COLD RICE SALAD

1 1/2 cups long-grain white rice, rinsed
Salt
1 cup peas, blanched
1/2 red bell pepper, chopped
1/4 red onion, thinly sliced and soaked in ice water for 10 minutes
2 tablespoons rice wine vinegar
Salt and freshly ground black pepper
6 tablespoons vegetable oil
1 teaspoon toasted sesame oil

Steps:

  • For the rice: Place the rice, 3 cups water, and a pinch of salt in a pot, cover and bring to a boil. Reduce the heat and cook on low until tender, about 20 minutes. Turn the rice out onto a sheet tray and let it cool completely. Next, combine the rice, peas, red bell pepper and red onion. Toss gently.
  • For the dressing: In a small bowl, add the rice wine vinegar, a small pinch salt and a few turns of freshly ground pepper. Mix together and slowly drizzle in the vegetable oil and then the sesame oil.
  • Pour the dressing over the rice and mix until the rice is thinly coated. Taste, and re-season if necessary.

300g brown basmati rice
75ml olive oil
200g frozen pea
410g can lentil , rinsed and drained
410g chickpea , rinsed and drained
juice 2 lemon
2 bunches spring onions , finely sliced
large bunch coriander , chopped

Steps:

  • Cook the rice in a large pan of boiling water for about 15 mins, drain and drizzle with a little of the olive oil, then leave to cool.
  • Boil a kettle and pour the water over the peas in a small bowl. Leave them to defrost, then drain. In a large bowl, mix the rice with the peas, lentils, chickpeas, remaining olive oil, lemon juice and the spring onions. Season to taste. The rice salad can now be kept in the fridge for up to 2 days. Remove from the fridge about 30 mins before serving, then stir through the coriander.

6 bacon strips, cooked and crumbled
1 can (8 ounces) sliced water chestnuts, drained
1/4 cup thinly sliced green onions
DRESSING:
1/4 cup sour cream
4 teaspoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon sugar
1/8 teaspoon salt

Steps:

  • In a bowl, combine peas, bacon, water chestnuts and onions; set aside. Combine all dressing ingredients until smooth; pour over salad and toss to coat. Refrigerate for at least 1 hour.

1 cup green peas, fresh or frozen (thawed*)
1/4 cup scallion, white and green parts, diced
1/2 cup celery, diced (peeled**)
2 cups white rice, steamed (can use brown rice)
1/2 cup low-fat mayonnaise
1/4 cup monterey jack cheese (or other yellow sharp)
1/4 cup mozzarella cheese
lettuce (your choice of type)

Steps:

  • Keep rice at room temperature while cooling. Do not refrigerate or it will clump together.
  • Cut Jack cheese into short strips.
  • Grate Mozzarella cheese.
  • When rice is completely cooled, mix all the ingredients together.
  • Use the lettuce to line the serving plate.
  • Pile salad in mound.
  • Serve at room temperature.
  • If the weather is warm, add mayo no more then 1/2 hour ahead of serving.
  • * If using frozen peas, make sure to drain the water before adding to salad.
  • ** Peel the celery just like a carrot. It removes the stringy part.

Every summer I create at least one salad that becomes my go-to. One year this was it. It's the perfectly sidekick for grilled steaks or lamb, but the ridiculously good buttermilk ranch makes this super-fresh salad satisfying on its own. All the crisp beans and peas get caught in the crunchy Boston lettuce, which entices you to eat with your hands. And not only do I condone that, I recommend it! Promise I won't tell.

Kosher salt
1/2 pound haricots verts or thin green beans
1/2 pound sugar snap peas, strings removed
1 cup fresh or thawed frozen peas (4 ounces)
1/2 cup buttermilk
1/2 cup mayonnaise
1/2 cup snipped fresh chives, plus 2 tablespoons minced
1 tablespoon minced fresh dill
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
Freshly ground black pepper
1 small head Boston lettuce, cored and leaves torn

Steps:

  • Fill a medium saucepan with water and bring to a boil over high heat, then add a generous pinch of salt. Fill a large bowl with ice and water. Add the haricots verts to the boiling water and cook until crisp-tender and bright green, 2 to 3 minutes. Using a slotted spoon, transfer to the ice bath to cool. Add the snap peas and peas to the boiling water and cook until crisp-tender and bright green, 1 to 2 minutes. Drain well and transfer to the ice bath to cool. Drain the beans and peas very well and then pat dry with paper towels, or give them a whirl in the salad spinner.
  • In a medium bowl, whisk together the buttermilk, mayonnaise, minced chives, dill, garlic powder, and onion powder. Season the ranch dressing generously with salt and pepper.
  • In a large serving bowl, toss the beans and peas with the lettuce, the snipped chives, and half the ranch. Season the salad with salt and pepper. Serve right away, passing additional ranch at the table.

1 pound shrimp
1/2 cup diced celery

1 cup fresh or frozen green peas, cooked until just tender
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon celery seed
1/2 to 3/4 cup mayonnaise
2 tablespoons dill pickle juice

Steps:

  • Cook the rice following the package directions. Remove from the heat and cool completely.
  • Peel the shrimp. Make a shallow cut down the back of a shrimp with a small, sharp knife. Remove the dark vein; rinse well. Repeat with the remaining shrimp.
  • Bring a saucepan of water to a boil; add the shrimp and lower the heat to low. Simmer for about 3 minutes, or until the shrimp are opaque and pink. The time depends on the size of the shrimp. Let the shrimp cool and chop them coarsely.
  • In a serving bowl, combine the shrimp, celery, onions, peas and red bell pepper. Sprinkle with salt, pepper and celery seed.
  • Add the cooled rice to the shrimp mixture; add mayonnaise and dill pickle juice and gently mix.

  • In a food processor, combine dressing ingredients and whiz until blended.
  • In a saucepan, combine rice with 1 cup water.

  • In a bowl, combine vegetables, rice and cheese.
  • Toss with dressing.
  • Chill before serving.
