My local bakery occasionally makes an absolutely fabulous olive bread which I have attempted to clone. This is the closest I can come to it and it is a very nice version though not as great as the original. As usual, the best ingredients make the best bread so get the best olives you can find - it really makes the difference.

Number Of Ingredients 12

4 cups white bread flour
1 1/3 cups water (Iukewarm)
1 teaspoon sugar
1 teaspoon salt (can add a bit more if you like)
7 -8 g dried yeast
1 1/2 tablespoons olive oil
2/3 cup kalamata olive (not the sliced ones)
2 slices onions (around 2 tbs)
1/2 teaspoon oregano
1 garlic clove (pressed)
1 teaspoon tomato paste
black pepper

Steps:

  • First prepare the onion. Sprinkle the slices with salt and allow to sit for 5 minutes. Then rinse and squeeze to drain. The onion will be softer and not as sharp tasting. Finely chop, you should have around 2 tablespoons.
  • Pit the olives with a sharp knife and roughly chop.
  • Add the olives, chopped onion, oregano, garlic and tomato paste together and grind in a little black pepper to taste.
  • Set the bread machine on the basic cycle which is around 3 hours.
  • Add the remaining ingredients into the bread machine in the order recommended by the manufacturer, (mine is liquid first then solid) and then add the olive mixture at the beep for extras.
  • Bake with a medium crust or dark if you like it that way.
  • This bread is wonderful with a Greek salad or spread with tarama or eggplant dip.

1 cup water, plus
2 tablespoons water
1 tablespoon vegetable oil
3 cups bread flour
2 tablespoons sugar
1 teaspoon salt
1 1/4 tablespoons bread machine yeast
3/4 cup olive, pitted and coarsely chopped

Steps:

  • Place the ingredients, except olives, in the bread pan in the order recommended by your machine's manufacturer.
  • Process on the appropriate cycle.
  • Add olives at the raisin/nut signal or 5 to 10 minutes before last kneading cycle ends.
  • I prefer to make it with the dough cycle; shape it in 2 loaves and let is rise for 30 minutes.
  • Bake in a pre heated375* oven for 30 minutes.
  • Option:.
  • Add 1 1/2 cup old or sharp shredded cheddar cheese with the flour for a Cheese Olive Bread; fantastic.
  • Tip:.
  • For my bread to rise, I heat 2 cups of water in microwave for 5 minutes; this creates steam. Leave water in microwave. Sit your bread in microwave OFF for 30 minutes.Your bread will rise really nice.

1 cup warm water
2 teaspoons yeast
3 cups bread flour
1 tablespoon sugar
1 teaspoon salt

1/2 teaspoon salt & freshly ground black pepper
1 tablespoon dried thyme
24 kalamata olives, pitted

Steps:

  • Pour the water into the bowl of a stand up mixer fitted with a dough hook and sprinkle in the yeast. Add 1 cup of the flour and the sugar then stir to combine. Let rest for ten minutes or so, until the yeast activates and bubbles appear on surface.
  • Add the rest of the flour, salt, olive oil, pepper, thyme and olives and mix well until dough begins to form a ball. Continue kneading for a few minutes until the dough is smooth and elastic. Place in a large, oiled bowl, cover with a towel, and rest in a warm place until the dough doubles, about 1 hour.
  • Lightly oil your hands then knock down the dough, pressing the air out of it. Knead a few times and then place dough onto an oiled baking sheet. Pull and press dough across pan until if forms a large, flattened circle and vigorously poke dimples into it with your fingertips. Drizzle with olive oil, coarse salt and pepper and let rise a second time until it doubles again, about 30 minutes.
  • While you wait preheat your oven to 450 degrees. Place in oven and bake until it has formed a golden crust, but is still soft in the centre, about 40 minutes.

My family loves this bread & it is so easy to make. I serve it with Italian food. It is adapted from a recipe in Pizza, Focaccia, Flat, & Filled Breads From your Bread Machine. You may substitute herbs in the topping, or use fresh. The original recipe calls for a roasted vegetable topping, but I am going to post that as a separate recipe because the bread alone is great. (Cooking time includes rising times & will vary with your bread machine cycle).

2 teaspoons yeast
2 1/2 cups all-purpose flour
1 teaspoon sugar
1 1/2 teaspoons salt
1 cup lukewarm water
1/3 cup olive oil
1 teaspoon dried basil
1/4 teaspoon coarse salt
1 tablespoon olive oil

Steps:

  • Place the ingredients into the pan in the order recommended by your bread machine.
  • Program the machine for "dough cycle".
  • Check dough about 10 minutes before the end of the 2nd kneading cycle.
  • It should be a smooth, sticky ball.
  • Adjust if needed with more flour or water.
  • When the machine has completed its cycle, transfer the dough to a lightly floured work surface.
  • Roll or pat it into a large rectangle, about 17x12 inches.
  • Transfer the dough onto a large, lightly greased cookie sheet.
  • Let it rest 10 minutes then pat it back to its original shape if it has shrunk.
  • Cover with a towel and let rise for about forty minutes or till puffy.
  • Sprinkle the salt & herbs over the bread.
  • Press into the dough at intervals with your fingers& sprinkle with the olive oil.
  • Bake the focaccia in a preheated 425°F oven for 15 minutes or until the crust is golden brown.
  • Remove from the oven & cool on a wire rack.

FOCACCIA WITH PESTO & MOZZARELLA

This homemade pesto bread is a delicious accompaniment to Italian food

500g strong white bread flour, plus some for dusting
1 ½ tsp salt
7g sachet fast-action yeast
2 tbsp extra-virgin olive oil , plus some for drizzling
125g ball mozzarella , drained
5 tbsp pesto (shop-bought or see recipe, below)
sea salt , to serve (optional)

Steps:

  • Put the flour into a bowl and mix in the salt. Mix the yeast into 325ml tepid water. Add the water and oil to the flour, then mix well with a plastic scraper or your hands. When most of the liquid is incorporated, use your hands to bring all the ingredients together into a ball of dough.
  • Tip the dough out onto a worktop lightly dusted with flour and work it by pulling and stretching for at least 10 mins. Try to get as much air into it as possible. Put the ball of worked dough into a well-oiled bowl, cover with a little more oil and a tea towel or cling film. Leave to rest for 1 hr or so in a non-draughty warm spot, until doubled in size.
  • Now stretch the dough out onto a baking sheet until it's about 20 x 30cm. Leave the dough to rise again to about half as high again, about 30-40 mins in a warm draught-free place, loosely covered with a tea towel.
  • Heat oven to 180C/160C fan/gas 4. When the dough has risen, press your fingers into it gently to make some holes. Bake for about 15 mins, then remove from the oven. Tear over the mozzarella, then bake for another 5-10 mins until golden and cooked through. Drizzle over the pesto and scatter with sea salt, if you like. Serve straight away.

1 cup lukewarm water
2 tablespoons olive oil
½ teaspoon salt
2 teaspoons chopped garlic
1 tablespoon chopped fresh rosemary
3 cups bread flour
1 ½ teaspoons active dry yeast
2 tablespoons olive oil
1 ½ teaspoons chopped fresh rosemary

Steps:

  • Place water, 2 tablespoons olive oil, salt, garlic, 1 tablespoon rosemary, bread flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
  • Remove dough from bread machine when cycle is complete. Pat dough into either a 9x13 inch baking pan or 12 inch pizza pan. Use your fingers to dimple the dough every inch or so. Brush with remaining olive oil and sprinkle with remaining rosemary.
  • Preheat oven to 400 degrees F (200 degrees C). Cover foccacia with plastic wrap while oven preheats.
  • Bake in preheated oven for 20 to 25 minutes, or until golden brown. let cool for 5 minutes before serving.

This bread is SO appealing and very versatile too! We often have it in the summertime quartered and sliced horizontally and filled with barbecued chicken thighs, lettuce, sliced red onions, tomatoes and avocado and some Paul Newman's Own Ranch Dressing! Simply divine!! The preparation time I have given does not include the time it takes for the Bread Machine to make the dough or the time it takes for the dough to rise.

Yield 1 loaf of Italian Flat Bread, 4 serving(s)

Number Of Ingredients 8

2 teaspoons dried yeast
3 cups bread flour
1 teaspoon salt
1 tablespoon sugar
1 teaspoon rosemary (dried)
1 teaspoon oregano (dried)
1 tablespoon oil
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, in the Bread Machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the Bread Machine, and proceed with the following steps: On a lightly floured surface, gently knead the dough for about 10 minutes.
  • (you may need to add extra flour during this time) Place the 'Focaccia' dough in a well grease bowl, cover and leave to rise in a warm (and draught free) place for about 1/2 an hour.
  • Then, knead the dough lightly (in the bowl) for about 1 minute.
  • On a lightly floured surface, roll the dough into a rectangular shape (about 20 cm x 30 cm)
  • Place on a well greased baking tray (or sponge roll tin) and leave to rise again, in a warm place, this time for about 1 hour (or until it has doubled in it's original size) Now pour and smooth over with your fingers, 1 tablespoon of olive oil.
  • 'Poke' the dough with 2 fingers at intervals over the surface, and sprinkle liberally with rock salt or equal measurements of olive oil and Basil pesto mixed together with grated Parmesan or Romano cheese, top with chopped up sun-dried tomatoes and sliced black olives!
  • YUM!
  • Bake at 225°C for about 15 minutes or until golden brown!

This comes from a great cookbook I've had for awhile, "Bread Machine, how to cook and prepare the perfect loaf" by Jennifer Shapter. This was the best focaccia I've ever had, and I can't wait to make it again. It tastes great with some lightly salted & peppered olive oil. NOTE: I used dried sage, and it came out just fine. Preparation time is the time it takes in the bread machine, plus rising time, plus time for prepping.

1 cup water
1 tablespoon olive oil
3 cups unbleached white flour
1/2 teaspoon salt
1 teaspoon granulated sugar

Steps:

  • Pour the water and oil into the bread pan.
  • Reverse the order in which you add the wet and dry ingredients if necessary.
  • Sprinkle the flour over, ensuring that it covers the liquid.
  • Add the salt and sugar in separate corners.
  • Make a shallow indentation in the flour and add the yeast.
  • Set the bread machine to the dough setting.
  • If our machine has a choice of settings, use the basic or pizza dough setting.
  • Press Start.
  • Lightly oil a 10-11 inch shallow round cake pan or pizza pan.
  • When the cycle has finished, remove the dough from the pan and place it on a surface lightly dusted with flour.
  • Punch the dough down and flatten it slightly.
  • Sprinkle over the sage and red onion and knead it gently to incorporate.
  • Shape the dough into a ball, flatten it, then roll it into a round of about 10-11 inches.
  • Place in the prepared pan.
  • Cover with oiled plastic wrap and let rise in a warm place for 20 minutes.
  • Meanwhile, preheat the oven to 400°F Uncover the risen focaccia, and using your fingertips, poke the dough to make deep dimples over the surface.
  • Cover and let rise for 10-15 minutes, or until the dough has doubled in bulk.
  • Drizzle the olive oil over and sprinkle with the onion, sage leaves, sea salt and black pepper.
  • Bake for 20-25 minutes, or until golden.
  • Turn out onto a wire rack to cool slightly.
  • Serve warm.

  • Meanwhile, in large skillet saute onions and butter for 15 minutes.
