mash, mix in well. Then spoon into lasagne dish or equivalent.
- 4. With back of a spoon make 4 egg size holes, make them slightly larger than you think. Top with grated cheese & decorate with sliced tomato.
- 5. Break a raw egg into each hole, flavour egg with s&p. When ready to bake, place uncovered into an oven at 190c for approximately 45 minutes or until eggs are cooked (check around the sides of the egg with a knife and top is browned.

Steps:
- Preheat oven to 400 degrees.
- Grease muffin pan with cooking spray.
- Mix Simply Potatoes® Shredded Hash Browns, green onion, pepper, salt and oil.
- Divide potatoes between 12 muffin cups, pressing against sides and bottom (as high as you can because they shrink down).
- Bake 25 minutes.
- While contents are in oven fry bacon and red bell peppers for about 7 minutes over medium heat.
- Add bacon and pepper mixture with beaten eggs and milk.
- Season with salt and pepper to taste.
- Pour egg/bacon/bell pepper mixture over cooked hash brown/green onion cups.
