PHILLY CHEESESTEAK STRATA

- Preheat the oven to 350 degrees F.
- Tear the hoagie rolls into medium bite-sized pieces and spread on a baking sheet. Toast in the oven until dried out, 10 to 15 minutes.
- Brown the steak slices in the oil, breaking up into pieces with a wooden spoon, in a cast-iron or nonstick skillet over medium-high heat. Remove from the skillet and drain all but 1 tablespoon of fat. Cook the onion, peppers, mushrooms, a pinch of salt and some pepper, stirring occasionally, until soft and translucent, 4 to 5 minutes. Add the steak back to the pan, stir well, turn off the heat and set aside.
- Microwave the cheese sauce in 30-second intervals, stirring after each, until pourable. Pour into a large bowl with the eggs and half-and-half and whisk to combine well.
- Place a layer of dried bread in a deep 9-by-13-inch casserole dish. Add a layer of steak and peppers, then ladle the cheese custard over until just covered. Repeat until all the ingredients are used. Bake the strata until just set, 30 to 35 minutes.
- Preheat the broiler to low. Layer the provolone across the top of the pan, overlapping as necessary. Broil until the cheese topping is brown and bubbly, 5 to 10 minutes. Let the strata sit for 10 minutes to set before serving.

- Preheat the broiler. Heat the olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until golden, about 4 minutes; season with salt and pepper. Remove the onion to a plate. Add the beef to the skillet and cook, stirring, until just starting to brown, about 8 minutes. Add a few dashes each of hot sauce and Worcestershire sauce and toss to coat.
- Pile the beef and onion onto the rolls and top with cherry peppers and cheese. Place on a baking sheet and broil (open-face) until the cheese melts.

- Cook brats according to package directions (we used the Sizzling Sausage Grill to get the perfect brats in under 15 minutes)
- While brats cook, sauté the onions and bell pepper in the butter over medium heat. Cook until the onions start to brown and caramelize.
- Once brats and vegetables are cooked through, place two slices of provolone cheese in each roll/bun. Heat in oven or microwave if desired to melt cheese.
- Top with brat and the onion/pepper mixture.
- Serve warm and enjoy!

- Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
- Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
- Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

- Preheat the grill to medium high heat. If you don't have a vegetable basket, spread a sheet of heavy duty foil over half of the grill.
- Toss the green pepper, onions, and mushrooms with the olive oil. Season with salt and pepper. Place the vegetables in a grill basket or spread them out over the foil on the grill. Add the brats directly to the grill grates. Grill with the cover closed for about 6-7 minutes. Check the vegetables. If they're getting browned, flip them over. If the bottoms of the brats are browned, flip them as well. Cover, and continue to grill, checking every few minutes, until the veggies are softened and starting to char and the brats reach an internal temperature of 160 degrees.
- In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook until thick and fragrant, about a minute. Remove from heat and slowly whisk in milk. Add the cream cheese cubes. Return to heat and bring the mixture to a boil, whisking constantly. Turn the heat to low and add the cheese, stirring until cheese is melted and cream cheese is completely smooth. Remove from heat and season to taste with salt and pepper. I usually don't need much salt, but like a lot of fresh cracked pepper in mine!
