PRALINE PEACH COBBLER

Praline Peach Cobbler image

This recipe from the Missouri Ozarks represents our area well because so many farms have peach trees. Cobbler is a delicious dessert for picnics and potluck dinners. It can be served cold or warm, and is especially good topped with a generous scoop of vanilla ice cream.

PECAN BREAD

Pecan Bread image

Pecan Praline Bread is a delicious quick bread recipe with a tender crumb and a ribbon of brown sugar pecans for added sweetness and crunch!

Provided by Samantha Skaggs

Categories     Dessert

Time 1h15m

Number Of Ingredients 14

1/4 cup 1/2 stick unsalted butter
1/2 cup packed brown sugar (I prefer light, but dark will work, too)
1/8 teaspoon salt
3/4 cup chopped pecans (toasted or untoasted)
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup buttermilk
1/4 cup vegetable oil (such as sunflower or safflower)
1 cup sugar
2 eggs
2 teaspoons pure vanilla extract
1/2 cup finely chopped pecans (toasted & cooled)

Steps:

  • Adjust a rack to the center position and preheat the oven to 350°F. Grease a full-sized loaf pan (approximately 9" X 5" X 3") and line with parchment paper that slightly extends above the top edge of the pan, all the way around (see notes above the recipe for more detailed explanation). Set aside.
  • In a small saucepan set over medium-high heat, add the butter, brown sugar, and salt. Allow to start melting and stir to combine. Bring to a boil, stirring occasionally, then remove from the heat and stir in the chopped pecans until well combined. Set aside to slightly cool.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another large bowl, blend together the buttermilk, oil, and sugar until well-incorporated. Beat in the eggs, one at a time, and then the vanilla. Slowly stir the dry ingredients into the wet ingredients until just combined, then fold in the finely chopped toasted pecans.
  • Pour the batter into the prepared loaf pan. Evenly pour about two-thirds of the pecan praline mixture over the top. Use a butter knife to gently swirl the pecan praline mixture into the bread, only going about halfway down into the batter (not all the way to the bottom). Pour the remaining pecan praline mixture over the top without swirling.
  • Bake in preheated oven for 45 minutes. Lay a piece of foil over the top of the bread (so that the pecans on top don't burn) and then bake for 10 to 15 minutes longer, until a toothpick inserted in the center of the bread comes out clean (but be careful not to overbake).
  • When the bread tests done, remove it from the oven and place the pan on a cooling rack for 15 minutes. Use the parchment paper sling to carefully lift the bread out of the pan and onto the cooling rack. You may gently peel back the parchment paper once the bread has cooled a bit more.

CARAMEL PECAN PRALINES

Caramel pecan pralines image

These are soft, silky, buttery and so delicious!

Provided by Aryn

Categories     candy     Dessert

Number Of Ingredients 7

1/2 cup butter
2 cups sugar
1 cup corn syrup
1 cup heavy whipping cream
1/4 teaspoon Salt *for a salted caramel increase the salt to 1/2 teaspoon
2 cups pecans halves or pieces
Optional - sea salt for tops

Steps:

  • In a heavy bottomed pan, add the butter, sugar, corn syrup and stir over medium high heat.
  • Once the butter has melted completely and the sugar has dissolved, slowly pour the heavy cream into the mixture while stirring. You don't want to add it too fast or it can make your caramel crystallize or become grainy.
  • Bring the mixture to a boil and cook until it hits the caramel stage, just below hard ball stage or around 238 F. for a soft, yet firm enough to hold it's shape caramel. I always eat the caramel I ice water test so I can see if I like the way it feels on my teeth. I don't want it too sticky or hard.
  • *If you do cook the caramel past the desired stage, add more cream and stir, it will set back the stage the caramel is at.
  • Pour mixture onto a cookie sheet lined with parchment paper.
  • Add pecans on the top and fold into the hot caramel with a wooden spoon or rubber spatula.
  • Let caramel cool slightly so you don't burn your hands but the caramel is still warm. Pull from the caramel pecan mixture and form into small ball shapes then press slightly flat so it forms a disc shape.
  • Top with sea salt if desired and wrapped each praline in parchment paper to prevent it from sticking.
  • Enjoy!

Add butter and shortening and pulse until a coarse meal forms. Add brandy and pulse to combine. Add water 1 tablespoon at a time until the dough comes together when pressed and is quite moist. Dump dough onto plastic wrap. Wrap tightly, forming into a disc as you do so. Refrigerate for at least 1 hour and up to 2 days.
  • Make the filling. In a large bowl, stir or whisk together maple syrup, peach brandy, eggs, vanilla, salt, butter, sugars, and Golden Syrup until a homogeneous mixture is formed. Stir in pecans.
  • Remove crust from refrigerator and roll on a lightly floured surface until it is large enough to fit your pie pan and about 1/8 inch thick. Place in pie pan, being sure to patch any holes. There must not be any holes. Use fingers to flute crust edge as you wish. You should use all of the dough. Place peach slices on top of crust. They should cover the entire bottom. Pour filling over peaches. Refrigerate pie for 30 minutes.
  • Preheat oven to 400 degrees F. Place refrigerated pie on foil lined baking sheet. Dab edges of crust with milk or cream using your fingers. Bake for 15 minutes. Reduce oven temperature to 350 degrees F without opening the oven, and bake an additional 1 hour to 1 hour 10 minutes, rotating halfway through if necessary. Cool pie completely before slicing. I actually like to refrigerate it overnight and eat it the next day. It may be stored in the refrigerator for up to 3 days or frozen in quarters wrapped in parchment and foil and placed in a zipper bag for up to 4 months. Thaw at room temperature for a couple hours or in a 350 degree F oven for about 15 minutes.
