PECAN CRACKERS
Pecan meal easily becomes crispy, delightful crackers. Add extra seeds and flavors as you like. If the dough seems to fall apart, just press and piece it together, cut into crackers and then bake them up. If you do not have pecan meal, blend up about 2 cups of whole pecans in a food processor until the mixture is crumbly. Do not blend too long or the oils will release and it will eventually turn into pecan butter.

- Preheat the oven to 350. Whisk together the pecan meal, brown rice flour, and salt. Make a hole in this mixture. Pour in the egg, water and olive oil. Beat the liquid with a fork as you combine in the rest of the dry ingredients. Fold it together while kneading it carefully with your hands. Place the dough between two pieces of parchment paper. Roll out until even and flat, as thin as reasonable. Remove one piece of the parchment. Cut into squares, but keep the crackers touching each other. The dough may fall apart, but just press and piece it back together. Bake for 8-10 minutes until they are sizzling and the bottom is starting to dry out. They will crisp apart from each other making it easy to separate them.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Line a baking sheet with graham crackers. Sprinkle evenly with pecans.
- In a small saucepan over medium heat, combine sugar, butter and margarine. Bring to a boil and boil 3 minutes. Remove from heat and spoon mixture over pecans, coating well.
- Bake in preheated oven 12 minutes, until golden. Cool completely before serving.

- In a preheated 350 degree oven toast 1/2 cup pecans, about 7 minutes, and cool.
- Finely chop toasted pecans
- In a bowl with a fork cream butter and Saga until smooth.
- Separate egg. Add egg yolk, stirring until combined well.
- Add flour and chopped pecans and stir until mixture just forms a dough.
- Halve dough and on separate sheets of waxed paper form each half into a 12 by 1 1/4-inch log, using waxed paper as a guide. Freeze logs, wrapped in waxed paper, just until firm, about 30 minutes.
- Preheat oven to 375 degrees and lightly grease 2 large baking sheets.
- Cut logs crosswise into 1/4-inch thick slices and arrange slices about 1/2-inch apart on baking sheets.
- Top each cracker with a remaining pecan half, pressing lightly into dough .
- Brush tops of crackers, including pecans, with lightly beaten egg white. Bake crackers in batches, if necessary, in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden brown, about 12 minutes total.
- With a spatula transfer crackers to paper towels to blot and transfer to a rack to cool.

PECAN GRAHAM CRACKER CRUST
This crust is fantastic! You can use this for almost any pie, just use your imagination! The dates really add something, not only in the crust, but in the whole pie. You can use different nuts, but please try the pecans first. This is a rather healthy crust, for us who are into healthy heating.

- Soak one cup of the pecans in two cups fresh water for 2-4hours. Drain and rinse.
- In a food pressor, chop a cup of pecans into a fine meal. Set aside.
- Chop soaked pecans into a fine meal.
- Cut or break the dates into pieces. If the dates are dry or very firm, soak them in 1/2 cup fresh water for 5 minutes to soften.
- Add date pieces, maple syrup or honey, carob,.
- cinnamon, nutmeg, vanilla, if using, and seas salt to the ground soaked pecans and chop until well mixed.It may be necessary to scrape the sides of the food processor with a rubber spatula and continue to chop for a thorough consistency.
- Add the ground dry pecans and chop until well mixed.
- The dough should by crumbly but sticky enough to hold a shape when shaped.
- Press the dough evenly into a pie plate or turtle pan. It is best to press the dough to the sides of the plate or pan first, then press into the bottom for even depth.To scallop the edge of the crust:.
- Use the thumb and forefinger of your dominant hand yo pinch the edge of the dough successively around the rim of the plate or pan. Use the forefinger of your other hand to press the pinches to keep them neat and orderly.
- Fill, frost and serve with love.

PECAN CRACKER JACKS
Based on a copycat recipe, modified for our tastes. I loved this as a kid. Today all that is missing is a prize, but heck, who needs a plastic ring anyway?

Steps:
- Preheat oven to 250ºF .
- Combine popcorn and pecans in a metal bowl or on a cookie sheet and place in the preheated oven.
- Combine the rest of the ingredients in a saucepan and stir over medium heat, bringing mixture to a boil.
- Using a cooking thermometer, bring mixture to a hard-ball stage - 260 degrees (syrup will form a hard, but workable, ball if dripped into cold water).
- This will take about 20 minutes or until you notice the mixture turning dark brown.
- Remove popcorn and pecans from the oven. Working quickly, drizzle the caramel mixture stream over them.
- Put mixture back in the oven for 15 minutes and stir well every five minutes to ensure even coating.
- Cool and store in a covered container.

- Preheat oven to 350 degrees.
- Line a cookie sheet with foil and lightly grease.
- Place graham crackers on the cookie sheet in one layer.
- Sprinkle pecans evenly over the graham squares.
- In a small sauce pan melt the unsalted butter.
- Add brown sugar to the pan and stir until mixture begins to boil.
- Pour sugar mixture over pecans and graham squares.
- Bake in oven for 10 minutes.
- Remove pan from oven and place into freezer for 1 hour.
- Break bark into pieces while still cold.
