Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup of the cooking water, then drain the pasta. Drizzle lightly with olive oil, toss and set aside.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the shallot and cook, stirring, until soft, about 2 minutes. Add the tomatoes, vodka, the reserved cooking water, 1/2 teaspoon salt and the red pepper flakes. Bring to a rapid simmer and cook, stirring occasionally, until slightly thickened, 12 to 15 minutes. Stir in the cream and simmer 1 more minute.
- Add the cooked pasta, the remaining 1 tablespoon olive oil, the grated cheese and parsley to the sauce. Cook, tossing, 2 to 3 minutes. Season with salt. Divide among bowls and top with more cheese.
PASTA WITH VODKA SAUCE AND SAUSAGE
Steps:
- Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
- Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Meanwhile, mix the beef, 1/4 cup parmesan, the breadcrumbs, egg, 1/2 cup basil, the minced garlic and 1/2 teaspoon salt in a large bowl with your hands until just combined. Form into 3/4-inch meatballs (about 20). Grate the tomatoes into a medium bowl; discard the skins.
- Heat a large nonstick skillet over medium heat. Add the olive oil, then the meatballs. Cook, turning, until browned on all sides, 2 to 3 minutes. Add the sliced garlic and cook until just golden, about 1 minute. Gradually add the vodka, then the grated tomatoes and cream. Bring to a simmer and cook until the sauce thickens and the meatballs are cooked through, 8 to 10 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper.
- Add the pasta and the remaining 1/4 cup basil to the skillet; toss, adding the reserved cooking water as needed to loosen. Remove from the heat and add the remaining 1/2 cup parmesan; toss.

- Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta. Empty the tomatoes into a bowl and crush with your hands.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from the heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.
- Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.
PENNE WITH VODKA SAUCE

- Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
- Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
- In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
- Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.
PENNE AND SAUSAGE WITH VODKA SAUCE
Steps:
- Bring large pot of water to boil. Add sausage and boil for 10 minutes. Remove links and set aside. In large skillet, melt butter and add onion and pepper. Cook over medium-low heat until onion is translucent. Stir in tomatoes with liquid and simmer for 1 hour. Add sausage and vodka and continue to simmer for 1 hour. Turn heat to high, add cream and tomato paste and stir constantly for ten minutes. Reduce to simmer and continue to cook for 30 minutes. Preheat oven to 450 degrees. Bring 4 quarts of water to boil in large pot. Cook pasta until molto al dente. Toss pasta and sauce with 2/3 cheese in casserole dish. Bake for 10 minutes. Serve with 1/3 cup cheese on top.
SPICY SAUSAGE VODKA CREAM SAUCE
If you love chunky home-made sauces and sausage then THIS is for you!! I love making this one and placing it in the Crock-pot for the last simmer time, an hour makes it really thick.

- In large skillet, heat oil over moderate heat. Remove casting from sausage and add to skillet. Cook breaking up the meat, until brown. Drain if necessary.

This recipe is an original creation specifically for the cooking contest. I used the mild Italian sausages but you could increase the heat by using the spicy type & adding more cumin. I served it with Caesar salad & Garlic bread. My DH just loved the sauce & wants me to make this dish again!!

Steps:
- Prick sausage casings several times& cook in lightly salted, boiling water for 3 minutes.
- Drain, cool& slice into rounds about 1/2 inch thick.
- Melt butter& oil in a very large skillet.
- Add sausages, onion & garlic; cook on medium heat until sausages are lightly browned.
- Add peppers & zucchini & cook for 2 minutes.
- Bring a large pot of lightly salted water to a boil.
- Add penne & cook, according to package directions, until al dente (approx 9 minutes).
- Drain well.
- In the meantime, add tomato sauce, salt, pepper & cumin to the sausage mixture.

- In large sauce pan or dutch oven, crumble sausage and cook over medium heat until no pink remains. Break into fine mince with a wooden spoon as it cooks. Add onions and bell pepper, season with salt and pepper, and continue to cook over medium until translucent, about 5 minutes. Be caareful not to let them brown. Stir in mushrooms and cook until they give up their liquid, about another 2 minutes.
- Stir in the garlic and basil, then add the undrained tomatoes and vodka. Simmer over low heat, uncovered, for 40 minutes, stirring from time to time.
- Cook penne pasta according to package directions, drain well, and set aside.
- Slowly stir the Guyere and Parmesan cheese into the tomato sauce. When the cheese has all melted, turn off the heat and slowly stir in the heavy cream.
- Preheat the oven to 350. Add the penne to the tomato sauce and stir well to mix evenly. Empty the entire mixture into a 13" baking dish. Top with the mozarella cheese and bake uncovered in a 350 degree oven for 30 minutes, or until cheese has melted and turned a light golden brown.

PENNE WITH VODKA SAUCE & TURKEY SAUSAGE
Gotta love the melty, cheesy, meaty goodness of a pasta bake! I have recently started using vodka sauce and enjoy it's great flavor. Turkey breakfast sausage is a nice way to lighten it up a little. It's a good way to use up zucchini and sneak it in on the kids :)

- Cook the pasta till al dente', drain. Preheat oven to 350. Break up the turkey sausage in a skillet, and cook with the onion and garlic till browned, drain.
- Put the meat mixture back into the pan, add all the other veggies and half of the sauce. Cook about 5 min over med heat. Add the pasta to the mix.
- Spray a baking pan with Pam. Place half of the meat- noodle sauce mixture into pan. Sprinkle with half of the mozzarella, and lay the feta slices on top.
- Place the rest of meat-sauce mixture on next. Add the other half of the vodka sauce. Top with the remaining cheese, and cover with foil.
- Bake for 30 min, or until bubbly. Remove cover and let cook for about 10 min more until cheese is nicely golden. Let stand 10 min. before serving.
