Ingredients

1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

Oatmeal cookies are my favorite and I have quite a collection of different variations from the standard. This one combines the the classic oatmeal cookie with grated citrus rind. I liked the flavor.

Ingredients

1/2 cup butter or 1/2 cup margarine, softened
1 cup firmly packed brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated orange rind or 1 tablespoon lime rind
2 tablespoons orange juice or 2 tablespoons lime juice
1 1/2 cups oats, uncooked
1/2 cup raisins
1/4 cup chopped pecans

Steps:

In a large mixing bowl, cream the butter.
Add in the sugar and beat with an electric mixer on medium speed until mixture is light and fluffy.
Add in egg; beat well.
In another bowl, combine the flour, baking soda, and salt.
Add dry mixture to the creamed mixture; stir to mix.
Add in rind, juice, oats, raisins, and pecans; stir to combine.
Drop cookie dough by rounded teaspoonfuls onto a greased baking sheet.
Bake at 350° for 10-12 minutes or until lightly browned.
Let cool a couple minutes on cookie sheet, then transfer to a cooling rack to continue cooling.

Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and both sugars together on medium speed until smooth, about 1-2 minutes. Add the eggs and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the peanut butter and vanilla, then beat on high speed until combined.
Add the dry ingredients to the wet ingredients, then mix on low until combined. With the mixer running on low speed, add the peanuts, if using. Dough will be thick and soft.
Cover and chill the dough for 1 hour in the refrigerator (and up to 2-3 days). If chilling for longer than a few hours, though, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard.
