BAKED SWEET POTATO FRIES
Baked sweet potato fries are so easy to make at home! This healthy and delicious vegetable side dish will satisfy your cravings for french fries!

Steps:
- Heat the oven to 375°F on convection bake (or 400°F in a non-convection oven).
- Peel the sweet potatoes and cut them into even matchsticks. Place them on a foil- or parchment-lined baking tray (parchment paper will yield a crisper exterior) and toss the yams with your fat of choice, salt, pepper, and smoked paprika.
- Pop the fries in the oven for about 30 minutes, flipping the frites and rotating the tray halfway through.
- When the fries are tender in the middle and browned on the edges, plate them up and dig in!

PALEO OVEN BAKED SWEET POTATO FRIES

Steps:
- Preheat oven to 450 degrees and lightly grease 2 cookie sheets, or line with parchment.
- Peel your sweet potatoes, but do not rinse them, you need them dry so the oil adheres.
- Slice your sweet potatoes into french fries: no perfect way to do this, but keep the pieces equal in size and thickness. Fries should be > 1/2" (go ahead and grab a ruler, I promise, no one will know)! The final size of fry will determine total cooking time.
- In a large bowl, toss the fries with the avocado oil, and any seasonings (options mentioned above in post) if you so choose. I wait to sprinkle salt when the potatoes are on the cookie sheet.
- Spread the fries out in a SINGLE LAYER on a cookie sheet (I always use two, and if I need to, three!) Do not crowd your fries unless you want them mooshy! All fries must keep their hands to themselves!
- Sprinkle the fries with sea salt.
- Place no more than two cookie sheets in the preheated oven and bake for 15 minutes. This cook time will vary based on your fry thickness.
- Remove cookie sheets and using tongs, flip the fries over, they should be golden on the flipped side. Return the cookie sheets, flip flopping the cookie sheet positions. I sometimes remove a few of my thinner fries earlier than the rest so they do not burn...alas, I am not a a machine and my fries are never exactly the same size!
- Cook for another 10-15 minutes until the fries are golden and crispy.

CRISPY BAKED PALEO SWEET POTATO FRIES
Steps:
- Preheat the oven to 425 degrees F.
- Line a baking sheet with parchment paper.
- Peel and slice the sweet potato. You want thinner, long fries. They should be about 1/4 inch wide.
- In a large Ziploc bag, add sliced sweet potatoes and tapioca starch. Zip the bag and shake until everything is covered.
- Add the oil to bag. Zip the bag and shake until everything is coated.
- Add the salt and spices, zip and shake again.
- Lay fries on lined pan in a single layer. Try to prevent the fries from touching each other. This will help ensure crispiness. Place in oven for 40-45 minutes.
- Flip halfway through cooking. Check the fries after 35 minutes. If they are still soft continue to cook. Cook times can vary based on oven and type of pan your are using. For my oven and aluminum pan I usually have to cook the fries for a full 45 minutes.
- Remove from oven and serve immediately.

PERFECT, BAKED PALEO SWEET POTATO FRIES RECIPE
These fries are made of sweet potatoes, they are thinly sliced and cooked to a crisp. They are well seasoned for taste.

Steps:
- Preheat oven to 450 degrees.
- Line two baking sheets with parchment paper.
- In a small bowl, combine the arrowroot starch, garlic powder, paprika, parsley, salt, and pepper. Set aside.
- Peel the sweet potatoes and cut into thin, long slices, about 1/4" thick.
- The thinner your slices, the crispier your fries will be.
- Place the sliced sweet potatoes in a bowl.
- Pour the spice/arrowroot mixture on top of the sweet potatoes and toss until well coated.
- Drizzle the coconut oil over the potatoes and toss until evenly distributed.
- Lay out the sweet potatoes on the parchment lined sheets, spaced out in even layers and not touching, if possible.
- Bake on the top racks of the oven for 20 minutes, remove and turn the sweet potatoes over with a spatula, then finish cooking for another 5 minutes.
- Fries are done when the flesh starts to look bubbly and turns golden brown in spots.
