Steps:
- Add the Cheddar, cream cheese, pimientos, mayonnaise, onion powder, cayenne, garlic powder and 1/2 teaspoon salt to a large mixing bowl. Use a hand mixer to beat the mixture until it is well combined and fluffy, about 1 minute. Salt to taste.
- Transfer the dip to a serving bowl and garnish with the chives. Serve with crackers and assorted crudités.

I created this while making my pimento cheese recipe. I wanted the hubby to do a taste test and he loved the unfinished product as a dip! We get so tired of the same old stuff I love to have something new. Hope you enjoy!!

- Put all in food processor and process until runny. Cover place in fridge overnight. Stir, serve with chips, ritz crackers, or toasted baguette slices. You can toss with sharp cheddar if you would like a thick cheese spread instead.

Steps:
- In mixing bowl, add slices of avocado, lemon juice and one half of the diced pimento strips. Mash with fork or mixer.
- Add sour cream, garlic salt, white pepper, dried cilantro.
- Mix on low speed.
- Fold in tuna and green onion until mixed.
- Fold in the balance of pimento strips.
- Fold in water chesnuts if desired.
- Taste. Add more salt if desired.
- Add cayenne pepper if desired.
- Serve with little scooper tosito chips, corn scoops, or regular torilla chips.
- We used this as a main dish with lots of cooked vegetables as side dishes. This can be doubled or tripled easily for a appetizer dip.
