It's Easter week, so here's a recipe for a fantastic salad you can serve during the holiday (and all of your spring occasions!). We'll show you how to make the salad right here.

Number Of Ingredients 9

1/3 c. sour cream
1 tbsp. mayonnaise
Salt and pepper
1 tbsp. white vinegar
4 c. frozen green peas, almost totally thawed
8 slices bacon, cooked until crisp and chopped
1/2 small red onion, halved and sliced very thin
6 oz. cheddar or American cheese, cut into small cubes
3 tbsp. minced fresh parsley

Steps:

  • Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.
  • Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)
  • Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

This classic pea salad is simply perfect! With peas, chunks of cheddar cheese, plenty of crisp, salty bacon, and chopped scallions, all tossed in a simple, creamy dressing, this side dish is so quick and easy to throw together. Made with green onions for loads of flavor but no surprise big chunks of onion!

¼ cup mayonnaise
⅓ cup sour cream
1 teaspoon sugar (see Notes)
2 teaspoons vinegar of choice (white wine vinegar, apple cider vinegar, etc.)
plenty of salt and pepper (to taste)
4 cups frozen peas (thawed)
8 slices bacon (cooked, crumbled)
6 ounces cheddar cheese (cut into very small cubes, roughly pea-size)
¼ cup scallions (chopped)

Steps:

  • In small bowl, combine mayo, sour cream, sugar, vinegar, and salt & pepper. Whisk until combined.
  • Place thawed peas in large mixing bowl and add dressing. Stir to coat.
  • Add in bacon, cheddar cubes, and scallions. Stir together until thoroughly coated.
  • Cover and refrigerate at least 2 hours, then serve chilled.

Mr. Food recipe from Simple Southern Favorites. I made this for a quick lunch when a neighbor stopped by and it was huge hit. Easy and wonderful like most of his recipes. Can be used as a salad, sandwich filling or as a spread.

1 tablespoon butter
1/2 cup mayonnaise, I use Kraft Light
15 ounces peas, drained
3 hard-boiled eggs, finely chopped
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • In a small saucepan melt the butter over medium low heat.
  • Add the mayonnaise and peas and toss quickly to coat.
  • Remove from heat.
  • Transfer to a medium sized bowl and add all remaining ingredients.
  • Mix until well combined.
  • Cover and chill for at least 2 hours.

I have had this many times over the years at family reunions and church meals. Paula Deen even has the recipe on her site on FoodTV. Can be doubled or tripled. Simple to make, easier to love!!! Edited to add: I have now tried this with frozen peas as recommended by the reviewers! Frozen peas are the way to go. It has better flavor and texture! But again, use whatever is your preference!

1 (15 ounce) can very young early garden peas
1/4 cup onion
2 eggs, boiled
2 -3 tablespoons mayonnaise

  • Drain the peas.
  • Boil the eggs and chop.
  • Chop the onion.
  • Combine all the ingredients in a bowl.
  • Season with salt and pepper to taste.

1/2 onion, chopped
3 hard-boiled eggs
4 ounces cheese, cubed (I like sharp or American)
1 (12 ounce) jar dill pickle relish
4 tablespoons pickle juice
3 -4 tablespoons Hellmann's mayonnaise
salt & pepper
1 dash Tony Chachere's Seasoning

Steps:

  • Empty drained peas into a bowl.
  • Combine all ingredients, stirring well.
  • Mixture should be creamy; add more mayo if needed.

A very quick salad, made with things I had on hand (and needed to use up). Prep and cook time doesn't take into account cooking bacon, because you might want to use bacon bits.

1 (500 g) packet frozen baby peas, thawed,drained
1/2 cup finely chopped red onion
1/2 cup diced cooked bacon (could use bacon bits I guess)
1/2 cup corn kernel, canned is ok
1 cup grated tasty cheddar cheese
1/2 cup diced red capsicum (bell pepper)
1/4 cup sour cream (I used lower fat)
1/4 cup mayonnaise (I used Best's)
salt & freshly ground black pepper

Steps:

  • Get a large bowl, and mix everything together gently but thoroughly, seasoning to taste.
  • Chill for a couple of hours before serving to allow the flavours to develop.
