BAKED ONION RINGS
Steps:
- Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
- Stir together the buttermilk and cornstarch in a shallow bowl.
- Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
- Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.
EMERIL'S FAVORITE ROAST PHEASANT
Steps:
- Preheat the oven to 500 degrees F and position the oven rack in the bottom third of the oven.
- Season the cavities and the outside of each pheasant liberally with salt and pepper. Divide the chopped onion and carrot equally among the cavities of the pheasants. Squeeze the juice from both halves of the orange and set aside. Cut 1 of the squeezed halves into 3 pieces, and tuck inside of the cavities along with the veggies. Insert 1sprig of thyme into the cavity of each pheasant.
- Arrange the pheasants in a large roasting pan, breast sides up. Lay 2 strips of bacon over the top of each pheasant, cutting the bacon into pieces if necessary to cover as much of the pheasant as possible. Roast for 15 minutes, then remove the bacon strips and continue roasting for approximately 30 to 40 minutes, or until the juices run clear. (It is important to not overcook the pheasants, as they are very lean birds.) Remove the pheasants from the oven and transfer to a serving platter, loosely tented, while you make the sauce.
- Using a spoon, carefully remove as much extra fat from the pan as possible. Place the roasting pan over high heat and, when hot, deglaze with the reserved orange juice and Madeira, using a wooden spoon to scrape any brown bits from the bottom of the pan. When the orange juice and Madeira have reduced by half, add the chicken stock and continue to cook until sauce has reduced enough to coat the back of a spoon, about 3 to 4 minutes. Swirl in the butter and remove from the heat. Season, to taste, with salt and pepper.
- Remove the back bone from each pheasant, then cut along the breast bone to divide the birds into two halves. Serve 1/2 pheasant per person, napped with some of the sauce and with some of the Wild Mushroom Bread Pudding.
- Heat the oil in a large, deep skillet over high heat. Add the onions and cook until golden brown and tender, 5 minutes. Add the mushrooms, 1/2 teaspoon of the garlic, 1 1/2 teaspoons of the Essence, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper, and cook, stirring, until the mushrooms are tender and have given off their liquid, about 5 minutes. Add the beer and cook, stirring, to deglaze the pan and until the mixture is almost dry, 1 to 2 minutes. Remove from the heat and let cool.
- In a large bowl, combine the eggs, cream, molasses, Worcestershire sauce, thyme, remaining 1 1/2 teaspoons of Essence, remaining 1/2 teaspoon of salt, and remaining 1/4 teaspoon of pepper, and whisk well to combine. Add the mushroom mixture and cheeses and stir well. Add the bread cubes and let sit until the bread has absorbed the liquid, 2 hours, stirring occasionally.
- Preheat the oven to 350 degrees F.
- Butter a 9 by 13-inch baking dish with the butter. Add the bread crumbs, shaking to cover the bottom evenly. Pour the bread pudding mixture into the prepared pan and cover with aluminum foil. Bake for 1 hour and uncover. Continue baking until risen and firm in the center, and golden brown, 20 to 30 minutes. Remove from the oven and cool slightly before serving.

ROAST PHEASANT
This is a quick simple recipe for fresh pheasant that has a very autumn feel to it. It is very good with potatoes, carrots and seasonal squash (I like acorn squash) diced and roasted in the pan with it. You can cook it at a higher temperature for a shorter time; just be sure to baste often since it is a very dry meat.

- Preheat an oven to 250 degrees F (120 degrees C).
- Stir the chopped rosemary and thyme into the olive oil and set aside. Rub the pheasant inside and out with salt and pepper. Place into a close-fitting roasting pan. Pour the herb oil over top.
- Bake the pheasant in the preheated oven for 1 hour, then cover with aluminum foil, and continue baking an additional hour, or until an instant-read thermometer inserted into the thickest part of the thigh, near the bone reads 180 degrees F (82 degrees C). Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing. Baste the pheasant with the hot oil and juices from the pan every 30 minutes while cooking.

- Preheat oven to 450 degrees F (230 degrees C).
- Separate onion slices into individual rings.
- Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
- Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.
- Drop flour-coated onion rings into egg white-milk mixture, a few at a time, and toss lightly with tongs until coated. Place rings into panko crumbs and gently shake the bowl to toss the crumbs with the onion rings until rings are coated with crumbs.

- Combine olive oil and butter in frying pan.Cut pheasant into leg and breast pieces.
- Roll pheasant in flour and brown in frying pan for 5 minutes turning once.
- Remove pheasant from oil and butter. Chop onions into 3/4" pieces.
- Sauté mushrooms and onion in same pan until brown.

BAKED ONION RINGS
I love onion rings but I really don't like the grease that comes along with it so I looked around for some recipes for baked onion rings to get an idea of the technique and I came up with some unique touches of my own. Still working on this recipe though so bare with me.

Steps:
- Preheat your oven to 350 degrees.
- Lightly grease a baking sheet with non-stick spray.
- Cut onion cross-wise into quarter-inch thick slices and separate the rings.
- Season milk, panko, and flour with the salt, sugar, cayenne and paprika.
- Dip onion slices into the milk, Make sure the whole slice is covered in milk --you can soak it in the milk overnight if you'd like.
- Dip the onion slice into the flour and then back into the milk (this will help the panko stick).
- Now dip the ring into the panko.
- Place onto the baking sheet about 1/4 inch apart to make sure the rings don't steam each other (makes rings crispier).
- Bake for about 20-25 minutes or until golden brown.

Steps:
- Rinse inside and outside of pheasant several times with warm water.
- Drain well.
- Salt inside cavity.
- Cook giblets for gravy if desired.
- TO MAKE STUFFING:.
- Saute onion in heated butter.
- Add remainig ingredients for stuffing and toss to mix well.
- Fill cavity and truss.
- TO MAKE BLANKET DOUGH:.
- Sift together fluor and salt.
- Cut in shortening with pastry blender or two knives until the size of rice grains.
- Add water gradually stirring to make a dough soft enough to roll.
- Roll out in to a rectangle shape on a lightly floured surface.
- Thickness should be between 1/8 to 1/4 inch.
- Size should be about 15 by 10 inches.
- Wrap dough around pheasant, completely covering it.
- Moisen edges and pinch together to seal.
- Place pheasant, breast side up, on a trivet in a shallow roasting pan.
- Roast uncovered in 350 oven for 1 1/2 to 2 1/2 hours.
- Prepare gravy from drippings.
- Break away crusty golden brown blanket in pieces.
- Serve with the pheasant and giblet gravy.
