PEPPERIDGE FARM PARTY RYE
This recipe was given to me by my sister-in-law Marie years ago. She used to make it for all of our family gatherings, and we all just love it. Steps:
- 1. Mix mayonnaise, parmesan and onion
- 2. Spread the party rye with the mixture--not too much on each slice because you don't want the bread to be soggy after it broils
- 3. sprinkle with paprika--as much or as little as you want
- 4. Put a thin slice of pepperoni on each slice of bread
- 5. put under the broiler for 2 to 3 minutes or until the mixture bubbles
- 6. (please note that I put 5 minutes of cook time in the cooking category because I had to put something--but it only takes 2-3 minutes)

Steps:
- Cut a small X into bottom of each tomato. Bring a pot of water to a boil, add tomatoes and cook until skin begins to wrinkle and peel at the edges of the cuts, about 30 seconds. Drain, rinse with cool water and peel off skin with your fingers. Roughly chop tomatoes and set aside.
- In a 12-inch skillet over medium high heat, heat oil until hot but not smoking. Add onions, peppers and salt and sauté, stirring frequently, until onions are translucent and peppers have started to lighten in spots, about 10 minutes. Add garlic and continue to sauté for 1 more minute.
- Stir in tomatoes, sugar and piment d'Espelette, reduce heat to medium, cover and cook until tomatoes are starting to fall apart and peppers are soft but still hold their shape, about 15 minutes. Remove cover and continue to cook, stirring frequently, until mixture thickens like a slightly runny relish, about 5 minutes more. Adjust salt.

- In a large skillet over medium heat, cook beef and sausage until no longer pink; drain. Add the cheese, Worcestershire sauce, ketchup and seasonings; stir until cheese is melted. Spread 1 to 2 tablespoons hot mixture on each bread slice. Place on ungreased baking sheets., Freeze pizzas or bake at 350° for 10-15 minutes or until heated through. , To use frozen pizzas: Bake at 350° for 15-20 minutes or until heated through.
