An all time favorite of mine, I got this recipe from Allrecipes posted by Suki. It's fast and easy to make and tastes fantastic. Crusty rolls for mopping up the juices is all that's needed to finish the meal. I use lots more of the red pepper flakes to add zing and probably more feta as well since it's my favorite cheese. It's a real filling dinner for those nights when we want to eat vegetarian and DH requests this one frequently.

1 (8 ounce) package penne pasta
2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, minced
3 cups chopped tomatoes
1 cup sliced fresh mushrooms
2 cups spinach leaves, packed
salt and pepper
1 pinch red pepper flakes
8 ounces feta cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted.
  • Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.

1 lb penne (or your preferred pasta variety)
1/2 cup olive oil
1/4 teaspoon crushed red pepper flakes (optional)
2 pints grape tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
6 cloves garlic, thinly sliced
1 cup white wine or chicken broth
2 cups fresh spinach
Parmesan cheese, for serving (optional)

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat.
  • Add oil to a large, wide pot and bring to a simmer over medium heat. Add in the crushed red pepper flakes, tomatoes, salt, and pepper, and cook until the tomatoes begin to burst and give off their juices, about 9 to 10 minutes. Use a wooden spoon to gently press the tomatoes if they're not bursting on their own.
  • Add in the garlic and cook for 1 minute, or until fragrant. Stir in the wine and bring to a boil, then reduce the heat to a simmer and cook for 5 minutes. Finally, stir in the spinach and cook until slightly wilted.
  • In the meantime, add the penne into the boiling water and cook for 9 to 10 minutes, or until al dente.
  • Drain the pasta, reserving a 1/2 cup of the pasta water.
  • Toss the pasta immediately into the pot with the sauce and stir well to combine. Add in some of the reserved cooking water, if needed. Taste and add additional salt and pepper, if needed.
  • Remove from heat and divide among serving bowls. Top with cheese and serve at once!

1 (28-ounce) can diced tomatoes
2 tablespoons extra-virgin olive oil, plus more for drizzling
6 garlic cloves, thinly sliced
1/2 cup dry white wine
2 teaspoons chopped oregano

1 1/2 tsp. kosher salt, plus more
8 ounces medium shell pasta
1 large bunch of curly kale, stems removed, torn into bite-sized pieces (about 10 cups)
1 1/2 pounds large shrimp, peeled, deveined
2 1/2 ounces crumbled feta (about 1/2 cup)

Steps:

  • Pour tomatoes into a fine-mesh sieve set over a medium bowl. Shake to release as much juice as possible, then let tomatoes drain in sieve, collecting juices in bowl, until ready to use.
  • Heat 2 Tbsp. oil in a large Dutch oven or other large heavy pot over high. Add drained tomatoes and garlic and cook, stirring occasionally, until they begin to caramelize, about 12 minutes. Add wine and cook, scraping up browned bits, until reduced by half, about 1 minute. Add collected tomato juices, oregano, red pepper, and 1 1/2 tsp. salt and bring to a simmer.   • Boil the pasta according to pack instructions. Meanwhile, boil a kettle of water, then slowly pour over the spinach in a colander until it wilts. Shake off the excess water, then put the spinach into a food processor.
  • Add the garlic, oil, half of the cheese and most of the pine nuts to the processor with the spinach, then pulse to a pesto-like sauce. Season with the nutmeg and salt and pepper. 1 5oz container Feta cheese

  • Cook your pasta according to the package instructions.

  • Bring 2 quarts of water to boil in a large pot.

1 1/2 Lbs Chicken breasts (3 chicken breasts, each cut into 3s)
1/4 Cup Flour
1 Tbs Extra Virgin Olive Oil
1 tsp salt
1/2 tsp pepper
2 Diced Tomatoes (14.5 oz cans, each (with basil garlic and oregano))
1 Cup Feta crumbles (or an 8oz container)
2 Cups Spinach
1 Lb Pasta of choice (I use fettuccine or spaghetti)

Steps:

  • Start by cutting the chicken into strips and setting aside.
  • Cook pasta according to instructions.
  • Put flour into a shallow bowl or plate.
  • Put oil in a large frying pan.
  • Piece by piece coat the chicken strips and put them into the pan and sprinkle with salt and pepper. Cook chicken on high heat, about 5 minutes each side, then flip until both sides are browned.
  • Now empty cans of diced tomatoes into the pan with the chicken and about 1/2 of the feta crumbles. Stir and allow the tomatoes and feta to combine. After about 4-5 minutes the tomato sauce will start to come to a boil. Reduce heat to low, add in the spinach and fold it under the tomato sauce and chicken, it will 'wilt' as it cooks and will reduce greatly in size. When all the spinach has cooked down and the pasta is done cooking you're ready to serve.
  • To serve portion out pasta in a bowl and then spoon 2-3 pieces of chicken over the pasta and a few spoonfuls of sauce with the tomatoes and spinach over the pasta. Sprinkle a little of the remaining feta over the bowl and enjoy!

2 teaspoons olive oil
2 medium cloves garlic
2 tablespoons pine nuts
1 1/4 pounds ripe plum tomatoes

4 cups fresh spinach, tightly packed
8 ounces penne
3 scallions
2 ounces feta cheese (4 tablespoons)
1 cup plain nonfat yogurt

Steps:

  • Bring water to boil for penne.
  • Chop the whole onion, and reserve 2 tablespoons for the salad.

  • Wash, trim and slice the scallions, and add to the pot.
  • In food processor blend the feta and yogurt.
  • Remove the sauce from the heat, and stir in the feta mixture. Season with salt and pepper.
  • Drain pasta, and serve with sauce.

1 pound whole wheat fettuccini pasta (or substitute another long, straight pasta such as spaghetti)

Steps:

  • In a large pot or Dutch oven with a lid, heat the olive oil over high for 1 minute, then add the chicken breast halves. Sprinkle with 1/2 teaspoon salt and the black pepper.
