PESTO SANDWICH-BASIL PESTO SANDWICH

Steps:
- Roast bell pepper on fire until the skin gets charred. Once it cools, remove the black skin and cut it lengthwise. Keep it aside. You can roast it on oven also but since it is only 1 small bell pepper, I roasted it on direct flame.
- You can use ready made pesto or homemade pesto. Refer the recipe for homemade walnut basil pesto.
- Take 4 bread slices, spread one side of 2 bread slices with generous amount of pesto. Top the pesto with 1 slice of onion, 1 tomato slice, one cucumber slice and some chopped roasted bell pepper.
- Place a cheese slice on the other 2 bread slices (picture below). Now cover the pesto spread bread slice with cheese side facing down.
- You can enjoy it without toasting the bread. I love my bread toasted. If you like toasted sandwich like me, then proceed to the next step.
- Heat a little butter in a griddle/tawa, place the sandwich and toast both sides until golden brown.If you have a toaster with you, you can toast it using that also.
- Repeat the same process for the other 4 bread slices.
- Enjoy it for breakfast or for lunch or as a snack. It is incredibly satisfying!
BACON, BASIL PESTO, AND TOMATO SANDWICH

During summer, when you have more basil than you know what to do with, make your own pesto. You can freeze pesto in ice cube trays for a real treat in the winter. - Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Set aside on a paper towel to drain.
- Spread 1 tablespoon pesto on the bottom slice of toast. Layer tomato slices and 3 slices bacon over each. Season with salt and pepper. Spread 1 teaspoon mayonnaise on remaining bread slices and place on top of the sandwiches. Cut sandwiches in half to serve.

- Combine the pesto, mayo, tuna, and tomatoes. Salt and pepper to taste.
- Spread the tuna mixture on the bottom half of the rolls and top with a slice of cheese (I used hoagie rolls; this is enough filling for four large sandwiches).
- Broil until the cheese is slightly browned.
- Top with optional lettuce and the other half of the bun.
- Serve!

CHICKEN PESTO SANDWICH
There are some wonderful posted recipes for basil-pesto! or use the store-bought kind. If you feel up to it bake your own bread!! You can also use just the chicken pesto portion of the recipe and serve as a main dish over pasta.

- Mix the pesto and mayo.
- Cut the bread in half.
- Spread the pesto mayo on the bread.
- Layer the chicken first,then the fresh lettuce, and the tomato wedges.
- Sprinkle with the grated cheese.
- Note:This sandwich is really good with the fresh veggies but if you want a little more flavor, I sometimes like to do the following.
- In a small pan heat up the olive oil over low heat, add the garlic and the tomato.
- Sprinkle with oregano, basil,parsley and salt.
- Cook the tomato for about 10 minutues.
- Add over the chicken.
