This is a great way to use home grown jalapenos instead of buying those little bottles of hot pepper sauce sold in the grocery. This takes 3 months to age. Recipe souce: Mastering Barbecue

Ingredients

2 lbs jalapeno peppers
3 cups distilled white vinegar
2 teaspoons kosher salt

Steps:

***Caution - you must wear food-safe gloves when preparing this***.
Wearing gloves, seed and chop the chile peppers.
Simmer vinegar, salt and peppers in a large saucepan over medium heat for 10 minutes. ***BE CAREFUL NOT TO BREATHE THE FUMES***.
Let cool and then process in a blender until smooth.
Store in a glass bottle and age for at least 3 months.
Strain sauce into small bottles for gifts or for home use.

Ingredients

24 hot peppers
1 large sweet potato, peeled, & sliced (or 4 carrots, peeled & sliced)
10 garlic cloves
1 large onion, sliced
1 lime, juice of
1 tablespoon balsamic vinegar
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon white pepper (black will do)
1 teaspoon sugar
1 teaspoon mustard powder
1 teaspoon turmeric
1/2 cup apple cider vinegar

Steps:

Blanch the peppers in boiling water for 1 minute (if you want this sauce milder remove seeds& membrane before blanching the peppers) Put the peppers in your food processor or blender.
Boil the onion, garlic& sweet potato until fork tender (just cover them with water& bring to a boil, simmer until tender) Toss the onion, garlic& sweet potato into the processor together with all the other ingredients Pulse to start and then puree, cool.
Place in a jar with a lid, refrigerate.

1 garlic clove, minced
1 medium onion, chopped
1 teaspoon salt
3/4 cup Dr. Pepper cola
6 ounces tomato paste
1 teaspoon Worcestershire sauce
3 drops hot pepper sauce

Steps:

Brown meat, breaking into small pieces, add garlic, onion and salt.
Cook 5 minutes.
Add remaining ingredients, stir well.
Simmer 20 minutes or until thick.
Spoon onto toasted buns.
