PEANUT GROUND TURKEY LETTUCE WRAPS
These Peanut Ground Turkey Wraps are so easy to throw together and full of flavor!

Steps:
- In a small microwave safe bowl, heat water until warm.
- Add in peanut butter and whisk until smooth.
- Stir in soy sauce, sriracha, honey, ground ginger, and sesame and oil and stir to combine. Set aside.
- In a large skillet, add in olive oil over medium heat.
- Add in ground turkey and cook until no longer pink, 8-10 minutes.
- Add in cauliflower rice and simmer. If frozen, let simmer an additional 5-10 minutes to ensure it's thawed and excess water has been removed.
- Stir in peanut sauce to thoroughly coat dish. Set aside.
- Set out butter lettuce and top with a small scoop of ground turkey mixture.
- Top with your desired toppings. I like to use shredded carrots, avocado, peanuts, cilantro, green onions, and lime juice.
- Serve and enjoy!

- Whisk together first five ingredients until smooth. In a large skillet, cook and crumble turkey with carrot over medium-high heat until no longer pink, 6-8 minutes; drain. Add ginger and garlic; cook and stir 1 minute. Stir in sauce mixture, water chestnuts, snow peas and green onions; heat through., Serve in lettuce leaves. If desired, drizzle with additional hoisin sauce.

- Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
- Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

TURKEY LETTUCE WRAPS ( PF CHANG )
A copycat recipe from Damn Delicious with very few changes . So easy to fix at home, I was amazed ! This smells so great cooking that is it a good thing it is ready in less than 10 minutes. Instead of Butter Lettuce leaves, I use Large Romaine leaves that you can easily load and enjoy ! I serve with brown rice , which helps you make sure you get every little bit of this awesome filling.

- Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks; drain excess fat.
- Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in diced chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
- To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.
