PECAN CRUSTED FLOUNDER RECIPE

A delicious pecan and walnut crusted fish. Serve with a fresh salad and/or roasted brussels sprouts on the side to complete this healthy meal.

4 pieces fish
2 eggs
1 cup walnuts
¼ cup butter
1 clove garlic ((minced))
salt
black pepper
lettuce ((or spinach))
pumpkin seeds
1 TBSP olive oil
¼ cup pecans ((optional))
¼ cup feta cheese ((optional))
balsamic vinegar ((or salad dressing of choice, optional))

Steps:

  • Preheat oven to 400°F and make sure fish is defrosted if using frozen.
  • In a bowl, whisk eggs until smooth in a bowl.
  • Put ground nuts on a large plate.
  • Dredge each piece of fish in egg and then dip in the ground nuts. Nut mixture will not stick as well as flour and this is ok. You should have some leftover nut meal after lightly coating the fish.
  • Carefully place each piece in a large baking dish.
  • After all fish is in dish, top with any remaining ground nuts and pat down.
  • Pour melted butter or ghee over fillets.
  • Put fish into preheated oven and bake 15-20 minutes or until cooked through and starting to flake.
  • While cooking, prepare salad by washing spinach and lettuce and topping with desired toppings: pumpkin seeds, nuts, feta cheese, olive oil, and homemade dressing of choice.
  • Serve and enjoy!

1/2 cup ketchup
1 tablespoon cider vinegar
2 teaspoons sriracha
2 teaspoons Worcestershire sauce
1 teaspoon light brown sugar
Nonstick cooking spray, for the baking pan
1 cup pecans
2 cups panko breadcrumbs
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
3 large eggs
2 small boneless, skinless chicken breasts (about 1 pound), halved lengthwise
1 pound boneless, skinless chicken thighs (about 6 thighs), halved
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • For the ketchup: Stir together the ketchup, vinegar, sriracha, Worcestershire and brown sugar in a small bowl.
  • For the chicken: Preheat the oven to 450 degrees F. Line a rimmed baking pan with parchment paper and spray it generously with cooking spray.
  • Pulse the pecans in a food processor until finely ground. Add the panko and pulse until just combined. Pour into a wide, shallow bowl.
  • Put the flour in a wide, shallow bowl and whisk in the garlic powder, paprika, cayenne, 1 tablespoon salt and a pinch of pepper.
  • Whisk the eggs in another shallow bowl.
  • Working with one piece of chicken at a time, dredge in the seasoned flour, then shake off the excess. Dip in the egg to coat and let the excess drip off. Add to the pecan panko mixture and turn to coat, lightly pressing so that the crumbs adhere. Transfer to the prepared baking pan.
  • Spray the chicken generously with cooking spray and bake until golden brown all over and just cooked through, 15 to 20 minutes. Transfer to a platter and sprinkle with the parsley. Serve with the spicy, tangy ketchup on the side.

8 small skinless fillets, about 1 1/2 pounds total
Salt and freshly ground pepper to taste
1 large egg
3 tablespoons water
2 teaspoons dark soy sauce
3/4 cup pecans chopped fine with a food processor or heavy knife
3 tablespoons vegetable oil
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon fresh lime or lemon juice
3 tablespoons chopped coriander or parsley

Steps:

  • Sprinkle the flounder fillets on both sides with salt and pepper to taste.
  • With a fork or a wire whisk, beat the egg with the water and soy sauce.
  • Place the chopped nuts on a flat dish. Dip the fillets one at a time into the egg mixture until well coated. Remove the excess. Then dredge the fillets in the chopped nuts. Pat them firmly so they are evenly coated.
  • Heat one tablespoon of the vegetable oil in a large nonstick skillet over medium-high heat. When hot, add as many fillets as will fit without crowding. Saute for a total of about 2 minutes, or until lightly browned on both sides. Do not overcook. Cooking time will vary with the thickness of the fillets. Add more oil as necessary. Transfer fillets to a warm serving plate or platter. Keep warm. Cook the remaining pieces.
  • When all the fillets are cooked, wipe the pan clean with paper towels. Add olive oil and butter. Cook until butter foams and starts to brown. Add lime juice and pour the mixture over the fish. Sprinkle with coriander and serve immediately.

Steps:

  • Mix pecans, bread crumbs and lemon peel in shallow bowl. Beat egg and milk with wire whisk or fork in another shallow bowl.

4 (5 -6 ounce) fish fillets
1/4 cup buttermilk
1/4 cup pecans (finely ground in blender or processor)
3/4 cup breadcrumbs
3 garlic cloves (minced or pressed)
2 tablespoons fresh parsley (minced)
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon salt
1 pinch cayenne

Steps:

  • Preheat the oven to 375°F; lightly oil a baking pan.
  • Rinse the fish and place it in a shallow dish.
  • Pour the buttermilk over the fillets.
  • In a separate shallow dish, combine the pecans, bread crumbs, garlic, parsley, thyme, paprika, salt, and cayenne.
  • One at a time, remove the fillets from the buttermilk, allowing the excess to drain off, and then dredge in the pecan mixture to coat all sides. Place each coated fillet in the baking pan.
