This is the easiest recipe ever....and I dont cook roast beef any other way because no matter what, you end up with a wonderfully moist roast every time. Oh yeah and there is no oven mess to clean up afterwoods.

1 bolar roast
1 (45 g) packet French onion soup mix
1 oven cooking bag

Steps:

  • Place dry soup min in bag and shake.
  • Put beef in bag and roll around to coat.
  • Seal bag (do not pierce)and place in moderate oven.
  • Cooking time will depend on how you like your beef cooked.
  • I like mine well done -- dont worry it will be moist and flavoursome.
  • Let sit for 5 minutes.
  • Remove meat from bag, reserve juices to make the worlds best gravy!
  • note: This recipe is best for a bolar roast. Topside etc. is a bit too lean and wont turn out as tender.

1 teaspoon seasoned salt
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1 beef chuck pot roast (3 to 4 pounds)
1 tablespoon olive oil
3/4 cup water
1 large onion, chopped
1/4 cup chopped green pepper
2 garlic cloves, minced
2 bay leaves
2 teaspoons dried parsley flakes
1/4 teaspoon dried thyme
All-purpose flour

Steps:

  • Combine first four ingredients; rub onto roast. In a skillet, brown roast in oil. Place in a roasting pan. Add water, onion, green pepper, garlic and seasonings. Cover and bake at 325° for 2-1/2 to 3 hours or until roast is tender. , Remove and keep warm. Discard bay leaf. Skim fat from pan juices. Measure juices and transfer to a saucepan. , For each cup of juices, combine 1 tablespoon flour with 2 tablespoons water; mix well. Stir flour mixture into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve gravy with roast.

One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

1/2 teaspoon ground fennel
1 (3-pound) chuck roast
Extra virgin olive oil
3 large carrots, peeled and cut into 2-inch-long chunks
1/2 pound cipollini onions, peeled, or 1 large Vidalia onion, cut into 1/4- to 1/2-inch dice
3 garlic cloves, smashed
1 1/4 cups hard cider (or apple cider if you prefer nonalcoholic)
3 1/2 cups beef broth
6 fresh thyme sprigs
1 fresh rosemary sprig
1 fresh or dried bay leaf
2 tablespoons all-purpose flour
2 tablespoons tomato paste

Steps:

  • Preheat the oven to 325ºF.
  • Combine the salt, pepper, and ground fennel in a small bowl. Generously season the roast with the spice mixture.
  • Add enough oil to a large Dutch oven to coat the bottom. Heat it over medium-high heat, add the roast, and sear 8 to 10 minutes total, turning to brown all sides. Transfer the roast to a bowl.
  • Add the carrots, onions, and garlic and season lightly with salt and pepper. Sauté the vegetables until browned, 5 to 8 minutes, being careful not to burn the garlic. Remove the vegetables and place in a clean bowl.
  • Deglaze the pot with 1 cup of the cider. Using a wooden spoon, scrape up any brown bits that have stuck to the bottom of the pot. Bring the liquid to a boil over high heat. Add 2 cups of the broth and bring it to a boil again.
  • Add 4 sprigs of the thyme, the rosemary, bay leaf, and roast to the pot (reserving the vegetables in the bowl). Bring the liquid to a boil, then reduce heat to a simmer.
  • Cover the pot, place it in the oven, and roast for 2 hours. Add the reserved vegetables and roast for 1 more hour, until the roast is fork-tender but not mushy.
  • Remove the roast and vegetables to a large bowl or platter and cover to keep warm. Let the braising liquid cool slightly, then strain the liquid into a bowl (discard the solids).
  • Skim off any fat that has risen to the top.
  • Purée the braising liquid in a blender.
  • To make the sauce, heat 2 tablespoons oil in the Dutch oven over medium heat. Add the flour and stir to combine with the oil. Stir in the remaining 1/4 cup cider and the tomato paste and mix well.
  • Return the braising liquid to the pot along with the remaining 1 1/2 cups beef broth and the remaining 2 thyme sprigs. Increase the heat to medium-high and bring to a boil. Reduce to a simmer and cook for 15 to 20 minutes, until the sauce is thickened.
  • Season the sauce with salt and pepper to taste. Remove the thyme sprigs.
  • To serve, slice the pot roast, arrange the vegetables around it, and pour the sauce over the top.

  • In many pot roast recipes, there is an element of alcohol. In mine, I use hard cider, but you can also try red wine, a heavy beer, or-for your Irish friends-Guinness. The booze gives the meat an extra dimension but won't get the family hammered.

4 lbs beef shoulder (it must be this cut!)
1 large onion, sliced
1 cup beef stock
1/2 cup flour
salt and pepper
3 large carrots (cut into 2 in pieces)
4 large russet potatoes (peeled and quartered)
2 tablespoons olive oil
1 oven cooking bag

Steps:

  • Turn oven to 325 degrees.
  • Shake salt and pepper into the flour. Put flour on paper plate and then place meat on the plate - turning to cover all sides with the flour. In a pan hot with about 2Tbl olive oil, brown meat well on all sides. This should take about 10 minutes.
  • Prepare roasting bag by shaking 1 TBL flour in bag, set bag in 2 in deep oven safe pan.
  • Place a few onion slices in bottom of bag, followed by the browned roast. Place remaining onion slices on top of roast. Pour the beef stock over the Roast and seal the bag. Cook on middle rack of oven for 2 hours.
  • After 2 hours, Remove all but 1/2 C of roast juices from pan (I used to make gravy) Place sliced carrots around roast, place potatoes on top of carrots, reseal bag and cook an additional 2 hours.

1 ½ tablespoons kosher salt
2 teaspoons Italian seasoning
1 teaspoon red wine vinegar

1 tablespoon salted butter
1 cup vegetable broth
1 large Spanish onion, chopped

Steps:

  • Whisk 1/4 cup wine, 3 tablespoons olive oil, kosher salt, Italian seasoning, vinegar, 1/2 teaspoon black pepper, and garlic salt together in a bowl and pour into a resealable plastic bag. 2 tbsp. olive oil
2 whole onions
6 whole carrots (up to 8 carrots)

Steps:

  • Preheat oven to 325F.
  • Combine flour, onion powder, garlic powder, paprika, and black pepper together in a small bowl. Whisk to combine.

4 pound Beef Pot Roast (3-4 pounds, (I prefer a chuck roast or rump roast, but any kind will work))
2 Tablespoons olive oil
1 teaspoon salt ((more to taste - be generous))
½ teaspoon black pepper ((more to taste - be generous))
½ teaspoon garlic salt ((more or less to taste))
2 cups beef broth (divided)
1 onion (roughly chopped into large pieces)
1 pound baby carrots
3 celery stalks (roughly chopped into large pieces)
3 garlic cloves (minced)
3 Tablespoons Worcestershire sauce
2 Tablespoons balsamic vinegar
1 Tablespoon soy sauce
1 teaspoon dried thyme ((more or less to taste))
1 teaspoon dried rosemary leaves ((more or less to taste))
4 cups drippings from Instant pot (liquid) from the Instant Pot after roast is done cooking
4 Tablespoons butter
3 Tablespoons flour

Steps:

  • Press the SAUTE button on your Instant Pot and allow it to heat up.
  • Add 2 Tablespoons of olive oil to the bottom of the Instant Pot.
  • Generously sprinkle salt, pepper, and garlic salt on all sides of the pot roast.
  • Place roast in hot oil on a skillet and let it sear on that side for 2 minutes. Flip the roast over and sear the other side for 2 minutes.
  • Depending on the shape of your pot roast, you can sear the other sides if you choose. Press CANCEL button to turn off the saute feature.
  • Remove the roast from the Instant Pot and place on a plate.
  • Pour 1/2 cup beef broth into the bottom of the Instant Pot and with a wooden spatula, scrape the burnt brown bits off the bottom of the pot (this is called "deglazing" and will keep you from getting the burn notice when it cooks).
  • Place roast back into Instant Pot. Add onion, carrots, and celery and spread all around the roast.
  • Add garlic on top of roast and vegetables.
  • Pour in the beef broth, being sure not to pour it directly on the roast or vegetables because you just cooked them in delicious flavors. Try to pour the beef broth on the sides as much as possible.
  • Pour the Worcestershire sauce, balsamic vinegar, and soy sauce directly on the roast. Sprinkle thyme and rosemary evenly around the meat and vegetables.
  • Place the lid on top of the Instant Pot and move the valve to SEALING. Press the PRESSURE COOK (MANUAL) button and set timer for 80 minutes (or 20 minutes per pound, depending on the size of your roast).
  • When the timer is done, let the pressure do a NATURAL RELEASE and then let the roast sit on warm for at least 1 hour (I sometimes will let it sit on warm in the Instant Pot for 3-5 hours, just to let it really get tender).
  • Remove roast from Instant Pot and slice into pieces (it should pretty much fall apart by this point).
  • Serve with mashed potatoes and the cooked carrots on the side.

1 ½ (1 ounce) envelopes dry onion soup mix

Incredibly tender Sous Vide Pot roast with homemade beef gravy, roasted onions, carrots and potatoes is a hearty and warming winter meal.

2 tablespoons olive oil
1½ lb chuck roast
½ teaspoon freshly ground pepper
2 garlic cloves (peeled)
10 thyme stalks
2 tablespoons butter
1 teaspoon sugar
½ teaspoon salt
2 cups potatoes (if they are large cut into 1½" cubes, if small just cut in half)
½ pound carrots (cut into 1-inch pieces)
1 cup apple slices (cut into ½-inch pieces)
½ cup red onions (cut into ¼-inch pieces)
3½ tablespoons olive oil
½ tablespoon salt
Freshly ground pepper
½ teaspoon garlic powder
10 stalks fresh thyme
2½ cups beef broth
2 tablespoons cornstarch
¼ cup mixed fresh herbs (parsley, basil)

Steps:

  • With a sous vide wand, heat about 6 liters of water in a large pot or container to 133°F / 56°C.
  • Meanwhile, heat the olive oil in a large skillet over high heat. When the oil begins to smoke, sear the chuck roast, holding the meat in place with metal tongs to form a golden crust all over. Remove the meat from the skillet and let cool.
  • Place the chuck roast into a Ziploc or vacuum-sealed bag, along with the pepper, garlic, thyme, butter, sugar and salt. Vacuum seal closed.
  • When the water reaches temperature, submerge the bag in the water, ensuring it's completely covered. Cover the pot or container with plastic wrap to avoid water evaporation. Cook for 24 hours, up to 48 hours.
  • Towards the end of the sous vide time, preheat the oven to 350°F / 180°C.
  • In a baking dish, toss the potatoes, carrots, apples, and onions with the olive oil, salt, pepper and garlic powder, and mix everything together with your hands. Distribute the thyme stalks in between the vegetables. Roast for 45 minutes.
  • Meanwhile, in a medium pot, bring the broth to a simmer and reduce it to 1½ cups.
  • Remove the bag from the sous vide bath. Strain the liquid in the bag directly into the pot with the broth.
  • In a small cup, dissolve the cornstarch in 5 tablespoons cold water and whisk into the broth. Bring the gravy to a boil, mixing constantly. When boiling, cook for 1 minute, then remove the gravy from the heat.
  • When the vegetables are fork-tender, remove them from the oven and increase the temperature to 450°F / 230°C. Remove the thyme stalks from the vegetables.
  • Drizzle the sauce over the vegetables and stir. Place the sous vide chuck roast on top and return to the oven until the chuck has a deep golden brown color, about 5 minutes.
  • Top the roast with fresh herbs. Serve with a side of green beans if you like.
