Brown Bread - 8 slices
Pesto - as needed
Tomato - 1
Cucumber - 5 - 6 slices
Onion - 4 slices
Capsicum - 1 (small size)
Cheese slice - 4

Steps:

  • Roast bell pepper on fire until the skin gets charred. Once it cools, remove the black skin and cut it lengthwise. Keep it aside. You can roast it on oven also but since it is only 1 small bell pepper, I roasted it on direct flame.
  • You can use ready made pesto or homemade pesto. Refer the recipe for homemade walnut basil pesto.
  • Take 4 bread slices, spread one side of 2 bread slices with generous amount of pesto. Top the pesto with 1 slice of onion, 1 tomato slice, one cucumber slice and some chopped roasted bell pepper.
  • Place a cheese slice on the other 2 bread slices (picture below). Now cover the pesto spread bread slice with cheese side facing down.
  • You can enjoy it without toasting the bread. I love my bread toasted. If you like toasted sandwich like me, then proceed to the next step.
  • Heat a little butter in a griddle/tawa, place the sandwich and toast both sides until golden brown.If you have a toaster with you, you can toast it using that also.
  • Repeat the same process for the other 4 bread slices.
  • Enjoy it for breakfast or for lunch or as a snack. It is incredibly satisfying!

6 slices center-cut bacon
4 slices lightly toasted bread, divided
2 tablespoons basil pesto
1 tomato, sliced
salt and ground black pepper to taste
2 teaspoons light mayonnaise

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Set aside on a paper towel to drain.
  • Spread 1 tablespoon pesto on the bottom slice of toast. Layer tomato slices and 3 slices bacon over each. Season with salt and pepper. Spread 1 teaspoon mayonnaise on remaining bread slices and place on top of the sandwiches. Cut sandwiches in half to serve.

1 slice focaccia bread, cut in half horizontally
1 tablespoon mayonnaise
2 teaspoons basil pesto
2 tablespoons sun-dried tomato pesto
1/4 cup roasted red pepper
1/2 cup crumbled feta cheese
1/2 cup fresh basil leaf

Steps:

  • In a small bowl, mix together mayonnaise and basil pesto; spread onto one half of bread.
  • Spread other half with sun-dried tomato pesto.
  • Arrange roasted red peppers on bottom piece.
  • Cover with feta cheese, then fresh basil. Top with remaining slice of bread.

6 tablespoons pesto sauce (I used store-bought)
1/4 cup light mayonnaise
2 (6 ounce) cans albacore tuna in water, drained
2 medium tomatoes, diced
shredded lettuce (optional)
4 slices monterey jack cheese
4 hard rolls

Steps:

  • Combine the pesto, mayo, tuna, and tomatoes. Salt and pepper to taste.
  • Spread the tuna mixture on the bottom half of the rolls and top with a slice of cheese (I used hoagie rolls; this is enough filling for four large sandwiches).
  • Broil until the cheese is slightly browned.
  • Top with optional lettuce and the other half of the bun.
  • Serve!

1 lb of chopped grilled chicken breast
1 loaf freshly baked French bread
1 -3 leaf arugula, chopped
1 plum tomato, sliced and cut in half
1 cup basil pesto
1 cup mayonnaise
1 -2 tablespoon romano cheese or 1 -2 tablespoon asiago cheese, grated
1 teaspoon dried oregano (optional)
1 teaspoon dried sweet basil leaves (optional)
1 teaspoon parsley (optional)
1 tablespoon olive oil (optional)
1 garlic clove, crushed (optional)
1 pinch salt (optional)

Steps:

  • Mix the pesto and mayo.
  • Cut the bread in half.
  • Spread the pesto mayo on the bread.
  • Layer the chicken first,then the fresh lettuce, and the tomato wedges.
  • Sprinkle with the grated cheese.
  • Note:This sandwich is really good with the fresh veggies but if you want a little more flavor, I sometimes like to do the following.
  • In a small pan heat up the olive oil over low heat, add the garlic and the tomato.
  • Sprinkle with oregano, basil,parsley and salt.
  • Cook the tomato for about 10 minutues.
  • Add over the chicken.
