Italian Frying Peppers - 3 Delicious Ways To Cook image

This recipe of Italian Frying Peppers makes for a delicious veggie side dish or a pasta sauce for the next day.

Provided by Italian Recipe Book

Categories     Appetizer     Side Dish

Number Of Ingredients 7

1.5 lb Italian frying peppers (, approx 700 g)
2 garlic cloves
5-10 fresh basil leaves
Extra virgin olive oil
Vinegar to taste
Salt (, pepper to taste)
Anchovies ((optional))

Steps:

  • Start by rinsing peppers under cold water.
  • If you decide to cook them whole simply skip to the next step. Otherwise using a small sharp knife cut of the top with the stem. Remove the seeds. You can speed up cleaning process by cutting the top part a quarter of an inch lower from the stem. This helps remove the seeds faster.Rinse peppers again in cold water to remove any remaining seeds.
  • In a large pan add generous amount of extra virgin olive oil, garlic cloves and peperoncino. Cook for 2-3 minutes. At this point you can add a couple of anchovies (optional) and stir until dissolved.
  • Add Italian frying peppers (whole or previously deseeded).
  • Cook on high heat for a few minutes then reduce to medium and cover with a lid. Cook for about 15 minutes or until tender.
  • Peppers should release enough juice while in the pan but feel free to add some water if the pan is getting too dry.
  • Once peppers are cooked add basil leaves, a splash of vinegar (see notes) and salt to taste. Give another good stir. Let vinegar evaporate and turn the heat off.
  • Serve with freshly ground black pepper or top them with crumbled feta cheese.

SUSAN'S ITALIAN ROASTED RED PEPPERS

Susan's Italian Roasted Red Peppers image

This is a delicious side dish that we serve on holiday's as part of our Italian antipasto platter. The red peppers and the "sauce" they're in make EXCELLENT dipping with fresh italian bread and are the highlight of our holidays. I've even started making these to add on fresh grilled veggie sandwiches and I'll often make it to go in any recipe that calls for roasted red peppers since they put the jarred stuff to shame!! Add as little or as much garlic as you want at the end...I use a LOT! These are served at room temperature but sit nicely in the refrigerator if there are leftovers. Ensure to let the peppers sit out at room temperature for at least 30 minutes before serving if you refrigerate to allow the thick surface oil layer to come to room temperature. Be sure to let the garlic, oil, parsley and peppers marinate for a while before serving to get the full flavor. Enjoy!

  • As one side darkens, take them out and continue to roast all sides until the peppers are evenly charred.
  • Place in a bowl or baking dish and cover in saran wrap to let them "steam" for 20 minutes (This will help to release the charred skin and maintain the sweet inner flesh).
  • Pull the tops off the peppers and be sure to save any release pepper juices in the dish you plan to place them. Remove all the charred flesh by tugging on it (should come off in sheets if steamed enough).
  • Removed seeds and rinse lightly under water, if necessary, to get all seeds out.
  • Place in bowl and add the olive oil, garlic and parsley. Mix well and serve at room temperature.

Grandma Rose and my mom made this at least once a week. Usually we eat it at room temperature on nice crusty bread folded over like a sandwich. Can be served warm on top of polenta, fried or poached eggs. Mushrooms were added also after fresh pickings if we had them so that is optional.
