3 tablespoons butter
3 -4 garlic cloves, chopped finely
1 cup thinly sliced prosciutto
1 (28 ounce) can whole tomatoes, drained and chopped
1/2 cup heavy cream
1/4 cup vodka (only a kind you would drink)
salt and pepper
1 pinch crushed red pepper flakes
1 lb penne pasta
3/4 cup freshly grated parmigiano-reggiano cheese

Steps:

  • In a wide pot big enough to hold all the pasta and sauce, melt the butter.
  • add the garlic and cook until golden brown.
  • stir in the proscuitto and cook for a a minute or two.
  • add the tomatoes, crushed pepper, pepper and salt.
  • simmer for 5 minutes.
  • stir in the cream and cook for 2 minutes stirring alot.
  • add the vodka and cook until it no longer smells strongly of vodka (about 3-5 minutes).
  • cook the pasta as directed on box but al dente.
  • add the pasta to the pot with the sauce and mix until it is all coated over the pasta.
  • toss with the cheese and serve immediately.

2 cloves garlic, minced
1 (28 ounce) can whole peeled tomatoes
½ cup chopped fresh basil
salt and pepper to taste
¼ cup vodka
1 pound penne pasta
1 pint heavy cream

Steps:

  • In a large skillet over medium heat, cook garlic in olive oil until tender, 1 to 2 minutes. Stir in tomatoes, breaking up a bit with fork. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Stir cream into sauce and cook 10 minutes more. Toss with hot pasta.

2 garlic cloves, minced

8 oz penne pasta, cooked
1 tablespoon olive oil
½ white onion, diced
1 clove garlic, minced
½ teaspoon red pepper flakes
1 teaspoon dried basil
1 teaspoon salt
½ cup vodka
1 ½ cups tomato sauce
½ cup heavy cream

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet.
  • Add onion and 1 clove of garlic, and cook until onions are translucent.
  • Add tomato sauce and mix to combine with onion and garlic.
  • Add vodka, dried basil, red pepper flakes, and salt. Let this to simmer for 2 minutes to allow most of the alcohol to burn off.
  • Add heavy cream and stir until fully combined. The sauce will turn into a beautiful light orange creamy mixture.
  • Add cooked pasta to vodka sauce and mix until noodles are fully coated in sauce.
  • Cover with a lid and let simmer for 5 minutes or until the sauce has reduced by half.
  • Garnish with basil.

One of the best and easiest recipes I have tried. You can find pancetta at any good Italian deli, try not to substitute as it makes the dish. This is also very good with shrimp added in the last few minutes of simmering. If you like spice, add a dash or 2 of red pepper flakes.

2 tablespoons butter
¼ pound thinly sliced pancetta bacon, chopped
⅓ cup vodka
½ cup heavy whipping cream
1 ½ cups tomato sauce

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Perfectly hearty and tender penne pasta is tossed with a creamy and vibrant, San Marzano tomato based and vodka infused sauce that's seasoned with fresh herbs and parmesan. Talk about delicious dinner recipe!

1 (28 oz) can San Marzano tomatoes, (crushed finely with hands*)
2 Tbsp extra virgin olive oil
1/2 cup minced yellow onion
3 oz. proscuitto (or pancetta, diced (optional))
1 Tbsp minced garlic ((3 cloves))
Salt and freshly ground black pepper
1/2 cup vodka
1/4 tsp red pepper flakes, (more or less to taste)
2/3 cup heavy cream
1/4 cup finely shredded parmesan cheese, (plus more for serving)
1 Tbsp chopped fresh oregano
1/4 cup chopped fresh basil
14 oz. penne pasta, (plus reserved pasta water for thinning sauce as needed)

Steps:

  • Bring a pot of water to a boil to cook pasta. Season water with salt.
  • Heat oil in a large pot over medium heat. Add onion and prosciutto saute 4 - 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.
  • Remove pan from heat and add tomatoes, vodka, season with salt and pepper to taste. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 minutes**, stirring occasionally.
  • Meanwhile cook pasta according to package directions. Reserve 1/2 cup pasta water and drain pasta.
  • Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan, basil and oregano.
  • Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.

4 Tbsp. extra virgin olive oil
1 lb. sweet Italian sausage, cut into 1" slices
1 lb. hot Italian sausage, cut into 1" slices
4 cups thinly sliced onions
1 3/4 tsp. salt
3/4 tsp. freshly ground black pepper
1/4 cup thinly sliced fresh basil leaves
1 Tbsp. minced garlic
1/2 cup vodka
2-16 oz. can whole tomatoes, crushed with their juices
1 tsp. Emeril's Original Essence
1/2 cup heavy cream
1 lb. penne pasta
15 oz. ricotta cheese
1 cup grated Parmigiano-Reggiano
1 1/2 cups grated mozzarella cheese
Crusty bread for serving

Steps:

  • Preheat oven to 350F. In a large skillet heat 2 Tbsp. olive oil over high heat, add the sausages, and cook until browned.
  • Add the onions, 3/4 tsp salt, and the black pepper. Saute until onions are transparent. Stir in the basil and garlic and cook for another 2 min.
  • Add the vodka and tomatoes. Reduce heat to low and simmer for 40 min. Add the Essence and the cream, stir to mix and simmer for 5 min. Remove from heat. Set aside.
  • Bring a large pot of water to boil with the remaining tsp. of salt. Add the pasta and boil until al dente according to manufacturer's instructions. Drain.
  • Combine half of the ricotta and half the Parmesan with the remaining 2 Tbsp. olive oil in a large mixing bowl. Add the pasta and toss to coat.
  • Next, add the sausage mixture and the remaining ricotta and Parmesan, mix well.
  • Spray a 9x13" baking dish with cooking spray and add mixture.
  • Top with mozzarella cheese. Bake for 45 min. until golden brown and heated through. Serve with crusty bread.

Sit back and tuck into a big bowl of pasta alla vodka, a creamy tomato pasta with - as you can guess - vodka, which balances out the intense flavours

2 tbsp olive oil
1 banana shallot or ½ onion, finely chopped
3 garlic cloves, crushed
¼ tsp chilli flakes
100g tomato purée
5 tbsp vodka
100ml double cream
200g penne or rigatoni pasta
30g grated parmesan or vegetarian alternative, plus extra to serve
small handful of basil leaves, to serve

Steps:

  • Heat the oil in a large frying pan or casserole dish. Add the shallot and a large pinch of salt and gently fry over a low heat for 10 mins or until softened and translucent. Add the garlic and chilli flakes and cook for 30 seconds. Stir through the tomato purée, cook for 2 mins, then stir through the vodka and cook for 3 mins. Quickly stir through the cream to combine, then remove from the heat.
  • Cook the pasta in salted water following pack instructions. Drain and reserve 150ml cooking water. Add roughly 50ml of the water to the tomato sauce, then tip in the pasta and cheese, tossing everything together over a low heat until well coated and glossy (loosen with a splash more of the cooking water if it's a little dry). Season to taste, then serve with a sprinkling of the extra parmesan, a good grinding of black pepper and the basil leaves scattered over the top.

1 (35 ounce) can Italian plum tomatoes, with liquid
1 lb penne
1/4 cup extra virgin olive oil
10 cloves garlic, peeled
crushed hot red pepper
1/4 cup vodka
1/2 cup heavy cream
2 tablespoons unsalted butter or 2 tablespoons olive oil, for finishing the sauce,if you like
2 -3 tablespoons chopped fresh Italian parsley
3/4 cup freshly grated parmigiano-reggiano cheese, plus more for passing if you like

Steps:

  • Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat.
  • Pour the tomatoes and their liquid into the work bowl of a food processor.
  • Using quick on/off pulses, process the tomatoes just until they are finely chopped.
  • (Longer processing will aerate the tomatoes, turning them pink.) Stir the penne into the boiling water.
  • Bring the water back to a boil, stirring frequently.
  • Cook the pasta, semi-covered, stirring occasionally, until done, 8 to 10 minutes.
  • Meanwhile, heat the olive oil in a large skillet over medium heat.
  • Whack the garlic cloves with the side of a knife and add them to the hot oil.
  • Cook, shaking the skillet, until the garlic is lightly browned, about 3 minutes.
  • Lower the work bowl with the tomatoes close to the skillet and carefully slide the tomatoes into the pan.
  • Bring to a boil, season lightly with salt and generously with crushed red pepper, and boil 2 minutes.
  • Pour in the vodka, lower the heat so the sauce is at a lively simmer, and simmer until the pasta is ready.
  • Just before the pasta is done, fish the garlic cloves out of the sauce and pour in the cream.
  • Add the 2 tablespoons butter or oil, if using, and swirl the skillet to incorporate into the sauce.
  • If the skillet is large enough to accommodate the sauce and pasta, fish the pasta out of the boiling water with a large wire skimmer and drop it directly into the sauce in the skillet.
  • If not, drain the pasta, return it to the pot, and pour in the sauce.
  • Bring the sauce and pasta to a boil, stirring to coat the pasta with sauce.
  • Check the seasoning, adding salt and red pepper if necessary.
  • Sprinkle the parsley over the pasta and boil until the sauce is reduced enough to cling to the pasta.
  • Remove the pot from the heat, sprinkle 3/4 cup of the cheese over the pasta, and toss to mix.
  • Serve immediately, passing additional cheese if you like.

1/2 stick (4 tablespoons) unsalted butter
1 medium onion, finely chopped
2/3 cup vodka
3/4 cup canned tomato puree
1 cup heavy cream
1/4 pound cooked ham, finely chopped
2 drops hot sauce (recommended: Tabasco), or to taste
1/2 teaspoon salt
1/4 teaspoon finely ground black pepper
1 pound penne
3/4 cup finely grated Parmigiano-Reggiano

Steps:

  • Melt butter in a deep 12-inch heavy skillet over moderately low heat. Add onion and cook, stirring occasionally, until it begins to soften, about 5 minutes. Stir in vodka, bring to a simmer, and simmer for 4 minutes. Add tomato puree and cream and simmer, stirring occasionally, until onion is soft, about 5 minutes. Stir in ham, Tabasco, salt, and pepper. Keep sauce warm over very low heat. Cook pasta in 6- to 8-quart pot of boiling salted water (1 tablespoon salt per every 4 quarts water) until al dente. Reserve 1/2 cup cooking water and drain pasta.   • Cook the pasta according to package directions.
