This is what mom would call comfort food.SoUrce unknown

Categories     Beef

Number Of Ingredients 12

one medium carrot
two medium celery stalks
one half medium onion
4 tablespoons extra virgin olive oil
13 ounces ground beef
3 ounces ground pork
1 pound peeled tomatoes, pureed or one can crushed tomatoes, 28 ounces
1 teaspoon tomato concentrate optional
salt and pepper to taste
1 pound penne lisce (smooth penne)
1/2 cup beef stock, if needed
parmigianino reggiano, grated, if desired

Steps:

  • 1. chop carrot, celery and onion finely. In a large pot, heat olive oil and add chopped vegetables and sauté until the onion is pale in color or blonded. Add to ground meat and sauté until it starts to brown. Add the peeled tomatoes and the tomato concentrate, if desired. Add salt and pepper to taste and reduce heat to low. Cover and cook sauce for about three hours over low heat. Stir occasionally with a wooden spoon to keep it from sticking to the bottom of the pot.
  • 2. When ready to eat, cook the penne in boiling salted water for about three quarters of the cook time, very al dente. Drain and toss in a pan with a Ragu adding a bit of beef stock if needed to dilute the sauce, and finish cooking the pasta for a minute or two with the sauce. Serve hot with parmigiano reggiano grated on top if desired. Makes four servings.

ONE SKILLET CHEESY PENNE

One Skillet Cheesy Penne image

One Skillet Cheesy Penne - the best homemade ragu sauce simmered right with the pasta then loaded with cheese! My family begs me to make this weekly!

Provided by Jen

Time 30m

Number Of Ingredients 19

1 tablespoon olive oil
1 pound lean ground beef ((may use 1/2 sausage))
salt and pepper
1/2 teaspoon red pepper flakes
1 yellow onion, diced
2 medium carrots, peeled and thinly sliced
1 red bell pepper, chopped
6-8 garlic cloves, minced
1 28 oz. can crushed tomatoes in puree
1 15 oz. can fire roasted tomatoes with seasonings, drained
1 tablespoon tomato paste
1 1/2 tsp EACH chicken bouillon, sugar, dried basil
1/2 tsp EACH dried oregano, dried parsley
3 cups water
12 ounces uncooked penne ((about 3 1/2 cups))
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup freshly grated sharp cheddar cheese
1 cup freshly grated mozzarella cheese

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick, oven proof skillet or Dutch oven over medium high heat. Add meat and season with 1/2 teaspoon salt, 1/2 teaspoon pepper and 1/2 teaspoon red pepper flakes. Add onions and carrots and cook until meat is browned.
  • Add bell pepper and garlic and cook for 1 minute. Stir in crushed tomatoes, fire roasted tomatoes, tomato paste, chicken bouillon, sugar, and all seasonings and bring to a simmer. Simmer gently uncovered for 10 minutes, stirring occasionally.
  • After 10 minutes, stir in the water and pasta. Cover, increase heat to medium-high and cook at a vigorous simmer (you may need to decrease heat), stirring occasionally and replacing lid, just until the pasta is al dente, 12-16 minutes. Taste pasta often as reaches the end of cooking to ensure you don't overcook your pasta.
  • Stir in the cream, Parmesan, and cheddar until well combined. Top the pasta evenly with mozzarella. Transfer the skillet to the oven (on the middle rack) and broil until the cheese is melted and golden, 2-3 minutes. Let sit at least 5 minutes before serving.
  • This makes wonderful leftovers - I think the flavors are even better the next day!

MEATY PENNE

Categories     main-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 14

1 pound fresh chorizo sausage, casing removed
1/4 cup extra-virgin olive oil
2 cloves garlic, finely chopped
1 medium carrot, finely chopped (about 2/3 cup)
1 large celery stalk, finely chopped (about 2/3 cup)
1 small onion, finely chopped (about 1 1/4 cups)
One 3-ounce piece Genoa salami, diced
One 28-ounce can crushed tomatoes
Kosher salt
1/2 teaspoon freshly ground black pepper
2 1/2 cups baby arugula
1/2 cup coarsely chopped fresh basil
1 pound penne rigate pasta
1 cup finely grated Parmesan

Steps:

  • In a large nonstick skillet, cook the chorizo over medium-high heat until cooked through, breaking up the chorizo into 1/3- to 1/2-inch pieces with a wooden spoon, 12 to 14 minutes. Drain on paper towels and cool.
  • Heat the oil in the same skillet over medium heat. Add the garlic, carrots, celery and onions. Cook until the vegetables are tender but not at all brown, stirring often, 8 to 10 minutes. Add the salami and tomatoes. Bring the sauce to a simmer. Cover, reduce the heat to low and cook gently until the flavors blend, stirring occasionally, 15 to 20 minutes. Season with the 1/4 teaspoon salt and the pepper. Remove the skillet from the heat and add the arugula and basil. Stir until wilted.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. Place the pasta into a serving dish.
  • Add the chorizo sauce to the pasta. Toss to combine, adding the reserved pasta water, if needed, to loosen the sauce.
  • Top with the Parmesan and serve.

PENNE WITH PORK RAGOUT

Penne with Pork Ragout image

Provided by Giada De Laurentiis

Categories     main-dish

Time 3h

Yield 8 servings

Number Of Ingredients 18

One 3-pound pork shoulder roast, cut into 3-inch chunks
1 1/2 tablespoons kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons vegetable oil
8 sprigs thyme
2 sprigs rosemary (about 6 inches each)
1 bay leaf (fresh or dried)
2 medium Spanish onions, sliced thin (about 4 cups)
5 cloves garlic, chopped
1 cup white wine
1/2 cup chicken broth
One 28-ounce can crushed tomatoes
3-inch piece Parmesan rind
Pinch red chile flakes
1/4 cup extra-virgin olive oil, plus for drizzling
1 pound penne pasta
6 tablespoons freshly grated Parmesan, plus more as desired
Arugula, for garnish, optional

Steps:

  • Dry the pork well and sprinkle it on all sides with 1 tablespoon of the kosher salt and the pepper. Heat 2 tablespoons of the vegetable oil in a Dutch oven over high heat. Working in batches to avoid crowding the pan, brown the pork on all sides, about 4 minutes per side. Remove the pork to a plate and set aside. While the pork is browning, tie the thyme, rosemary and bay leaf into a bundle using butcher's twine.
  • Once all of the pork has been browned, reduce the heat to medium. Add the remaining 1 tablespoon vegetable oil no oil remains in the pot. Add the onions and the remaining 1/2 tablespoon kosher salt. Cook for about 8 minutes, stirring and scraping up any browned bits. Add the garlic and cook for another 2 or 3 minutes. Deglaze with the white wine and cook until reduced to nearly dry, 6 to 10 minutes. Add the chicken broth, crushed tomatoes, Parmesan rind, chile flakes and the herb bundle and bring to a simmer. Return the pork to the pot, tucking it in under the sauce. Reduce the heat to low and simmer, covered, until the pork is fork tender, about 1 hour 45 minutes.
  • Remove the pork and shred into bite-size pieces using two forks. Remove the herb bundle from the sauce and add the pork back to the pot. Stir in the olive oil and half of the grated Parmesan. Keep warm over low heat.
  • Bring a large pot of salted water to a boil and cook the penne for about 1 or 2 minutes less than the package directions. Drain and add the pasta to the sauce, tossing to coat. Finish cooking the pasta in the sauce, about 2 minutes, adding a ladle of pasta water as needed. Serve topped with the remaining grated Parmesan, or more as desired, and a drizzle of olive oil. Garnish with a few leaves of baby arugula, if using.

PENNE WITH TURKEY RAGU

Penne With Turkey Ragu image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 11

Kosher salt
1 tablespoon extra-virgin olive oil
2 leeks (white and light green parts only), finely chopped
2 cloves garlic, minced
6 ounces ground turkey
1 28-ounce can San Marzano tomatoes, crushed by hand
Freshly ground pepper
1/4 cup fresh basil, chopped, plus more for topping
3 tablespoons freshly grated parmesan cheese, plus the rind (optional)
12 ounces penne
2 tablespoons half-and-half

Steps:

  • Bring a pot of salted water to a boil. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the leeks, garlic and turkey and cook, stirring, until the turkey browns slightly, about 5 minutes. Add the tomatoes, 2 cups water and 1/4 teaspoon each salt and pepper. Increase the heat to high, bring the sauce to a boil and cook 5 minutes. Reduce the heat to medium, add half of the basil and the parmesan rind and simmer, stirring occasionally, until thickened, about 10 minutes.
  • Add the pasta to the boiling water and cook as the label directs. Reserve 1/2 cup of the cooking water, then drain the pasta. Stir the half-and-half, the remaining basil and 2 tablespoons cheese into the sauce. Add the pasta and toss to coat, adding some of the reserved pasta water to loosen, if needed. Remove the parmesan rind and season with salt and pepper.
  • Divide the pasta among bowls. Top with the remaining 1 tablespoon cheese and more basil.

ITALIAN TOMATO SAUSAGE RAGU WITH PENNE

Italian Tomato Sausage Ragu With Penne image

I use Chianti wine for this recipe but any good dry red wine will do, this can be made using a mixture of ground beef and pork but Italian sausage meat is so much better --- if possible prepare this a day ahead and refrigerate to allow flavors to blend just rewarm on top of the stove

Provided by Kittencalrecipezazz

Categories     Penne

Time 1h40m

Yield 6 serving(s)

Number Of Ingredients 15

1/4 cup olive oil
12 ounces Italian sausages, casings removed (can use more)
1 -2 tablespoon fresh minced garlic
2 teaspoons red pepper flakes (you can use more if you like spicy)
1 teaspoon dried oregano (optional or adjust to suit heat level)
2 -3 carrots, peeled and cut into about 1/2-inch cubes
1 large onion, chopped
1 celery, finely chopped
3 cups whole canned tomatoes, finely chopped (I use one 28-ounce can of whole tomatoes, drained then chop the tomatoes)
1 cup chicken broth (more if needed)
1/3 cup dry red wine
1/2 cup chopped fresh basil
salt & freshly ground black pepper (to taste)
12 ounces penne pasta
1 1/2 cups grated parmesan cheese (or to taste)

Steps:

  • In a large skillet heat oil over medium heat.
  • Add in the sausage meat, garlic, oregano and pepper flakes; sauté until brown, breaking up the meat with a fork (about 7 minutes).
  • Add in finely chopped carrots, onion and celery; sauté for about 10 minutes.
  • Mix in chopped tomatoes; reduce heat, cover and simmer about 20 minutes, stirring occasionally.
  • Add in 1 cup broth and wine; simmer uncovered until liquid is slightly reduced (about 20 minutes).
  • Add in the fresh basil; cover and simmer until the veggies are very tender, stirring occasionally.
  • Continue to simmer for about 45-50 minutes, adding in more broth by about 1/4 cup if the liquid evaporates to quickly, and cook until the Ragu thickens to desired consistency.
  • Season with salt and pepper to taste.
  • Cook the pasta in a large pot of boiling salted water until just firm-tender; drain but reserve about 1/2 cup cooking water.
  • Return the pasta to the pot; add in the Ragu; mix to combine.
  • Add in about 1/2 - 3/4 cup Parmesan cheese and 2-3 tablespoons olive oil; mix to combine.
  • If the mixture seems too dry then add in some of the reserved cooking water from the pasta.
  • Season with more salt and pepper.
  • Divide on plates and top with more cheese.
