1 and 1/2 tablespoons unsalted butter
1 and 1/2 cups pecan halves
3 tablespoons unsalted butter, melted until browned
(1) 14 ounce can sweetened condensed milk
20 ounces high-quality white chocolate, roughly chopped
1 teaspoon vanilla extract
1/8 teaspoon salt
1 and 1/2 teaspoons ground cinnamon

Steps:

  • Melt butter in a large skillet over medium heat. Add in pecans and cook, stirring occasionally, for 4 to 5 minutes, or until lightly toasted. Using a large slotted spoon, transfer pecans to clean plate and set aside until needed.
  • Line an 8x8-inch baking pan with parchment paper, allowing excess paper to overhang on two of the sides. Grease the parchment paper, and any exposed pan, and set it aside.
  • Melt the butter in a small heavy saucepan over medium heat. Once the butter has melted, reduce the heat to low and continue cooking, until the solids sink to the bottom of the pan and turn golden brown, about 5 minutes. Remove from heat, pour browned butter into a small bowl, and set aside until needed.
  • Fill a medium pot one-third full with water and bring it to a low simmer over medium heat. Place a heatproof bowl that will fit on top of the pan snugly, but will not touch the simmering water, on top of the pan. Reduce the heat to low and add the sweetened condensed milk, chopped white chocolate, and browned butter into the bowl over the pot. Heat until the chocolate is completely melted, stirring occasionally with a silicon spatula. Once the chocolate is completely melted, stir the mixture smooth, then carefully remove the bowl from the heat. Whisk in the vanilla, salt, and ground cinnamon. Using a rubber spatula, fold in the buttered pecans.
  • Scrape the fudge into the prepared pan and smooth the top. Sprinkle with sea salt, if using. Refrigerate for at least 2 hours.
  • Gently run a butter knife around the edge of the pan to loosen the fudge. Remove the fudge and transfer it to a cutting board. Peel off parchment paper, then slice the fudge into small pieces.
  • Store in an airtight container, in the refrigerator, for up to 1 month. You may also freeze the fudge, in an airtight freezer safe container, for up to 2 months.

Steps:

  • Combine the chocolate, the milk, and the butter in a medium size glass bowl and heat in the microwave for 90 seconds. Stir to combine and heat another 15 seconds if needed.
  • Add the extract and stir until smooth. Stir in 1 cup of pecans. Scoop into a parchment lined loaf pan. Spread with a spatula to approximately 1-inch thickness. Top with remaining chopped pecans.   • Spray bottom and sides of 8-inch square pan with cooking spray. Heat to full rolling boil; boil and stir 1 minute. Remove from heat.

Steps:

  • Preheat oven to 350°F. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, 10-15 minutes. Let cool, then coarsely chop.
  • Meanwhile, butter loaf pan. Attach candy thermometer to a large heavy-bottomed pot or Dutch oven set over medium heat. Cook maple syrup, cream, and salt, whisking constantly, and bring to a boil. 1 ½ cups white sugar
1 cup brown sugar
⅓ cup half-and-half cream
⅓ cup milk
2 tablespoons margarine
1 teaspoon vanilla extract
½ cup pecan halves

Steps:

  • Butter a baking sheet. Butter the sides of a heavy, 2-quart saucepan.
  • In the saucepan, stir together white sugar, brown sugar, cream, milk and margarine and bring to a boil over medium heat. Heat, without stirring, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and cool to lukewarm (110 degrees).
  • Stir in vanilla and beat vigorously until mixture loses its gloss. Quickly stir in pecans and spread on prepared sheet. Score into squares while warm; cut when firm.

  • In a large heavy saucepan, combine the first three ingredients. Cook and stir over low heat until sugar is dissolved. Bring to a full rolling boil. Boil and stir until a candy thermometer reads 234°, about 5 minutes. , Remove from the heat; stir in chocolate chips and caramels until melted. Stir in remaining ingredients until well blended. ½ cup (120g) heavy whipping cream
½ cup (100g) granulated sugar
½ cup (100g) brown sugar
⅛ teaspoon kosher salt

1 tablespoon vanilla extract
2 cups (250g) confectioners' sugar, (sifted twice)

Steps:

  • Place two sheets of parchment paper, crisscrossed, in an 8x8 inch baking dish.
  • Toast the pecans (if you have not already toasted them) for 7 minutes at 350°F on a parchment-lined baking sheet.
  • Meanwhile, in a large saucepan over medium heat, combine the butter, heavy cream, granulated sugar, brown sugar, and salt to a boil. Stir frequently. Fudge should heat to around 236° to 239°F and not go over 244°F.
  • Once the fudge reaches 236°F-239°F, remove from heat.
  • Add the pecans and the vanilla to the hot fudge in the pan. Stir to just combine.
  • Stir in the sifted confectioners' sugar until it is well combined.
  • Pour the mixture into the lined baking dish, and add a few more pecans on top.
  • Cool for at least 60 minutes before cutting and serving. Store in an airtight container.

  • In a 3-quart heavy-bottomed saucepan combine butter, maple syrup, cream, sugar, corn syrup and salt. Stirring constantly, cook over low heat until sugar has dissolved (about 10 minutes). Clip candy thermometer to the pan. Bring mixture to a boil over medium heat and cook, without stirring, until mixture reaches 240 degrees on candy thermometer (about 20-25 minutes). *Do NOT stir, as sugar will crystallize!
  • Remove pan from heat and let mixture cool until candy thermometer drops to 160 degrees.
  • Pour mixture into mixing bowl.
  • Add vanilla extract to mixture and beat until mixture loses glossy appearance (about 5-10 minutes).
  • Fold in pecans and mix thoroughly.
  • Transfer mixture to parchment lined pan. Press fudge evenly into pan. Place pan on a cooling rack and score fudge into desired sized bites. Cool thoroughly (about 2 hours).
  • Flip over onto a cutting board, remove and discard parchment. Flip again so score marks are visible.
  • Using a sharp, heavy knife, cut fudge.
  • Place fudge in waxed paper lined air-tight container. Place waxed paper in between each layer of fudge.

1 cup pecans, chopped
1/4 lb butter
1 1/2 cups sugar
5 ounces evaporated milk
1 (12 ounce) package semisweet chocolate morsels
1 tablespoon vanilla
1 (7 ounce) jar marshmallow creme

Steps:

  • Line a 9-inch Pyrex dish in aluminum foil and set aside.
  • In a two quart heavy bottom pot, melt butter over medium-high heat.
  • Add sugar and evaporated milk and blend well into butter.
  • Bring to a rolling boil, reduce heat to simmer and cook approximately five minutes stirring constantly.
  • Be careful not to scorch butter as mixture will caramelize.
  • Remove from heat and using a large cooking spoon, stir in morsels, vanilla, marshmallow creme, praline liqueur and pecans, whipping constantly.
  • Stir until mixture becomes creamy and slightly thickened.
  • Pour into the Pyrex pan and allow to cool.
  • Cut fudge into 1-inch squares and serve.
