A wonderful way to spice up leftover steak. Being someone who doesn't care very much for meat, I was surprised at how fantastic these sandwiches were when my step-dad made them. They're sure to be a hit!

1 small steak (already barbequed)
2 small onions
1 teaspoon minced garlic
4 kaiser rolls
8 slices mozzarella cheese
kraft ranch dressing (optional)
pepper

Steps:

  • Cut steak into strips.
  • Slice onions into rings and fry with garlic.
  • Add steak and finish when onions are brown.
  • While frying mixture, cut buns halfway open and top one side with 2 slices mozzarella Toast buns till cheese is melted.
  • Fill buns with steak mixture and top with desired amount of ranch dressing and pepper to taste.
  • Serve hot and enjoy!

4 French rolls, split
1/4 cup fat-free Italian salad dressing
2 medium onions, thinly sliced
3/4 lb thinly sliced cooked lean roast beef
4 slices American cheese (I use provolone)

Steps:

  • Spray 10-inch nonstick skillet with cooking spray; heat over medium heat. cook onions in skillet about 5 minutes, stirring frequently, until tender. Stir in beef; heat through.
  • Set oven control to broil. Place rolls cut side up on cookie sheet; brush with dressing. Broil with tops 4 to 5 inches from heat for 2 minutes.
  • Divide beef mixture among rolls. Top with cheese. Broil about 1 minutes or until cheese is melted. Serve immediately.

I come from the land of seafood po' boys so Philly Cheesteak Sandwiches are new to me. I was gifted a Cook's Country magazine and this recipe was one featured. Their process of developing a recipe is so interesting. This particular one included a trip to the more famous purveyors of sandwiches in South Philadelphia and the recreation was, naturally, all about the beef. After the prep, the sandwiches cook pretty quickly. (Note: The recipe doesn't call for it, but I dash on some garlic power for additional flavor.)

6 teaspoons vegetable oil
2 small onions, chopped
1 1/2 lbs sirloin, tips pounded until paper thin
salt and pepper
8 thin slices provolone cheese, cut in half
4 (6 inch) sub rolls, slit partially open lengthwise

Steps:

  • Heat 2 teaspoons oil in a large nonstick skille over medium high heat until very hot. Add onions and cook until soft and golden, about 5 minutes. Remove and set aside.
  • Season with salt and pepper the pounded steak slices. Heat additional 2 teaspoons oil in the same skillet and heat until very hot. Place half of the steaks into the skillet (they may overlap).
  • Cook until steaks are no longer pink, about 1 minute per side. Remove pan from heat, layer 4 half slices of cheese over meat, top with more meat and finally 4 more half slices of cheese. Cover pan with lid to melt cheese, about 1 minute.
  • Divide meat and cheese between 2 rolls, top with half of onions and pour accumulated juices from skillet over the meat. (To keep warm, wrap in foil while preparing the remainding sandwiches.).
  • Wipe skillet clean with paper towelling and repeat process with remaining steaks. Wrap the second batch of sandwiches in foil and let sit for about 1 minute to allow flavors meld. Serve.

This recipe for Philly cheesesteak sandwiches is one of those Crock Pot meals you will want to make again and again, because you get that authentic Philly cheese steak taste, yet none of the hassle. It is a cinch to prepare, because all of the work is done in the Crock Pot. Just dump everything in, and a few hours later, dinner is ready! Even better: You can buy a leaner cut of meat and let the Crock Pot cooking tenderize it. Look for thinly-sliced round steak in the meat section of your local grocery store. If you can't find pre-sliced round steak, ask the butcher to slice it for you (after all, why do any more work than you need to?). 1 lb thinly-sliced round steak
1 garlic clove, finely-minced
1 teaspoon Worcestershire sauce
1/4 cup low sodium beef broth
1 teaspoon freshly-ground pepper
4 hard rolls (submarine, kaiser or hoagie rolls)
1 cup shredded low-fat monterey jack cheese

Steps:

  • Place the sliced onions and green peppers in the bottom of the Crock Pot stoneware.
  • Lay the round steak slices on top of the vegetables.
  • Whisk together the minced garlic, Worcestershire sauce, beef broth and pepper. Pour over steak slices. Cover. Cook on low 6 to 8 hours or high 3 to 4 hours.
  • Preheat the oven to broil.

2 fresh Italian sandwich rolls or Kaiser buns, split in half crosswise
1 white onion, thinly sliced
1/2 large green bell pepper, thinly sliced
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 pound rib-eye steak, very very thinly shaved or sliced
1/3 pound thinly sliced white American cheese, or Provolone cheese OR 4 ounces melted cheese whiz
Ketchup, optional topping
Italian pickled peppers, accompaniment

Steps:

  • Heat a cast-iron skillet or griddle over medium-high heat. When hot add the oil, onions and bell peppers, and cook, stirring, until caramelized, about 6 minutes. Add the garlic, salt, and pepper, and cook, stirring, for 30 seconds. Push off to 1 side of the griddle.
  • Add the meat to the hot pan and cook, stirring and breaking up with the back of 2 metal spatulas, until almost no longer pink, about 2 minutes. Mix in the Sauteed vegetables. Top with cheese slices and melt. Spoon the cheesy meat mixture into the warm buns and serve immediately with condiments of choice or Put the meat in the bun and dip the spatula in the cheese whiz and then wipe the spatula down the inside of the bread.

2 lbs rib eye steaks
2 sweet onions
1 tablespoon olive oil
kosher salt
fresh ground pepper
garlic powder
4 French rolls
8 slices provolone cheese
1/4 cup sliced pepperoncini pepper (optional)

Steps:

  • Slice meat with food processor as thin as possible. Cut onion into thin slices.
  • Heat oil in large skillet on medium-high. Add meat and onion and season immediately. Feel free to play with your spices. I like to use a seasoned salt and pepper like Krazy Jane's for this dish.
  • Cook meat until done, then taste meat and add more spices as needed. Remove from heat.
  • Meanwhile slice rolls partially open and put two slices of provolone on each. Toast in oven on 425 degrees until cheese is melted.
  • Pile meat and onions onto rolls and top with pepperoncini. Serve hot.
  • TO MAKE AHEAD: Undercook meat slightly and transfer to a crockpot on warm setting, not low or medium as you don't want the meat to overcook. Make the buns as directed and arrange on a platter nest the crockpot. It's okay if the buns aren't warm since the meat will reheat them.
