- Place pecans and 1/4 cup butter in a baking pan. Bake at 350° for 10-15 minutes or until toasted, stirring frequently; set aside., In a large bowl, cream sugar and remaining butter until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in 1-1/3 cups of toasted pecans. , Pour into 3 greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, cream butter and confectioners' sugar in a large bowl. Add milk and vanilla; beat until smooth. Stir in remaining toasted pecans. Spread frosting between layers and over top and sides of cake.

BUTTER TOFFEE-PECAN LAYER CAKE RECIPE
This buttery vanilla layer cake is swathed in a creamy toffee frosting made extra luscious with the addition of browned butter and lots of toasted pecans.

- Prepare the Frosting: Melt 3/4 cup of the butter in a deep, heavy-duty saucepan over low. Increase heat to medium-high, and bring butter to a boil, stirring constantly. Cook, stirring constantly, until butter is fragrant and milk solids start to brown, about 5 minutes.
- Remove pan from heat, and stir in brown sugar, cream, syrup, salt, and, if desired, bourbon. Return pan to medium heat, and cook, stirring occasionally, until sugar dissolves. Increase heat to medium-high, and bring to a boil. Boil, stirring constantly, exactly 2 minutes. Remove mixture from heat, and pour into bowl of a heavy-duty electric stand mixer fitted with paddle attachment. Beat on low speed until mixture is lukewarm, about 8 to 10 minutes. Gradually add powdered sugar and vanilla, and beat on low speed until combined after each addition. Beat until frosting is completely cool and consistency is thick, creamy, and spreadable, 6 to 10 minutes. Add remaining 4 tablespoons butter, 1 tablespoon at a time, and beat on medium speed until fully incorporated after each addition. Cover frosting, and let stand at room temperature until ready to use.
- Prepare the Cake: Preheat oven to 350°F. Lightly coat 2 (9-inch-round x 2-inch-deep) cake pans with cooking spray, and line bottoms with parchment paper. Sift together flour, baking powder, and salt in a medium bowl. Set aside.
- Beat sugar and butter in a large bowl with an electric mixer on medium-high speed until thick and creamy, 4 to 5 minutes. Add eggs, 1 at a time, and beat on medium speed until well blended after each addition. Beat in vanilla. Add flour mixture, one-third at a time, to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat on low just until smooth after each addition. (Do not overbeat or the cake will be tough.) Fold in chopped pecans and toffee bits. Divide batter evenly between cake pans, smoothing surface.
- Bake in preheated oven until a wooden pick or cake tester inserted into center of cake comes out clean, 30 to 35 minutes. Cool in pans on a wire rack 10 minutes. Invert layers onto wire rack, and peel off parchment paper. Cool completely, about 1 hour.
- Place 1 cake layer on a serving plate; spread evenly with 1 heaping cup of frosting. Chill 15 minutes. Top with remaining cake layer, and frost top and sides of cake with remaining frosting. Sprinkle pecan halves in a ring around top edge of cake. If desired, crush sea salt with your fingers, and sprinkle over pecans. Serve immediately, or store, covered, at room temperature for 3 to 5 days.

- Beat shortening at medium until fluffy; gradually add 1 1/2 cup sugar, beating well.
- Add 2 eggs, 1 at a time beating until blended after each addition.
- Combine flour, cocoa, baking soda and salt; add to shortening mixture, alternately with buttermilk, beginning and ending with flour mixture. Mix at low after each addition until blended.
- Beat 3 more minutes at high speed, stopping once to scrape down sides. Stir in 2 teaspoons vanilla extract. Pour batter into prepared pans. Set aside.
- In another bowl beat cream cheese, 2 tablespoons butter and cornstarch at medium until creamy.
- Gradually add sweetened condensed milk, beating well. Add 1 egg; beat well.
- Stir in remaining 1 teaspoon vanilla extract. Spoon cream cheese mixture evenly over batter.
- Bake at 350°F for 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks.
- To make the frosting beat 2/3 cups butter at medium until creamy.
- Combine powdered sugar and 1 1/2 cups cocoa; add to butter alternately with 1 cup plus 2 tablespoons milk, beginning and ending with powdered sugar mixture. Beat until spreading consistency.
- Stir in remaining 1 teaspoon vanilla extract. Spread frosting between layers and on top and sides of cake. Sprinkle with toasted walnuts.

- Grease 2 9 inch pans.
- Preheat oven to 350 degrees.
- Combine cake mix, eggs, water and oil.
- Bake 25 minutes.
- Meanwhile combine brown sugar, 2/3 cup whipping cream and butter in sauce pan. Cook over medium heat stirring constantly until mixture comes to a boil. Reduce heat. Simmer stirring constantly for 1 minute. Cool to room temperature.
- Drizzle 2 tablespoons sauce over each layer.
- Place remaining sauce in bowl. Add powdered sugar. Beat on high til smooth, 3 minutes. Add enough whipping cream for spreading consistancy.

- Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine remaining butter, granulated and brown sugars, cream and salt. Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage). Remove from heat. Add vanilla to pan (do not stir)., Cool, without stirring, to 110°, about 30 minutes. Beat with a spoon until fudge just begins to thicken. Gradually stir in confectioners' sugar until smooth; add nuts and continue stirring until fudge becomes very thick and just begins to lose its sheen. Immediately spread into prepared pan. MOCHA FUDGE LAYER CAKE
A local restaurant serves this cake it is delicious! By looking at the recipe it looks complicated by after making it, it wasn' that bad! I copied the original recipe, but I used all purpose flour and I didn't sift anything. It still turned out great!

- Cake: Melt chocolate; set aside to cool. Cream butter in large mixing bowl; gradually add sugar beating well. Add eggs one at a time, beating well after each addition. Add chocolate and vanilla; Mix well.
- Combine flour, soda and salt; add to creamed mixture alternately with sour cream, beginning and ending with flour mixture. Stir in boiling water. (Batter will be thin).
- Pour batter into 2 greased and floured 8 inch cake pans. Bake at 350°F for 30 to 35 minutes or until toothpick comes out clean. Cool in pans for 10 minutes; remove from pans and cool completely on wire racks. Split cake layers in half horizontally to make 4 layers.
- Filling: Beat whipping cream, vanilla and powered sugar together until soft peaks form. If needed add a little more powered sugar to get to thicken.
- Spread filling between layers.
- Frosting: Beat first 5 ingredients together until light and fluffy. Add cream if too stiff. Put icing on top and sides of cakes.
SOUTHERN STYLE PECAN FUDGE
This is the easiest fudge recipe I've ever found! Creamy, sweet and my Texan husband says it reminds him of how his mother made fudge when he was young! What better compliment could I get? Also, one-pan preparation!
