PECAN MAPLE BAGEL SCHMEAR
I don't really like plain cream cheese on my bagels, so I made some of this! I use reduced fat cream cheese because the consistency is naturally softer, even when cold. Plus, it tastes just as good as the regular stuff. I have used regular, softened cream cheese, and added a tablespoon or two of milk to adjust the consistency.

- Combine all ingredients in a medium bowl; beat until thoroughly mixed.
- Feel free to add more syrup for a stronger flavor.
- To thin out regular cream cheese, add in milk, 1 tbsp at a time until desired consistency is reached.

Steps:
- Preheat oven to 350 degrees F.
- Combine melted butter, graham cracker crumbs and 1 tablespoon sugar in a bowl and mix to combine. Pour mixture into a 7-inch spring form pan and press down evenly. Bake for 10 minutes. Remove from oven and set aside to cool.
- In a stand mixer with a paddle attachment mix cream cheeses and 2/3 cup sugar on medium speed until light and fluffy, stopping periodically to scrape down the sides of the bowl.
- Turn the mixed speed down to low and add eggs one at a time, followed mango puree and vanilla.
- Once ingredients are all well mixed pour over cooled crust; cover loosely with aluminum foil.
- Place the metal trivet in the bottom of the inner pot and pour in 1 cup of water. Carefully lower the cake pan onto the trivet.
- Cover and lock the lid in place. Place the vent to the sealing position and set to manual on high pressure for 35 minutes. When the cook time is done, allow the pressure to release naturally.
- Remove the cheesecake from the inner pot and remove the fool. Allow to cool completely before covering with plastic wrap. Place in the refrigerator to cool for at least 6 hours or up to overnight.

- Preheat oven to 350°F.
- Line a baking pan with foil. Split bagels and place halves face-up in the pan.
- Mix garlic powder and cajun seasoning into olive oil, and brush across the bagels.
- Bake 10-15 minutes, or until golden brown. Set your oven to broil.
- Prepare the spread: add all the ingredients to a food processor and blend until smooth.
- Slice warm bagel halves into 4 wedges each.
- Add spread to wedges, and top each with a sprinkling of cheese and a slice of peperoni.

MARINATED FLANK STEAK WITH BLUE CHEESE SCHMEAR

Steps:
- Trip steak of any excess fat or silver skin.
- Place steak in large zip lock bag.
- Combine marinade ingredients and pour over steak.
- Close bag& press out any air.
- Move steak around in the bag to marinate.
- Refrigerate over night, or at least six hours.
- Mix schmear ingredients in a small bowl until smooth.
- Refrigerate schmear.
- Bring schmear to room temperature one hour before serving.
- Prior to cooking, remove steak from marinade& drain well.
- Grill steak over HOT fire, about 5 minutes a side for rare.
- Place steak on a platter with the side just off the grill up and IMMEDIATELY top with the schmear.
- Spread schmear over steak.
- Let rest 10 minutes before serving.
- Thinly slice at an angle across the grain.
- Spoon sauce& juices back over meat when serving.
BLUE CHEESE STUFFED MUSHROOMS
I usually use reduced fat cream cheese, and reduced fat blue cheese to keep the calories and fat down. Also for a quick fix you can use chive and onion variety cream cheese. ( They also make light.)

- Preheat oven to 375.
- Wash the mushrooms and remove the stems from caps. Place on a paper towel to dry.
- In a small bowl mix together the cream cheese, green onion, bacon pieces, and blue cheese.
