2 cups cold fat-free milk, divided
2 tablespoons reduced-fat chunky peanut butter
1 cup reduced-fat whipped topping, divided
1 package (1.4 ounces) sugar-free instant chocolate (fudge) pudding mix

Steps:

  • In a small bowl, mix 2 tablespoons milk and peanut butter until smooth. Fold in 3/4 cup whipped topping; set aside. In a bowl, beat pudding mix and remaining milk until blended, about 2 minutes. Let stand for 5 minutes. , Spoon half of the pudding into six parfait glasses or bowls; top with peanut butter mixture and remaining pudding. Garnish with remaining whipped topping.

The pudding is smooth, creamy, and ultra rich with a perfectly nutty balance to it. The chocolate whip cream is a simple two ingredient recipe that is light, fluffy, and pairs perfectly with the peanut butter pudding.

2/3 cups sugar
1/4 cup corn starch
1/4 tsp salt
2 1/2 cups milk
4 egg yolks
1/2 cup peanut butter
2 tbsp butter (cut into pieces)
1 tsp vanilla extract
1/2 cup semi-sweet chocolate chip morsels
1 cup heavy whipping cream

Steps:

  • Place a fine-mesh strainer over a medium size bowl and set aside.
  • In a medium pot, off of the heat, whisk together the sugar, corn starch, and salt. Gradually whisk in the milk, making sure to break up any clumps of corn starch. Whisk in the egg yolks, then whisk in the peanut butter. The peanut butter might not break down all the way yet, but it will over the heat.
  • Whisking constantly, cook the pudding over medium heat until the first large bubble forms (approximately 8-10 minutes). Reduce the heat to low, still whisking, and continue to cook for an additional minute. Remove from heat and immediately pour through the fine-mesh strainer. Stir in the butter and vanilla into the hot pudding.
  • Place plastic wrap directly on top of the pudding, then chill in the fridge for at least 3 hours. Whisk again before serving.

1 1/4 cups salted pretzels
6 tablespoons unsalted butter, melted
1/4 cup brown sugar
1/2 cup cream cheese, softened
1/3 cup smooth peanut butter
1/4 cup brown sugar
1/2 cup 35-percent whipping cream, whipped
3/4 cup roughly chopped dark chocolate
2 cups 35-percent whipping cream
Chocolate shavings, optional

Steps:

  • For the crust: Pulse the pretzels in a food processor until finely ground. In a large bowl, combine the pretzel crumbs, butter and brown sugar. Mix with your hands. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Cover and refrigerate.
  • For the filling: Combine the cream cheese, peanut butter and brown sugar in a medium bowl and beat with a mixer until smooth. Fold in the whipped cream. Spoon the filling into the pie shell, cover and return to the refrigerator.
  • For the chocolate whipped cream: Put the chocolate and whipping cream in the top of a double boiler over medium heat. Whisk until melted. Cover and refrigerate for 2 hours. Once cooled, beat the chocolate cream with a mixer until thick and spreadable (do not overmix).
  • Cover the pie with the chocolate whipped cream. Garnish with chocolate shavings if using. Serve the pie right away or refrigerate for another 2 hours.

1/3 cup granulated sugar
1/3 cup packed brown sugar
4 eggs
1 tsp. vanilla
1-3/4 cups milk
6 cups French bread cubes (1/2 inch)
3 oz. BAKER'S Semi-Sweet Chocolate, chopped
1 tsp. powdered sugar

Steps:

  • Heat oven to 350ºF.
  • Whisk first 5 ingredients in large bowl until blended. Gradually stir in milk. Add bread; stir to evenly coat. Stir in chocolate.
  • Pour into 9-inch square baking dish sprayed with cooking spray.
  • Bake 40 min. or until center is set and top is golden brown. Cool.
  • Sprinkle with powdered sugar just before serving.
