QUICK AND EASY PEANUT BUTTER OATMEAL

After years of testing and trying many variations of my favorite breakfast, oatmeal, I have finally found something I can eat every single day and never, ever, get sick of!

Number Of Ingredients 9

⅓ cup old-fashioned oats
2 teaspoons ground flax seed
¼ teaspoon salt
⅔ cup water
¼ cup egg whites
1 tablespoon peanut butter
1 teaspoon brown sugar, or to taste
ground cinnamon
1 tablespoon milk as needed

Steps:

  • Place oats in microwave-safe container that can hold at least 4 cups. Stir in the flaxseed and salt. Whisk together the water and egg whites, pour over the oats and stir gently until just combined. Microwave on MEDIUM power for 4-6 minutes (depending on your microwave).
  • Remove bowl from the microwave, and stir in the peanut butter, sugar, and cinnamon. If the oatmeal becomes to stiff, soften with a small amount of milk. Serve warm.

4 -5 tablespoons peanut butter (I used creamy organic)
1/4 cup Splenda sugar substitute
1/4 cup brown sugar
1/4 cup Egg Beaters egg substitute (1 egg equivalent)
about 1/2 cup regular oatmeal

Steps:

  • Preheat oven 350°F.
  • Mix all ingredients in bowl, making sure to add enough oatmeal so mixture easy enough to spoon (no too sticky/runny, etc).
  • Scoop small spoonfuls onto cookie sheet.
  • Bake for 15 minute.
  • Let cool and enjoy!

1-3/4 cups water
1/8 teaspoon salt
1 cup old-fashioned oats
2 tablespoons creamy peanut butter
2 tablespoons honey
2 teaspoons ground flaxseed
1/2 to 1 teaspoon ground cinnamon
Chopped apple, optional

Steps:

  • In a small saucepan, bring water and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Transfer oatmeal to 2 bowls; in each bowl, stir half each peanut butter, honey, flaxseed, cinnamon and, if desired, apple. Serve immediately.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

½ cup mini semi-sweet chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 teaspoon vanilla extract

Steps:

  • Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set, about 1 hour.

  • In a large bowl, combine the oats, chia seeds, ground flaxseed, honey, peanut butter, vanilla and sea salt. Use a spatula to combine all the ingredients, folding the ingredients up from the bottom of the bowl and scraping down the sides. It will take a few minutes, just be patient.
  • Continue blending until all ingredients are mixed together. Add the mini chocolate chips, stirring to evenly blend.
