HOT PEPPER JELLY CHEESE DIP WITH BACON
Sweet and salty with a little bit of heat, this Hot Pepper Jelly Cheese Dip with Bacon is irresistible at holiday parties.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, beat cream cheese until creamy. Add cheddar cheese, garlic, and salt and mix well. Stir in 1/2 jar of hot pepper jelly. Pour into a lightly greased 1 quart baking dish. Bake 35-40 minutes or until hot and bubbly.
- Heat remaining jelly in microwave for 20-30 seconds to soften, slightly melt. Spread over top of the dip and sprinkle top with bacon.
- Serve immediately with crackers or pita chips.

This recipe came from one of my husband's friends. Odd sounding ingredients (all two of them), but VERY addicting! He suggested eating them with Bugles and I can tell you it was an excellent suggestion. Sweet from the jelly, creamy from the cheese, and a little bite from the pepper. Mmmmmmm.

EASY SPICY RED PEPPER JELLY

- Combine the preserves, bell peppers, red pepper flakes, vinegar and 1/4 teaspoon salt in a blender; puree until smooth. Transfer to a small saucepan and bring to a brisk simmer over medium heat. Cook, stirring often, until thickened and syrupy, about 10 minutes. Transfer to a jar and cool completely. Refrigerate for up to 1 week.

Steps:
- Sterilize 6 (8 ounce) canning jars and lids according to manufacturer's instructions. Heat water in a hot water canner.
- Place red bell peppers, green bell peppers, and jalapeno peppers in a large saucepan over high heat. Mix in vinegar and fruit pectin. Stirring constantly, bring mixture to a full rolling boil. Quickly stir in sugar. Return to full rolling boil, and boil exactly 1 minute, stirring constantly. Remove from heat, and skim off any foam.
- Quickly ladle jelly into sterile jars, filling to within 1/4 inch of the tops. Cover with flat lids, and screw on bands tightly.
- Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 5 minutes.

- Place the jalapeno, half of the green peppers and half of the vinegar in a blender or food processor; puree. Pour into a large bowl. Puree remaining green peppers and vinegar; add to the bowl. Add apple juice; mix well. Cover and chill overnight. Strain through several layers of damp cheesecloth. Measure 4 cups juice into a Dutch oven (add water if needed to make 4 cups). Stir in pectin and salt; bring to a rolling boil over high heat, stirring constantly. Add sugar; return to a rolling boil. - Place peppers in a food processor; pulse until combined. Add 1 cup vinegar; process until peppers are finely minced. Transfer to a 6-qt. stockpot. Stir in sugar, pomegranate juice and remaining vinegar. Bring to a full rolling boil over medium heat, stirring constantly. Boil 10 minutes. Remove from heat. Stir in pectin. Return to a boil, stirring constantly. Remove from heat; skim off foam., Ladle hot mixture into seven hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.
