PEACHY KEEN SLUSH
This luscious citrus sparkler gets an extra kick from peach schnapps, a delicious complement to light salads.

Steps:
- In medium saucepan, combine sugar and 2 cups of the water; mix well. Bring to a boil. Boil 3 minutes. Set aside to cool slightly.
- In large nonmetal freezer container, combine concentrates, remaining 3 cups water, the schnapps and lemon juice; blend well. Stir in sugar mixture. Cover; freeze at least 8 hours or overnight until frozen, stirring 2 or 3 times after 2 hours.
- To serve, spoon 1/2 cup slush mixture into each glass. Add about 1/3 cup ginger ale to each; stir gently.

PEACH SLUSH RECIPE

Steps:
- Peel peaches by pouring boiling water over the peaches for 30 sec. or peel with a paring knife.
- Chop peaches into chunks and put in a blender or food processor.
- Add Water and Lime Juice and blend until smooth in consistency.
- Pour into a 9×13 pan and freeze in freezer for one to two hours.
- Stir a few times so that it does not freeze into a solid block.
- Stir and whip it up with a fork so it has a nice slushy consistency.
- Serve immediately in a cold dish.
- Makes 2 smaller servings.

- Puree the peaches, cottage cheese, milk, honey, lemon juice, a pinch of salt, the nutmeg and 2 cups ice in a blender until smooth, 2 to 3 minutes. Divide among glasses and sprinkle with more nutmeg.

- In a medium pan, boil sugar and 2 cups water for 3 minutes.
- Cool.
- In large non-metal container (a 1 gallon ice cream bucket works well), combine sugar-water mixture, concentrates, 3 cups water, schnapps, and lemon juice.
- Cover.
- Put in freezer until frozen. (about 4 hours).
- Before serviong, stir up.
- Spoon 1/2 cup slush mixture in a glass.
- Stir in 1/4 cup ginger ale, lemon lime soda, or slice. Or to taste.
