The prickly pear is the desert's dessert-the sweet, pinkish or greenish, oval fruit of a flat paddled cactus that grows throughout the American West. How to Prepare Prickly Pears To prepare whole prickly pears, cut the ends off with a paring knife, holding the pear at the end of a fork. It's a good idea to wear gloves: the pear may still have some prickles. Cut the fruit into ½ inch dice, then puree in the food processor, running the machine in short bursts. Strain the resulting puree to remove the hard seeds. You'll need about 1 pound of prickly pears to obtain 1 cup puree. PORK TENDERLOIN WITH PRICKLY PEAR TEQUILA BBQ SAUCE

- Preheat an outdoor grill to medium heat.
- Brush the pork tenderloins with oil. Season generously with salt and pepper.
- Use a clean cloth or rolled paper towels soaked with oil to season the grill. Grill the tenderloins, turning as necessary to mark them well on all sides. Use a basting brush to coat the tenderloins with sauce. Turn the tenderloins about every 2 minutes and reapply sauce to ensure even caramelization. Cook until an instant-read thermometer inserted in the center registers 145 degrees F (for medium doneness) to 160 degrees F (for well done).
- Remove the tenderloins to a wire rack or plate to rest. Rest in a warm place for at least 5 to 7 minutes. Bring leftover sauce to a simmer and cook for 5 minutes. Slice and serve with sauce for dipping or drizzling.
- Coat the whole red onions with canola oil and roast until inside layers are very soft, about 1 hour. Peel the onions and discard outer layers if blackened. Place in blender with prickly pear cactus puree and blend at high speed until completely smooth. Preheat oven to 350 degrees F.
- Heat 1 tablespoon of butter in a saucepan over medium heat. Saute minced onions until lightly caramelized, about 5 minutes. Add coriander, cumin, pepper flakes, serrano, garlic, and lime zest. Cook until fragrant, about 2 minutes.
- Add Worcestershire, tequila, cider vinegar and lime juice. Cook over medium-high heat until reduced by half.
- Stir in onion/cactus fruit puree, water and salt, to taste, and bring to a simmer.
- Remove from heat and swirl in the remaining butter. The sauce may be blended to achieve a smoother consistency or left as it is.
PEAR TOMATO AND LIME BBQ SAUCE

- Dice onions and pears.
- Put pears into a bowl with water with a drop or two of lime juice to prevent browning.
- In a medium saucepan, over medium heat, melt butter then add onions, garlic and ginger.
- Cook onions until they are soft and translucent, about 3 to 4 minutes.
- Add chili powder and paprika, cook for 1 minute.
- Strain the pears and add them to the pot, cook for 5 minutes, the pears need to be soft at this point.
- Add canned tomatoes, tomato paste, vinegars, soy sauce and mustard.
- Stir to combine and bring to a gentle simmer, cover and cook for 20 minutes.
- After 20 minutes, check the sauce as it should have darkened and thickened.
- The sauce should be smooth, evenly blended and like a thick soup.
- Return pot to medium heat and add the freshly squeezed lime juice and Splenda brown sugar.
- Stir to combine.
- Cook for about 5 minutes and taste.
- For extra sweetness, add Splenda to taste.
- If sauce is too sweet, add more soy sauce.
- Cool the sauce and put into desired containers and refrigerate.
TOMATO BASED BARBECUE SAUCE
I was responsible for this recipe in class. It is not the typical BBQ sauce, but is out of this world. The list of ingredients may be long, but it is well worth it!! The will yield 1 qt of sauce, enough for 3-4 slabs of ribs or 4-6 chickens. It can also be canned. Just follow the instructions for canning high acid foods. This is also a mild sauce, but you may add 1/4 tsp. of cayenne pepper (or to taste) for a hotter sauce. The chiles used in this recipe are the large dried MILD red chiles called California or New Mexico chiles.

- Heat the oil in a large saucepan over medium high heat.
- Add the onion, garlic and ginger.
- Saute until the onion is translucent, about 5 minute.
- Add the tomatoes, oregano, chile pieces, vinegar, honey, and soy sauce.
- Stir to combine and lower the heat to medium low.
- Grind the whole spices (cardamom, cloves, fennel, cinnamon stick, and mustard seeds) in a spice grinder or for a workout in a mortar.
- Add the spices to the sauce.
- Simmer, stirring frequently to prevent sticking, until the sauce is thick and tasty, up to 2 hours.
- Strain sauce or put through a fine disk of a food mill.
- Use immediately or refrigerate for short term use. Can also be canned.
