Steps:
- Cut the bananas in half horizontally.
- Insert popsicle sticks in the middle of the banana halves. Transfer bananas to a parchment paper-lined baking sheet, and freeze until solid.
- In a tall glass or mixing cup, add chocolate and coconut oil. Microwave in 30-second intervals for 1 minute and a half, and mix until smooth.
- In a bowl, mix the peanut butter and almond milk until smooth.
- Dip the bananas into the chocolate coating, then drizzle the peanut butter sauce on the banana.
- Place bananas in freezer until the coating has hardened.
- Enjoy!

- Preheat oven to 350°F (180°C).
- In a bowl, use a fork to mash the bananas. Add the sugar, ½ cup (115 g) of butter, and vanilla, and whisk until combined.
- Add the flour, salt, and cocoa powder, and whisk until fully incorporated.
- Use the remaining 1 tablespoon of butter to grease a 9x9-inch (23x23 cm) baking tray.
- Use the remaining 1 tablespoon of cocoa powder to dust every side of the baking tray.
- Pour batter into prepared baking dish.
- Use a spoon to add dollops of peanut butter on top of the batter. Use a butter knife to swirl the peanut butter into the brownie batter.
- Bake for 25-30 minutes, until center no longer jiggles when pan is shaken.
- Allow brownies to cool completely before cutting.
- Enjoy!

PEANUT BUTTER-BANANA-CHOCOLATE TRAIN WRECK
All my favorites "wrecked" into one yummy dessert! Created for RSC #12! Prepare in individual parfait glasses or glass bowls to show off the layers! Preparation time does not include baking the chocolate cake. (I made mine the day before.) Cooking time is refrigeration time. ** Please note that the directions for this recipe will vary by size of glass or bowl. So, as you're layering this yummy dessert, just have fun with it!!!

Steps:
- Cut cake into 1 - 1 1/2" squares. Set aside.
- Beat the sugar, cream cheese, and peanut butter together in medium bowl until creamy and smooth.
- Fold in 6 oz of Cool Whip. (Reserve last 2 oz to use as topping.).
- Slice 2 of the bananas in approximately 1/4 inch slices. (Reserve third banana.).
- Please note: Amounts of each ingredient will depend on the type of glass or bowl you choose. I used a parfait glass that was about 3 1/2 inches in diameter (top) and about 4 inches high.
- To assemble your train wrecks, press each layer in firmly to compact.
- Press 3-4 pieces of cake in bottom of parfait glass.
- Top with 3-4 slices of banana.
- Squirt enough chocolate sauce to cover the bananas.
- Add 1/4 c of the peanut butter mixture.
- Repeat layers until the parfait glass is almost full. (I repeated my layers three complete times, so that the peanut butter mixture was on top.).
- Repeat, filling other parfait glasses.
- Cover with plastic wrap and refrigerate for 2 - 3 hours.
- Right before serving, slice reserved banana into approximately 1/4 inch slices.
- Remove train wrecks from fridge and top with a plop of the reserved whipped topping, 2-3 slices of banana and a chunk of chocolate cake.
- For the risk-takers in your life: Top with additional chocolate syrup!

DARK CHOCOLATE PEANUT BUTTER BROWNIES
First Place Winner in RSC#12! Super rich peanut butter dark chocolate brownies with a thick peanut butter topping accented with chocolate drizzle! Serving size will vary on tolerance for rich, sweet foods - the first time I made these, I cut into 20 bars and some of my guests thought that half the size would have been enough... I, on the other hand, had two!

- Preheat oven to 350 and spray 9x9 (recommended) or 8x8 baking dish with cooking spray.
- Melt butter in a medium sized saucepan over low heat. Add baking chips and peanut butter, stirring over low heat until melted.
- Remove from heat. Immediately stir in splenda, sugar and vanilla. Beat in egg and then the two egg whites.
- Add the flour and stir for about one minute, until batter becomes smooth and glossy.
- Stir in mini chocolate chips.
- Spread into prepared cake pan and bake for 20-25 minutes for a 9x9 dish or slightly more for an 8x8 dish - brownies are done when moist crumbs cling to a toothpick inserted in the middle. Don't overcook (toothpick will come out clean) or they will be dry.
- Cool on a wire rack.
- To make topping: using an electric mixer combine creamy peanut butter and powdered sugar until you have coarse crumbs. Scraping down sides when necessary.
- On medium-high speed, beat in evaporated milk (or milk) one tablespoon at a time until mixture is smooth and spreadable, although not runny. This is not a frosting, the consistency should be rather thick and sturdy.
- Spread over cooled brownies.
- Plate brownies, then drizzle sugar-free chocolate syrup over brownie before serving for an elegant brownie dessert or drizzle onto uncut brownies, cutting will create a different look each time! Measurement is a guesstimate - I just squeeze it right out of the bottle.
- Store leftovers in refrigerator.
