JALAPENO POPPERS THREE WAYS
Steps:
- Preheat the oven to 350 degrees F.
- Cut the tops off the jalapeno peppers and clean out the core and seeds. Place them upright in an armadillo jalapeno cooker (available online). Alternatively, cut holes to fit the jalapenos in the bottom of a disposable aluminum baking pan and invert it onto a baking sheet.
- For the huevo ranchero filling:
- Beat the eggs and stir in the salsa, half the jack cheese, and salt and pepper, to taste. Fill 8 of the peppers 3/4 full and top with the remaining jack cheese and crushed chips.
- For the sausage pizza filling:
- Mix together the pizza sauce, crumbled sausage, and half the mozzarella. Fill 8 of the jalapenos and top with the remaining mozzarella.
- For the peanut butter filling:
- Put the peanut butter into a plastic bag and cut off a corner to make a pastry bag. Squeeze the peanut butter into the remaining peppers making sure that they are filled all the way down. Top with a spoonful of jelly.
- Bake the poppers for 30 to 40 minutes, or until the peppers are soft.

- With small sharp knife, cut each chile in half, leaving stem on one of the halves. Scoop out seeds; rinse chiles. Drain, cut side down, on paper towel.
- Meanwhile, place cream cheese in resealable freezer plastic bag; seal. Cut 1/2 inch off one corner of bag; set aside. In small bowl, mix peanut butter and brown sugar. Spoon mixture into another resealable freezer plastic bag; seal. Cut 1/2 inch off one corner of bag.

- Stir jalapenos, cheese, peanut butter, chutney and Cajun seasoning in medium bowl until blended. Shape into 1/2-inch round balls.

- Combine cheddar,cream cheese& salsa.
- Blend in 1/4 cup bread crumbs (less 3 tbsp crumbs).
- Spoon evenly into the pepper halves.
- Toss together the remaining bread crumbs, parsley& butter.
- Spoon over the peppers.
- Bake on cookie sheet in 375f oven for 20 minutes or until the top is golden and crisp.

DECONSTRUCTED JALAPENO POPPERS BALLS
My favorite part of a jalapeno popper was always the cream crease and the fried breading. This recipe is super easy and lets the cream cheese play a bigger role. **Please note the preparation time is mostly chilling time. Confession, I am a huge wimp when it comes to hot food and as this recipe is written, it's a little more spicy than I'd prefer. But with fewer peppers you lose a lot of the flavor. If you love heat, you can add more jalapenos or use fresh instead of jarred which are usually much hotter. I serve with a mild salsa and ranch dip, both go well with flavors and texture.

Steps:
- Mix softened cream cheese, jalapenos and salt together. (I often further chop the diced jalapenos, but that's a personal preference).
- Refrigerate at least 30 minutes to an hour.
- Roll approximately a tablespoon worth of the mixture into a ball, then roll in the breadcrumbs. Repeat with the rest of the cream cheese mixture.
- Beat the two eggs in a shallow bowl.
- Dip each coated ball into the egg and then roll again in the breadcrumbs.
- Line up the twice coated balls on a cookie sheet coated with cookie spray. I use parchment paper as well to help with clean-up.
- Refrigerate the finished balls for at least another hour, up to overnight.
- Cooked at 375 for 5-8 minutes. The crumbs should just start to brown and the coating crack a little, but the cheese should not be melting out.
- They hold up best if you let them sit for a couple minutes before eating.
