SHEET PAN CHICKEN FAJITAS
These protein-packed fajitas cleverly use a foil-lined baking sheet and broiler to make a quick and healthy weeknight meal with easy clean up.

Steps:
- Preheat the broiler to high. Line a rimmed baking sheet with foil.
- Combine the chili powder, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Put the peppers and onions on the prepared baking sheet, drizzle with 1 tablespoon of the oil and season with half the chili powder mixture. Broil until softened and starting to char, about 10 minutes.
- Meanwhile, cut the chicken into 1/4-inch-thick slices and toss in a large bowl with the remaining chile powder mixture and 1 tablespoon oil.
- After the peppers are softened and starting to char, about 10 minutes, scatter the chicken on top of the peppers and onions and return the baking sheet to the broiler until the chicken is cooked through and starting to brown, about 5 minutes more. Drizzle with the lime juice.
- Serve with the warmed tortillas, Monterey Jack cheese, guacamole, hot sauce, salsa, sour cream and lime wedges.

Steps:
- Spread 1 tbsp of peanut butter evenly over each tortilla. Keep the peanut butter slightly away from the edges of the tortilla or it will drip out in the oven.
- Fold both sides of one tortilla slightly over. Roll the tortilla up from the bottom side until complete, like a tube. Repeat for each tortilla.
- Place tortillas on a baking sheet in a toaster oven.
- Bake at 350 degrees for five minutes.
- Sprinkle cinnamon over fajitas, if desired.

- Using the metal blade, process ingredients continuously for 2 to 3 minutes. The ground peanuts will form a ball which will slowly disappear. Continue to process until the desired consistency is obtained. If necessary, stop machine and scrape sides of container with a rubber spatula.
- For crunchy peanut butter, stir in 1/2 cup chopped roasted peanuts after the processing is completed.
- Yields 1 cup creamy or 1-1/2 cups crunchy peanut butter.
- Store in a tightly closed container in the refrigerator. Oil may rise to the top. If this occurs, stir before using.
