I'm always looking for a new, EASY appetizer to take to different parties. This one is very simple and yummy! I haven't tried doing it yet, but I think you could use Bisquick instead of the flour and baking powder.

Number Of Ingredients 9

Ingredients

3/4 cup(s) flour
3/4 teaspoon(s) baking powder
1/2 teaspoon(s) garlic powder
3/4 cup(s) whole milk
1 - egg, lightly beaten
4 ounce(s) mozzarella cheese, shredded (1 cup)
4 ounce(s) low fat sausage, cooked and crumbled
2 ounce(s) mini turkey pepperoni (1/2 cup)
1 cup(s) pizza sauce

Steps:

Pre-heat over to 375*. Grease a 24 cup mini-muffin pan (or 2 12 cup mini-muffin pans). In a large bowl, whisk together the flour, garlic powder and baking powder; whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden; about 20-25 minutes.
Meanwhile, microwave the pizza sauce until warmed. Serve the puffs with the pizza sauce for dipping.

Puree the fire roasted tomatoes and tomato paste in food processor or blender until smooth. Place the tomatoes in a saucepan, add the rosemary and thyme, and cook over medium heat for 10 minutes, stirring frequently. This will give the herbs time to infuse the tomato sauce with their flavor.
Turn the heat off and add the chopped pepperoni, mozzarella cheese, and parsley. Stir it all together and taste for seasoning. Add salt and pepper as needed.
Roll out the puff pastry and cut rectangles from the dough with a knife or pizza cutter, and place a spoonful of the pepperoni pizza sauce on one side of the puff pastry.
