An excellent refreshing meal in the summer. If you haven't has gazpacho before, TRY IT! Dont be scared because its cold soup, its fabulous!

Number Of Ingredients 13

2 cloves garlic
3 cups firmly packed fresh basil
2 tablespoons grated parmesan cheese
1 cup olive oil
1/2 cup pine nuts
3 tomatoes, peeled
1 sweet green pepper, chopped
1 carrot, chopped
1/4 cup lemon juice
1 teaspoon lime juice
1 cucumber, peeled seeded and chopped
3 sprigs parsley
3 cups vegetable broth

Steps:

  • Combine Basil, Garlic, Cheese and oil in food processor and pulse until chopped well, but not smooth.
  • Add pine nuts and pulse several time to break up the nuts.
  • (Pesto should be chunky, not smooth) Transfer to bowl and set aside.
  • Combine remaining ingredients in processor or blender and puree until smooth To serve pour gazpacho in bowls and top with several tablespoons of pesto.
  • Great topped with croutons!

Found this while looking for Spanish influenced recipes for ZWT5. Gazpacho is a flavourful cold, raw soup. Cooking time does not include several hours to chill.

4 cups tomato juice
2 cups tomatoes, diced
1 cucumber, peeled, seeded and diced
1/2 cup red onion, chopped
1/2 cup celery, chopped
1/2 cup bell pepper, chopped
1 jalapeno pepper, chopped fine
2 scallions, chopped
2 garlic cloves, minced
2 tablespoons wine vinegar
2 tablespoons lemon juice or 2 tablespoons lime juice
2 tablespoons olive oil
salt and pepper, to taste

Steps:

  • Combine all of the ingredients in a large bowl.
  • Purée some or all of the soup (optional).
  • Chill for several hours.

Try this dazzling take on the classic chilled Spanish soup - this version is made with green veg, herbs and yogurt. Add edible flower ice cubes for extra special presentation

100g bag baby spinach
2 garlic cloves
1 large cucumber , deseeded and chopped
½ green chilli , deseeded
½ small pack parsley
½ small pack basil
½ small pack mint
1 ripe avocado , stoned and peeled
4 spring onions , topped and tailed
200g natural yogurt
2 tbsp sherry vinegar
drizzle of extra virgin olive oil or rapeseed oil
handful pea shoots
edible flowers ice cubes, to serve (see tip, below)

Steps:

  • Put all the ingredients, except the oil, pea shoots and ice cubes, into a food processor with a good pinch of salt and pepper and blitz, adding enough water to get a soupy consistency. Taste, and add a little more vinegar and seasoning if necessary. Chill for up to 24 hrs, or at least 2 hrs.
  • To serve, divide between shallow soup bowls, float a few ice cubes in each bowl (see tip, below) and add a scattering of pea shoots and a drizzle of oil before serving.
