1 pound Swiss chard, stems cut from the leaves and the stems and leaves chopped separately
1/8 teaspoon dried hot red pepper flakes, or to taste
3 large garlic cloves sliced thin
2 tablespoons olive oil
1/2 cup water
1 cup drained canned tomatoes, chopped
1/2 pound penne or other tubular pasta
1/4 cup freshly grated Parmesan plus additional as an accompaniment

Steps:

  • Rinse and drain separately the Swiss chard stems and leaves. In a large heavy skillet cook the red pepper flakes and the garlic in the oil over moderate heat, stirring, until the garlic is pale golden, add the stems and 1/4 cup of the water, and cook the mixture, covered, for 5 minutes, or until the stems are just tender. Add the leaves with the remaining 1/4 cup water and salt and pepper to taste and cook the mixture, covered, for 5 minutes. Stir in the tomatoes and cook the mixture, covered, for 3 minutes, or until the leaves are tender.
  • While the chard is cooking, in a kettle of salted boiling water boil the penne until it is al dente and drain it in a colander. In a large bowl toss the penne with the chard mixture and 1/4 cup of the Parmesan and serve it with the additional Parmesan.

8 cups coarsely chopped swiss chard
1 (19 ounce) can cannellini beans or 1 (19 ounce) can other white beans, drained
2 tablespoons olive oil
1/2 cup shredded asiago cheese
1 clove garlic, smashed
salt & freshly ground black pepper

Steps:

  • In a large pot of boiling salted water, cook penne 8 to 10 minutes or until tender but firm.
  • Add 8 cups coarsely chopped Swiss chard, cook 1 minute; drain well.
  • In a large serving bowl, combine remaining ingredients.
  • Add pasta mixture; toss well.
  • Season to taste.

4 tablespoons olive oil
1 cup diced onion
1 head cauliflower, cored and separated into very small flowerets
Salt to taste
1 pound penne
4 large cloves garlic, sliced thin
1 pound Swiss chard, rinsed and roughly chopped
1/2 teaspoon crushed red pepper flakes, or to taste
4 ounces imported pecorino romano, freshly grated

Steps:

  • Bring 4 quarts of water to a boil.
  • Heat the oil in a large skillet, add the onion and cook over medium heat until golden and beginning to brown, about 15 minutes.
  • Once water is boiling, add cauliflower and some salt, and cook for 3 minutes. Remove cauliflower with a slotted spoon and set aside. Set aside 1/2 cup of the water.
  • Add the penne to the boiling water, stir it and let it cook for about 8 minutes, until al dente.
  • While the penne is cooking, add the garlic to the skillet and cook for 2 to 3 minutes, until lightly browned; then, add the Swiss chard and cook, stirring, until it wilts, another 3 minutes or so. Stir in the cauliflower and reserved cooking liquid and the red pepper. Season with salt.
  • When the penne is done, drain it, add it to the skillet and toss with the vegetables over low heat. Serve at once, dusted with cheese.

1/2 pound Swiss chard
3 tablespoons extra-virgin olive oil
1 medium onion, sliced
2 cloves garlic, sliced
2 ounces of prosciutto, slivered
6 ripe plum tomatoes, sliced
Salt and freshly ground black pepper
1 pound penne
Freshly grated Parmesan cheese

Steps:

  • Rinse the Swiss chard and chop it fine.
  • Heat the oil in a large skillet. Add the onion and saute until tender. Stir in the garlic and prosciutto. Saute briefly, then add the tomatoes. Cook until they soften. Add the Swiss chard and continue cooking over medium heat, stirring, until the Swiss chard is nearly tender. Season to taste with salt and pepper.
  • While the swiss chard is cooking, bring a large pot of salted water to a boil for the penne. Cook the penne until al dente, about seven minutes. Drain.
  • Transfer the penne to a warm bowl, add the Swiss-chard mixture and toss to combine the ingredients. Serve with grated Parmesan cheese.

6 ounces penne or other tubular pasta
1 1/2 pounds Swiss chard
1/4 teaspoon dried hot red pepper flakes
1 small onion
2 teaspoons unsalted butter
1/4 cup heavy cream
1/4 teaspoon freshly grated nutmeg
2 tablespoons freshly grated Parmesan

Steps:

  • Fill a 4-quart kettle three-fourths full with salted water and bring to a boil for pasta.
  • Chop Swiss chard into 1/4-inch-wide pieces and finely chop separately red pepper flakes and onion. In a 12-inch heavy skillet cook onion in butter over moderate heat, stirring occasionally, until golden brown, about 5 minutes. Add Swiss chard and cook, stirring, 15 minutes, or until tender.
  • While Swiss chard mixture is cooking, cook pasta in boiling water until al dente and drain in a colander. Add pasta to Swiss chard mixture with red pepper flakes, cream, and nutmeg and cook, stirring, 1 minute. Remove skillet from heat and stir in Parmesan and salt and pepper to taste.

GARLICKY SWISS CHARD

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Steps:

  • Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
  • Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

This looks delicious and has a 5 star rating on www.taste.com.au This recipe was originally printed in Fresh Living magazine. It's Winter in Australia and I've been looking for a simple pie recipe without too many ingredients. I think this one fits the bill nicely. You could substitute Spinach for Silverbeet too.

2 tablespoons olive oil
2 onions, finely sliced
3 garlic cloves, chopped
500 g mushrooms, thickly sliced
1 bunch silver beet, roughly chopped
1 pinch nutmeg
salt & freshly ground black pepper
4 eggs
300 ml lite thickened cream
1/2 cup grated low-fat swiss cheese

Steps:

  • Preheat oven to 180°C Heat the olive oil in a large saucepan over a moderate heat. Saute the onion and garlic for 5 mins or until soft.
  • Add the mushrooms and saute for another 2 minutes
  • Add the silverbeet, nutmeg and season. Cover the saucepan and cook until the silverbeet wilts.
  • Remove from the heat, stir the silverbeet through the mushrooms and drain any excess moisture.
  • Transfer the silverbeet mixture into a large 6 cup capacity baking dish.
  • Whisk the eggs and cream together, season and stir through the grated cheese, then pour the egg mixture over the silverbeet mixture, swirl the egg mixture through the silverbeet using a fork.
  • Bake the pie for 40 mins or until golden and set. Allow to cool slightly before slicing.

This is a simple comfort meal that is too tasty for me to think about how healthy this is. My little toddler loves this dish too, though he picks around the fennel.

1 lb salmon, cut into 4 pieces
1 fennel, sliced thinly
1 bunch swiss chard, chopped 1/2 inch
1 lb penne, preferably wheat
4 tablespoons olive oil
1 (6 ounce) can tomato paste
4 garlic cloves, crushed and chopped
1 lemon
1 teaspoon cajun seasoning
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Bring large pot of water to boil, add salt to water just before pasta and boil pasta until a 2 minutes short of done according to directions.
  • Heat a pan until very hot, add about 2 tbsp olive oil season both sides of salmon with Cajun seasoning and then cook the salmon chunks on first side until browned and cooked half through. It's easy to tell when half-done because the flesh becomes pale as it cooks through. When flesh is lightened half-through, flip and cook another few minutes until just browned on the other side. A really hot pan is needed for this. I prefer my salmon cooked medium and still a little pink in the middle. Remove salmon and if you want cooked through more, place in oven at 350F until cooked through.
  • In a separate pan heat oil in pan and cook fennel and swiss chard.
  • In fish pan add garlic, tomato paste and a little water to thin out for sauce. Add vegetables back in and cook through. Add pasta to finish cooking, taste and season with more salt and pepper if necessary.
  • Serve pasta with salmon on top and a bit of lemon squeezed over at the last minute and some fennel fronds as a garnish.
