3 tablespoons olive oil
3 tablespoons butter
1/4 to 1/2 teaspoon crushed red pepper flakes
3 large carrots, peeled and chopped
1 large onion, chopped
2 garlic cloves, minced
2 teaspoons dried basil
3 cans (28 ounces each) whole peeled tomatoes, undrained
1 container (32 ounces) chicken stock
2 tablespoons tomato paste
3 teaspoons sugar
1 teaspoon salt
1/2 teaspoon pepper
1 cup heavy whipping cream, optional
Fresh basil leaves, thinly sliced, optional

Steps:

  • In a 6-quart stockpot or Dutch oven, heat oil, butter and pepper flakes over medium heat until butter is melted. Add carrots and onion; cook, uncovered, over medium heat, stirring frequently, until vegetables are softened, 8-10 minutes. Add garlic and dried basil; cook and stir 1 minute longer. Stir in tomatoes, chicken stock, tomato paste, sugar, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer, uncovered, to let flavors blend, 20-25 minutes. , Remove pan from heat. Using a blender, puree soup in batches until smooth. If desired, slowly stir in heavy cream, stirring continuously to incorporate; return to stove to heat through. Top servings with fresh basil if desired.

Adapted from a recipe found in the Penzey's spice catalog. The size of the tomatoes should be about the size of a medium apple. If using very small tomatoes, such as plum tomatoes, you will need to double the amount of tomatoes. It might also be a good idea to have some extra tomato juice or vegetable broth on hand just in case your tomatoes do not produce enough liquid to make the full 8 cups needed.

13 small tomatoes, chopped
2 teaspoons granulated sugar
3/4 teaspoon baking soda
3 tablespoons unsalted butter
1 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon dried thyme
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups whole milk (or half and half or evaporated whole milk)
1 teaspoon dried basil
crushed seasoned croutons, to garnish (optional)

Steps:

  • Cook tomatoes and sugar in a saucepan over medium heat until soft and the skins start to fall off, approximately 10 minutes.
  • Add baking soda (it will get foamy) and cook another minute or two.
  • Strain the tomatoes through a sieve set over a large bowl; discard the seeds& skins but reserve the juices.
  • You should have 8 cups juice, approximately- set aside. (If you do not have enough juice, add canned tomato juice or vegetable broth to your juices to make up the difference, adjusting the salt later to account for these additions.).
  • Over medium heat, melt the butter in a large stock pot, then add onions and saute until softened, about 5 minutes.
  • Add flour, stirring, then add all spices except for the basil, stirring until well blended.
  • Cook the flour mixture for about 3 minutes, stirring constantly- don't let it burn.
  • Slowly add the milk, whisking to mix with flour mixture until smooth.
  • Continue cooking until it starts to thicken.
  • Add 1 cup of the milk mixture to the tomato juices to temper them, stirring well.
  • Pour the tomato mixture into the stock pot and stir to mix.
  • Continue heating until warmed through, but do not let boil.
  • Taste for seasonings and adjust as needed.
  • Add basil and serve with a sprinkling of crushed croutons on top if desired.

This is from the Penzey's catalog. Great for a hot day because it's made all in the slow cooker, or for a cold winter day. I'm sure you could add other veggies, like shredded carrot or cabbage or sweet potatoes, for added nutrition. I used leftover shredded chicken. The catalog says to serve with cornbread and garnishes (probably cheese and sour cream etc). Even my kids liked it!

1 (6 -8 ounce) boneless skinless chicken breasts
2 (15 ounce) cans diced tomatoes
1 (4 ounce) can diced mild green chilies
1 (28 ounce) can enchilada sauce
2 cups frozen corn or 2 cups roasted corn
2 (15 ounce) cans black beans, drained and rinsed
1 medium onion, chopped
2 garlic cloves, chopped or 1/2 teaspoon granulated garlic
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1 1/2 teaspoons oregano
3 corn tortillas, torn into 1-inch pieces
2 tablespoons chopped fresh cilantro (use 1/2 as much if using dried)
1 -2 tablespoon lime juice (juice of 1-2 limes)

Steps:

  • Place everything except the cilantro and lime juice into a slow cooker and cook on high for 4-6 hours or low for 8-10.
  • Remove the chicken and shred with two forks; return to the pot with the cilantro and lime juice.
  • Taste and add extra seasonings if desired. Serve with optional garnished, such as diced avocado, lime wedges, sour cream, shredded cheese and toasted tortilla strips.

A great soup for any leftover boiled potatoes. Found in Penzeys Christmas 2006 catalog. Hearty soup!

Number Of Ingredients 12

5 lbs russet baking potatoes
1/2 lb bacon
3 cups 2% low-fat milk
1/2 cup butter
3 cups onions, minced
7 1/2 cups chicken stock (or 1 TB of chicken soup base dissolved in 7 1/2 cups of)
water
3/4 cup all-purpose flour
1/2 teaspoon thyme
1 tablespoon parsley
1/4 teaspoon cayenne pepper
1 teaspoon salt (optional)

Steps:

  • Preheat oven to 350°F.
  • Wash and dry potatoes, poke with a fork, and bake for 1 hour and 15 minutes or until soft.
  • Cool to room temperature by refrigerating for 1 hour.
  • Remove the skins and coarsely chop the potatoes; set aside.
  • Finely chop bacon and fry until crispy.
  • Drain the bacon on paper towels and set aside.
  • Let the milk come to room temperature.
  • Place 1 1/2 cups of chopped potatoes into blender.
  • Blend or mash with a little water to make potatoes thin, yet smooth and creamy.
  • In a large, heavy pot, melt the butter over medium-low heat.
  • Add the onions and cook until they are soft and translucent, about 10 minutes.
  • In a separate pan, heat the chicken broth to boiling.
  • Using a wooden spoon, gradually mix the flour into the onion mixture, slowly add the rest of the chicken broth to the onion mixture.
  • Next, add the potato puree. Mix well.
  • Lower the heat to simmer and cook for 30 minutes. Stir often.
  • If soup is too thick, thin with more milk.
  • Add 3/4 of the crisp bacon and mix well.
  • Serve garnished with the remaining bacon, cheddar cheese, and chives.

1/2 lb dried linguine
2 tablespoons olive oil
1 medium onion, minced
2 medium tomatoes, diced
1 garlic clove, minced
1 teaspoon dried oregano
2 cups fresh spinach, washed, patted dry, and chopped to make about 1 cup
4 ounces feta cheese, crumbled
salt
black pepper

Steps:

  • Bring 2 quarts of water to boil in a large pot.
  • Meanwhile, heat the olive oil over medium heat in a large skillet or shallow saucepan. Add onions and cook for 5 minutes to soften, stirring to prevent browning. Add the garlic, diced tomatoes, and oregano. Cook for about 10 minutes and add the chopped spinach. Cook for another 5-10 minutes until the spinach has softened and the flavors developed. Add salt & pepper to taste.
  • When the sauce is nearly done (about the time you add the spinach), cook the linguine according to the package directions.
  • Drain the pasta and place servings on individual plates. Spoon sauce on top. Sprinkle with feta and serve immediately.

PENZEY'S TOMATO BASIL GREEN BEANS



Penzey's Tomato Basil Green Beans image

This recipe is from a Penzey's catalog from several years ago. It is also very good with dill instead of basil, and I plan to try with oregano next time. Be sure to use plum (roma) tomatoes which are meatier than other types. Also, the cooking times are for whole green beans; I buy a big bag of frozen whole tender young beans at a warehouse club or Trader Joes. I have reduced the amount of oil to 1/4 cup from 1/2 as originally written, based on a review and my own preference also.

1 lb fresh green beans (or frozen whole haricots vert)
4 -6 plum tomatoes (4 if large, 6 if small) or 4 -6 roma tomatoes (4 if large, 6 if small)
1/4 cup olive oil
2 fresh garlic cloves, minced
1 1/2 teaspoons dried dill or 1 1/2 teaspoons dried oregano
1/4 teaspoon ground black pepper
1/4 teaspoon salt

Steps:

  • Fill a large pot approx 2/3 with water and bring to a boil. Add the tomatoes and cook for 30 seconds. Remove with tongs and put in a bowl with cold water. After a few minutes, remove the tomatoes, and peel, core, and finely chop them. (Don't drain the boiling water - you'll want this for the beans).
  • Place the oil in a large skillet over low heat. Add the chopped tomato, garlic, and basil. Simmer for 15 minutes.
  • While tomatoes are simmering, wash and trim the green beans. Cook in boiling water for 7-10 minutes depending on how small & tender your beans are.
  • Drain & briefly rinse the beans. Place in a serving bowl. Pour the tomatoes over the beans and toss to coat. Add salt and black pepper to taste. For best flavor, cover and let stand 5-10 minutes before serving.
